š§Sheet Pan Nachos š¶ļø- such a great pantry/leftover meal when itās pouring rain and youāre stuck inside!
Recipe:
After laying down some tortilla chips on a sheet pan, these are some of the things we add to our sheet pan nachos:
Cheese
Beans (refried or regular)
Leftover meats, chopped or rotisserie chicken
Pepperoncinis
Cowboy caviar
Chunky salsa/tomatoes

Grab your steak and potatoes and letās do this!
Ingredients:
Flank or Skirt Steak
Steak Seasoning (we used the @alfrugoni Asado š„ - tagged here if you want to snag it)
Baby Gold Potatoes, quartered
Cajun seasoning
Butter
Chimichurri or sauce of your choice!
Directions:
1. Fire up your grill (we used the egg).
2. Season your meat and let it sit at least 15 mins to adhere.
3. Get your quartered potatoes into an oven/grill safe container (these aluminum ones are great) and drizzle with olive oil and Cajun seasoning (we used @spiceology Black Magic) and slice up 2-3 tbsp of butter and toss into the container with the potatoes. Give it all a good stir, and cover.
4. To a grill or oven at 400 F, add the covered container of potatoes. Cook for about 20, stir, cover and cook another 15-20. If you like them a little crispier, cook uncovered another 5-7 mins and the pull them off. Depending on the size of your potatoes they might need more time, I recommend cooking in 10 min additional increments if yours are not fork tender yet.
5. Put your steak on the grill and depending on the thickness, sear for about 3-4 mins per side for a nice medium/medium rare - longer or shorter based on your preferences!
6. We pulled our steak and let it rest for 10 minutes, then we slathered it in Chimichurri, also made with Al Frugoniās seasoning (so fast and easy if you arenāt wanting to make chimi from scratch also tagged here if you want to level up your steak night) - and you have steak and potato perfection! Enjoy!

š½ļø Blackstone lovers - here is a new easy stir fry recipe that we whipped up with some stuff in our fridge and freezer!
Ingredients
Noodles (cooked according to package or buy the TJās wheat noodles, they come cooked!!)
Ground meat (beef, pork, chicken, turkey, your choice)
Veggies: broccoli, edamame, carrots, green onion, green beans, garlic, ginger
Sauce: Soy sauce, fish sauce, sesame oil, oyster sauce, chili oil, hoisin (I do 1/4 cup of soy, and then some a couple teaspoons or table spoons of the others)
Comment below if you want the detailed recipe!! This could easily be done in a pan or two, but I want you to know how fun it is to cook on a blackstone/flat top! Best part, nothing to clean in the kitchen once the meal is over!

Smoked Meatballs and Spaghetti š this might be my new favorite pasta dish! We went with spaghetti and a simple butter sauce that comes together super quickly (butter, garlic, parmesan, water) and we added roasted broccoli and smoked meatballs.
Ingredients
For the meatballs:
1lb ground Italian pork (butcherbox)
1lb ground beef
5 cloves of garlic, finely diced
1 egg
1/3 cup bread crumbs (or more depending on how wet your mixture is)
1 tbsp Paprika
1 tbsp Oregano
1 tbsp Basil
1 tbsp onion powder
1 tbsp garlic powder
1 tsp Red pepper flakes (unless you like it spicier)
Salt and Pepper to taste (2 tsp of each at least)
For pasta and sauce:
Pasta of your choice (we did spaghetti)
Parmesan, grated (for topping and for the sauce)
3 tbsp butter
4 garlic cloves, finely diced (or 4 frozen garlic cubes)
1/4 cup reserved pasta water
For broccoli:
1 head of broccoli (or a bag)
Salt and pepper
Meatballs:
1. Add all of your meatball ingredients to a large bowl and mix with your hands until just combined (try not to over work it).
2. Roll into 1.5-2 inch balls (we use a 2 in cookie scooper) and place on an oven safe wire rack.
3. Place rack onto smoker at 375, and cook 20 minutes or so until internal reads 165 F.
Broccoli:
1. Preheat the oven to 425.
2. Spread your broccoli over a lightly oiled sheet pan.
3. Lightly spray or drizzle broccoli with olive oil, and sprinkle with a pinch of each of salt and pepper.
4. Roast in the oven for 15 mins.
Pasta:
1. Bring a large pot of salted water to a boil and cook your pasta according to its directions until just before al dente.
2. While the water is coming to a boil, in a pan set to low to medium heat, add the butter and melt.
3. Once melted add the garlic and cook for 2-3 mins until fragrant, then add Parmesan and 1/4 cup of the pasta water.
4. With a whisk, stir the butter sauce until it thickens into a pale golden yellow sauce.
5. Add the pasta to the pan with the sauce and toss the pasta to coat in the sauce (it will contin

