Sunday Morning Muffins ☀️ 🧁

Ingredients

Flour Mixture
1 1/2 cups All-Purpose Flour
1/2 cup Sugar, I used Monkfruit sugar
1 cup Rolled Oats
1 tsp Baking Soda
2 tsp Baking Powder
3/4 tsp Salt

Banana Mixture
1 Egg
3/4 cup Milk Dairy or Almond is fine
1 tsp Pure Vanilla Extract/Paste
1/3 cup Extra Virgin Olive Oil
1 cup mashed Bananas 2-3 overripe bananas, depending on their size

Plus mix-ins of your choice.

Instructions
Preheat oven to 400 degrees F. Grease your or line your muffin tin.
In a medium bowl combine flour, sugar, oats, baking soda, baking powder, and salt. Set aside.
In a large bowl beat the egg with a fork. Stir in the milk, vanilla extract, and oil. Place peeled ripe bananas on a large plate and using a fork mash until smooth. Add this to the egg mixture and stir to combine.
Using a wooden spoon, gently fold in the flour mixture into the banana mixture. Once combined, scoop out muffin mixture evenly into a muffin tin.

Time for the mix-ins. Add your mix-ins of choice to individual cups, and swirl them in with a butter knife, so that you end up with two or three flavors of muffins.

Bake at 400 degrees F for 15-20 minutes until toothpick comes out clean, cool and enjoy!

Taco Salad 🌮🥗

I’ve been under the weather for a few weeks and this is probably the first delicious looking meal I’ve made for myself in a while.

Bed of lettuce and baby spinach,
Taco seasoned baked chicken tenders
Roasted peppers and onions
Black beans and corn for carbs
Lemon crema dressing, cilantro, green onions and a side of guacamole. 🌶 for that extra heat.

Getting back into it. 💪

This morning’s harvest from my garden looked like this. 🤩

I turned my end of season tomatoes, spicy peppers and purple daikon into a Korean style refrigerator pickle.

The pickling liquid is made from equal part white vinegar, water and 1/4 part sugar. This pickle will keep my veggies crisp and is the perfect side to some Korean or Japanese fried karaage chicken. 🥰

Earlier today I picked up some slices of tart as a little treat for my kids. Of course I picked up a slice for me and my husband too.

You can’t buy happiness, but you can buy dessert. And that’s kind of the same thing. 😆🙃🥰

These tarts have a layer of cheesecake above the crust, then a fruit topping, glazed with jelly. No regrets.

(But also, I’ll be at the gym tonight.)

Chinese Five-Spice Marinade Recipe for Chicken 🍗

INGREDIENTS
6-10 cloves of garlic (use less or more, depending on your comfort level)
1/4 - 1/2 an onion (use as little as you are comfortable with. But don’t skip)
1 tbsp fresh ginger (fresh. Not the powdered stuff)
4 tbsp honey, or sugar
1/2 cup reduced sodium soy sauce
1/2 tsp Chinese five-spice powder (you NEED this)
1/2 cup white wine (anything you have on hand works, or use chicken broth)
1/4 cup Mirin
1 tbsp apple cider vinegar
freshly ground black pepper

Throw everything in a blender and blend. This amount is good for 10 chicken legs baked at 400F for one hour and 30 minutes. Flip the legs at the 30 minute mark, and bake for another 30 mins, then flip and bake again for the last 30 mins. Plate your chicken without the sauce in pan, you can use the sauce in pan as a dipping jus 🤤.

Tip: if your chicken legs are smaller in size, the cook time will be less. Keep and eye on them and make sure they get that color. This one is worth the wait!

Zuchinni and Broccoli pasta for dinner 🥦

Today’s cool weather was just begging for pasta tonight. The boys and I had a wonderful afternoon, we drew pictures then went on a beautiful walk with friends.

On the way to the walk, my oldest son was remembering our life in Italy. Our friends. Our neighbors. With that in mind, I had to make pasta for dinner. Food for our souls.

If you have never tried Adobo before, the sauce is salty, tangy, citrusy and extremely delicious!

Served with rice and a side salad. Hubby AND the kids had seconds.

For a good salad, all you really need is a good quality olive oil and vinegar. 🌶 chillies optional. Where do you buy your favorite Vinegar? Today I used a Passion Fruit Balsamic Star Vinegar.

Raising a baby that turned to a toddler during Covid means we never got to have these moments.

Praising God for all these freedoms that are slowly coming back to us.

These are on my repeat menu, because who doesn’t love cookies for breakfast?

The ingredients are simple:
2-3 bananas
1/2 cup Natural Peanut Butter
1 egg
1 and a half - 2 cups traditional oats, (minute oats also work)
1 TBS flaxseed powder
2 TBS almond flour
1 tsp vanilla extract
1tsp baking soda
1/2 tsp salt (optional)
1/2 tsp cinnamon powder
1/2 cup dried cranberries (or chocolate chips, today we did cranberries for those fall vibes 🍁)

Throw everything into a bowl and mix well. Form into cookie blobs on parchment paper, so they don’t stick. This batter won’t be stiff, but should still hold itself.

Bake at 350F for 20-25 mins, till you get this delish golden brown color.

I don’t feel guilty about these ones, at all. 🍪
