Hey everyone! 🌟 I wanted to do something fun today and share a little bit about myself. So, here are some interesting tidbits that you might not know about me:

🌟 **Describe Yourself in Two Words:** Relentlessly Optimistic - I always look on the bright side and find a way to keep moving forward, no matter the challenge.

🎬 **Favorite Movie:** *Casino* - because nothing beats the glitz, grit, and the intensity of mob stories. I mean, who wouldn’t be captivated by a tale of power, betrayal, and high-stakes gambles?

🗣️ **A Current Favorite Quote:** “Authenticity is the highest frequency.” This quote resonates with me because it reminds me to stay true to myself and my values in every situation. It’s about being real, genuine, and unapologetically you.

👗 **What Did You Want to Be Growing Up:** A Fashion Designer - I dreamed of creating stunning outfits and setting trends. While I couldn’t draw, my love for fashion never faded. Now I’m creative in other ways, I just recently started designing hats and will be launching my own brand very soon!!

🦁 **Spirit Animal:** Lion – naturally, since I’m a Leo. Strong, proud, and a natural leader. Like the lion, I embrace my courage and strive to lead with confidence and grace in everything I do.

In the Philippines, the “ber-months” refer to the last four months of the year: September, October, November, and December. This period is synonymous with the start of the Christmas season, making it the longest Christmas celebration in the world. The “ber-months” celebration kicks off on September 1st and extends all the way to the first week of January. The early start to the Christmas season is deeply rooted in Filipino culture and traditions. It’s a time for family reunions, with many overseas Filipino workers (OFWs) returning home to celebrate with their loved ones. The season is also marked by various activities such as Simbang Gabi, a series of nine dawn masses leading up to Christmas Day. Filipinos start decorating for Christmas as early as September. The parol, in particular, is an iconic symbol of Filipino Christmas, representing the Star of Bethlehem. I bought my very first Parol at the Dapitan Arcade almost two years ago now - here’s the video of that first time experience. 🎄✨

I’ve been quietly learning something new over the past few weeks and it’s been quite overwhelming to say the least!

The world of Web3, Blockchains, Cryptocurrency and NFT’s have really perplexed me. Getting the opportunity to learn about these things and more with an amazing co-hort of like minded individuals has been fulfilling. A huge shout out to - Arbitrum and the Arbitrum DAO for sponsoring my participation in this program.

I look forward to continuing my education and sharing what I’m learning with my kids as well.

I heard it’s getting pretty warm back in my home state of California! Here’s a little lunch idea for those of you who might be feeling the effects of the heatwave 🥵

While it might seem counterintuitive, enjoying a bowl of warm soup on a hot day can be quite beneficial! When you eat something hot, your body responds by increasing perspiration. As the sweat evaporates, it helps to cool your body down. So next time you’re out on a warm day, try consuming a bowl of hot soup because it can actually help cool you down.

Do you have a favorite soup recipe you like to make? 🍲 Let me know in the comments below 👇🏽

College Food never looked so GOOD!

The Gyud Food Hall is located along E. Jacinto Street near the College of Fine Arts. It is a two-story open-air structure with a breezy garden and several picnic tables for comfortable al fresco dining.

They offer a wide range of food options, from bread and pastries to pasta, pizzas, rice bowls, and more. It aims to cater to students, families, cycling communities, and alumni while operating daily from 7 am to 10 pm, although not all stalls are open that early.

The Gyud Food Hall is a project led by Jose Magsaysay Jr. of Potato Corner and digital creator Anton Diaz. The name “Gyud” stands for “Good Yummy Destination.” The food businesses here are hand-picked, with each one having its own unique story.

It’s a great spot to enjoy a meal with friends and family or to relax in the fresh air while having a snack. Have you had a chance to visit it yet?

Ensaymada is a beloved Filipino pastry 🥐 that has its roots in Spanish cuisine. Originating from the island of Mallorca in Spain 🇪🇸 the original version, known as **Ensaimada de Mallorca**, is a coiled bread made with flour, water, sugar, eggs, and lard.

When the Spanish colonized the Philippines 🇵🇭 they brought this pastry with them, and over time, Filipino bakers adapted it to local tastes, making it richer and more decadent.

**Filipino Ensaymada** is typically a soft, fluffy, and buttery bread 🍞 often topped with a generous amount of butter 🧈 sugar, and grated cheese. Some variations even include salted egg or other toppings to make it extra special. It’s a popular treat during special occasions like Christmas 🎄 and Easter 🐣.

What sets ensaymada apart from other Filipino pastries and breads is its unique 🪄combination of textures and flavors. Unlike the more straightforward pan de sal, ensaymada is known for its airy, brioche-like texture and its rich 🤑 buttery taste. The addition of cheese on top adds a savory contrast to the sweetness, making it a delightful and indulgent treat.

My favorite way to eat Ensaymada is slightly warmed in a toaster oven which melts the butter, sugar and cheese toppings just perfectly, it’s definitely worth a taste!

Bistek Tagalog, also known as Filipino beef steak, is a beloved dish in the Philippines. It’s a savory and tangy beef dish that’s both simple and flavorful. Plus you only need six ingredients to make this dish happen!

Beef, Soy Sauce, Calamansi, Onions, Garlic, Pepper

Bistek Tagalog is typically served with steamed rice, making it a hearty and satisfying meal. The combination of the savory soy sauce, the tangy calamansi, and the sweetness of the onions creates a delicious balance of flavors.

I think I should make this for dinner tonight! Thank you for sharing your review 😋

Pancit Malabon is a traditional Filipino noodle dish that originated in Malabon City. It features thick rice or cornstarch noodles and is known for its rich, yellow-orange sauce. This sauce gets its distinctive color and flavor from achuete (annatto seeds), shrimp broth, and crab fat. The dish is typically topped with a variety of seafood such as shrimp 🦐 squid 🦑 and smoked fish 🐟 along with hard-boiled eggs 🥚 pork cracklings 🐷 and vegetables 🥕

The core flavors of Pancit Malabon are savory and umami, with a hint of sweetness from the seafood and a slight tang from the calamansi (a local citrus fruit) often served on the side.

Pancit is most commonly eaten during special occasions 🎉 and celebrations such as birthdays, fiestas, and holidays. It’s a staple at gatherings because noodles symbolize long life and good health in Filipino culture.

Do you have a favorite type of pancit or a special memory associated with it? 😊

It’s MANGOSTEEN season here in the Philippines!

Did you know…

👑 Mangosteens are often called the “Queen of Fruits” due to their exquisite taste and delicate appearance.
🌏 Mangosteens are native to tropical Southeast Asian countries, including the Philippines.
😋 The edible white flesh of the mangosteen has a unique sweet and sour flavor, often compared to a mix of sweet grapes, peaches, and vanilla ice cream.
🤑 Mangosteens are packed with nutrients and antioxidants. They are low in calories but rich in vitamins C, B1, B3, and B9, as well as minerals like copper, manganese, and magnesium.
💉 Traditionally, mangosteens have been used in Southeast Asia for their medicinal properties, including anti-inflammatory effects.
🌳Mangosteens are harvested by hand to ensure the delicate fruit is not damaged. This careful handling is essential due to their highly perishable nature.
📅 In the Philippines, mangosteens are typically in season from June to November.
🇵🇭 Mangosteens hold cultural significance in the Philippines and other Southeast Asian countries, often featured in local cuisine and traditional remedies.
🌤️ Mangosteen trees thrive in warm, humid climates with ample rainfall, making the Philippines an ideal location for their cultivation.
📈 The production of mangosteens in the Philippines has been increasing, with around 4,900 metric tons produced in 2023✨