This is one of my favorite 30 minute meals, and it is so versatile for busy week nights and picky eaters!

šSHEET PAN NACHO PUBLIC SERVICE ANNOUNCEMENTšØ Are you topping your sheet pan nachos with salsa AND bbq sauce? If not, you need to give this a shot.
Sheet pan nachos are one of my favorite lazy leftover meals. Grab any leftover cooked meat (we used meat from ribs but a rotisserie chicken or any meat of your choice works), lay down some tortilla chips on a sheet pan and sprinkle that meat all over. Then, go into your pantry and your fridge and start grabbing things. Can of beans, frozen corn, can of diced tomatoes or green chiles (even a jar of Trader Joeās Cowboy Caviar will work because it has all of those things in it) - top your meat and chips with whatever toppings you want, grate some cheese and then pop that tray in the oven at 375 for 15 minutes.
Donāt forget to drizzle your favorite salsa and bbq sauce before taking your first bite!

šSuper Bowl Guacš„ Donāt know what to bring to your Super Bowl party this year?!? You canāt go wrong with a perfect bowl of Guacamole. You know me, there is nothing wrong with store bought, but I love using my molcajete to first break down the cilantro, garlic, lime and jalapeƱo into a salsa (which is also delicious on its own) and then I add in the avocado.

Sometimes, after 2+ weeks of being sick, you can finally cook again, and itās gotta be a bowl of fettuccine bolognese.
We browned a package of ground beef with diced onion and garlic, tossed in a jar of @raoshomemade and added pasta for this lazy Friday night bowl of comfort!
š£Smoked Salmonš„ This was one of the best salmons Iāve ever had and it was thanks to @haydenhrncir who went all the way to Alaska to catch these beauties. This was a pretty easy smoke and I actually didnāt finish my filet so we used the leftovers to make a smoked salmon dip the next day and that was beyondddd good.
What you need:
2 salmon filets
Dijon mustard
Seasoning of your choice
Salt and pepper
1 lemon, sliced
Directions:
1. Set your smoker to 225 F.
2. If frozen, thaw your salmon - note that fish must be thawed differently than most meats, so be sure to check instructions! When in doubt, google!
3. Pat your salmon dry and lightly coat in Dijon mustard on all sides. In this case, we had just run out of Dijon, so we used Trader Joeās aioli garlic mustard sauce.
4. Sprinkle with salt and pepper. This is totally sufficient but we decided to use a Cajun seasoning blend and lightly dusted each filet with seasoning as well.
5. Once your smoker is set, place the cedar planks on the grates and create a foundation for your filets with lemon slices, then add your fish on top.
6. Smoke the fish until the internal temperature reaches 135 F. We researched this extensively and while the USDA says you should reach 145 F, we feel that salmon dries out at this temperature and have found 135 F to be a sweet spot for our preferences. We start checking the temperature around 40 minutes.
7. Once you pull off your salmon, let it sit for 5-10 minutes, then plate and enjoy right away!
8. Optional toppings: flaky salt, lemon, parsley, dill, and/or chives!

