FISH FRY RECIPE BY FOOD BEANS
Ingredients:
FISH MASALA PREPRATION
• Dhania Powder ( Coriander ) 3 – TBSP
• Haldi Powder ( Turmeric ) 1 ½ – TBSP
• Zeera Powder ( Cumin ) 2 – TBSP
• Garam Masala ( Ground Spices ) 1½ – TBSP
• Ajwain ( Carom Seeds) 1 – TBSP
• Lal Mirch Powder ( Red Chili ) 2 – TBSP
• Namak ( Salt ) 1 - TBSP or as Your Taste
• Dara Mirch ( Red Chili Flakes ) 2 – TBSP
FISH MARINATION
• Fish 1 – Kg (Chopped)
• 3 – 4 Fish Masala
• 2 TBSP – Baisan( Gram Flour )
• 2 – TBSP Lemon Juice
• 3 – TBSP Cooking Oil
Marinate for 30 – 40 minutes
Fry in Cooking Oil / Mustard Oil Until light Brown and Serve.

Do Pyaza’ meaning double onions is a term used for this north Indian curry. Slow cooking the onions in a Murgh do Pyaza is key as its goes a lovely caramel colour and gives the curry a deep rich flavour to the resultant dish. This is the recipe I cook at home and was shared by a family friend. Although the first stage includes frying the onions this recipe from her also has fried shallots which are added right at the end. They are caramalised and lend a wonderful texture and flavour to the gravy. Also I love adding new potatoes to the curry as they hold their shape and don’t disintegrate in the gravy while cooking. The creaminess in the curry comes from the addition of yoghurt and I use full fat greek yoghurt as it also prevent the yoghurt from splitting.

Description:
(01) -Preheat a pan, add a tablespoon of butter to it and melt it. Add the chopped almonds to it and roast 2 minutes. After roasting the cashews, add 1 tablespoon of raisins to it and roast for a while and keep aside.
(02) -Preheat a pan, add a ½ cup of sugar to it and cook on medium to high flame. Cook while stirring it until the sugar melts and changes its color. Add 2-3 Tablespoons of water and stir for 2-3 minutes. Switch off the flame when the sugar becomes brown and melts and keep aside.
(03) -Take a ¼ cup of rice and soak it in water for half an hour and Grind for few seconds. Take a liter of milk in a vessel and boil it on high flame. Keep on stirring it once or twice in between of the process. Add Caramel to it and keep stirring while Caramel Mix. Add roasted nuts and cook Stir for 2 minutes then add ½ tsp of Kevra Essence and stir for few seconds.
(Caramel Kheer is ready to be served. Garnish it with some chopped pistachios and serve it hot or cold as per your desire.)

Ingredients of Suji Gulab Jamun:

1 Cup Semolina
1 tbsp Ghee
1 tsp Elaichi Powder
1-1/2 tbsp Powder Milk
1 cups Sugar ( for Sugar Syrup)
1 cup water ( for Sugar Syrup)
1/2 tbsp Lemon Juice ( for Sugar Syrup)

Description:
Heat a pan, add sugar along with water and wait for it to dissolve. Keep stirring until a consistent Syrup.Now add 1/2 tbsp Lemon Juice and cook for 1 minute. Sugar syrup is ready. Now heat another pan, add ghee and roast semolina on low-medium flame. Wait until it turns aromatic and its colour changes.Now,add milk keep stirring on low flame until milk is absorbed.Once done, cool the mixture and transfer it to a bowl.Now add Milk Powder,Baking Soda and Cardamom Powder on semolina and mix it well.Now, spread some oil/ghee on your palm and start making balls from the dough.Heat oil in a pan and deep fry these balls. Keep frying until the balls turn brown and golden.Drop the deep fried Gulab Jamuns in the prepared sugar syrup.Soak for 2 hours Serve and enjoy!