šøMezcal Coffee Fizzāļø Cocktail lovers, we tried out recipe that weāve seen all over that was made famous by the @handshake_bar in Mexico City - do you have the patience for this??
Hereās what you need:
7 oz Mezcal
3.5 oz lemon juice
1.75 oz rich simple syrup
3 oz whole milk
35 grams coffee beans
To serve: 1.5 oz topo chico
How to make it:
1. Combine the mezcal, lemon juice and simple syrup in a container.
2. In a separate container, pour in the whole milk.
3. Add your mezcal mixture into the whole milk and let that sit covered at least 4 hours (up to 24 hours).
4. Strain your mixture using a coffee filter or cheese cloth, this may take a couple rounds of filtering, and the liquid should run clear.
5. To the strained liquid, add the coffee beans, give it a gentle stir and let that sit overnight.
6. Strain the liquid so that there are no coffee beans or coffee remnants.
7. Add 2 oz of the liquid to a shaker with ice, and give it a good shake. Pour over a glass with 1.5 oz of topo chico and enjoy responsibly!!
Lazy Ramen š Grab your leftovers, your frozen veggies, and your instant ramen, and get down on this ten minute lazy ramen!
What you need:
1 instant ramen (we used Trader Joeās Spicy Miso)
Leftover protein (we had beef rib)
Frozen veggies (edamame and corn)
Boiled egg
Water
How to make it:
1. Fill a pot with water (the amount is based on the instructions on your instant ramen) on high heat and bring to a boil.
2. Add in the seasoning packets from your ramen.
3. Add your noodles and let that boil for a few minutes depending on package instructions - we do 6 minutes.
4. Drop in your cooked protein of choice (we did beef rib, but you could do rotisserie chicken, leftover ground beef or pork, anything works). Cook for another 1-2 minutes.
4. Add in the frozen veggies and cook until everything is heated through (another 1-2 minutes).
5. Serve and top off your bowl with a boiled egg sliced in half.
6. Optional additions if you have these pantry items: nori, furikake, sesame seeds, and anything else you like to top your ramen with!

š„Sāmores Hot Cocoaāļø Thatās right, Iām combining these two beloved fireside treats. I highly recommend you do the same!
What you need:
1 packet Trader Joeās Organic Hot Cocoa
8 ounces milk (I used TJās Vanilla Almond Milk)
1 large marshmallow, and several small marshmallows
Chocolate bar of your choice
1 graham cracker
Directions:
1. Warm up your packet of hot cocoa in your milk - I use a @bodum milk frother that has a hot cocoa setting, but stove top or microwave works!
2. Pour your hot cocoa into a heat safe glass or mug of your choosing.
3. If you have access to food safe fire, brown your large marshmallow to your desired level of toastiness.
4. Add a foundational level of mini marshmallows to your glass of cocoa, and then top that with your toasty marshmallow, graham cracker, and a piece or two from your chocolate bar.
5. Sit by the fire and enjoy your perfect cup of cocoa!

š“Lazy Dinner (aka the Adult Happy Meal) š„ we love a lazy meal that is also healthy - this one packs quite a bit of protein with @allgoodles and chicken breast nuggets thatās rival your favorite efficient drive-they chicken nugget spot and these arenāt breaded! This also makes for great leftovers!
šIngredients
Chicken breast cut into nuggets
1-2 bunches broccolini
1 package Goodles
Seasoning blend of your choice
Salt and Pepper
šDirections
1. Bring water to a boil and cook the goodles according to the package.
2. Season your chicken breast nuggets with olive oil and a seasoning blend of your choice. We have a handful of go-to blends for nights like this, like Nashville hot, Cajun, Korean BBQ, Jamaican Jerk, Tandoori Glory, from @spiceology but anywhere works!
3. Add your chicken to the air fryer at 390 F for 7 minutes, then toss gently, increase to 400 for 10 more minutes.
4. Rinse your broccolini (and give them a quick peel to remove excess leaves), pat dry and spread them on a sheet pan. I drizzle with olive oil, give them a toss, and then season with something simple like salt and pepper (in this case I used Garlic Junkie from Spiceology). Roast in the oven for 8 minutes at 400 F.
5. Enjoy your high protein dinner that feels like being a kid again!

š„£ Tortilla Soup š¶ļø This Instant Pot tortilla soup is one of my all-time favorites. We get multiple lunches and dinners out of it, and there are plenty of leftovers to share or even freeze! If youāre ready for fall, this is the soup for you. The great thing is there are lots of ingredients you can add or remove to customize it to you preferences.
š¶ļøIngredients:
1.5-2lbs chicken thighs
1 cup diced yellow onion
1 cup chopped celery
1.5 cups chopped carrots
3-6 cloves of garlic, finely chopped
1 can black beans, drained
1 can fire roasted diced tomatoes
1 can chopped green chiles
4 cups chicken broth
2-3 cups water
1-2 limes
Seasonings: 1-2 tbsp of Cumin, Mexican oregano, red chili powder and dried cilantro. Salt and pepper to taste (you can adjust salt at the end).
š¶ļøOptional add-ins: Corn, chipotle peppers and adobo sauce, jalapeƱos, diced poblano peppers
Optional toppings: Tortilla strips/chips, sour cream, shredded cheese, lime, cilantro
š¶ļø Directions:
1. Set your instant pot to sautƩ and add the onions, celery, carrot and garlic, and stir occasionally, cooking for about 5 minutes.
2. Add the tomatoes, green chiles, beans, chicken, broth, all the seasonings, and give it a good stir. Other than corn, add any other extra add-ins at this point.
3. Set the instant pot to pressure cook for 15 minutes.
4. Once itās done, manually release the steam.
5. Grab two forks and shred the chicken.
6. If youāre adding corn (which you should) you can turn on the sautĆ© function and add frozen corn at this stage, I usually do about a cup.
7. Add the juice from one lime, and give it another stir.
8. Once the corn is cooked, after a couple minutes, try it and adjust salt as needed.
9. Get your bowl and donāt forget to add the toppings!

šBracioleš„© First timer over here so we took a short cut and picked this up at @eatalydallas then gave it a sear, and finished it in the oven. Great week night or dinner party trick is to grab a mostly prepared item like this Braciole (itās stuffed with prosciutto, herbs, bread crumbs and then rolled - we got to skip the hard part). We served it with fettuccine and marinara, and topped that off with some parmesan!
Sometimes you gotta take the short cuts in life, and this one tastes pretty good! Next time weāll try making it ourself. Hot tip, donāt forget to remove the butcherās twine before digging in š

š· Pork Belly Burnt Ends š„These are the best for game day - we make sliders, tacos, bowls, or just pop a whole one in your mouth solo, theyāre that good! This is one of the easier items to smoke after youāve cubed your pork belly - make sure youāve got a sharp knife!
š·Ingredients:
Pork Belly (we get our @swift__meats from Costco)
Use any rub you want! We used:
Gochujang paste as a binder with @spiceology Korean BBQ seasoning blend and salt
Valentinaās hot sauce as a binder with a combination of Black Magic from Spiceology and Holy Voodoo
Butter
Honey
Brown Sugar
BBQ Sauce
š·Directions:
1. Get your smoker going to 250 F.
2. Pat your pork belly dry and slice it into about 1-1.5 inch thick slices. Then cut those into 1-1.5 inch cubes.
3. Rub your cubes with the binder of your choice and season with your rub or seasoning of choice. Let marinate for 30 minutes.
4. Place the pork belly cubes on the smoker fat side up and smoke for 3-4 hours until they reach 195 internal if you want to pull and turn them into burnt ends.
5. If you like them dry, leave them on and let the cook until they reach about 203.
6. For burnt ends, pull them into a deep pan, add 4-6 cubed tablespoons of butter, 2-3 tablespoons of brown sugar, 2 tablespoons of honey, and a half cup of bbq sauce (or more to lightly coat all of the meat). Mix that up and return to the smoker.
7. Remove once they read 203 internally and tender, and serve with tortillas, slider buns, or eat them straight up!
