“Breakfast” Soup
Come make breakfast soup with me.4 slices bacon diced2 tsp olive oil1 small onion minced2 tablespoons minced garlic 4 cups broth or 1 pack instant broth & 4 cups water 4 eggs beatenSalt & pepper to taste2 cups baby spinach leaves choppedRed pepper flakes (optional)*Hot sauce (optional) InstructionsIn a large saucepan, heat bacon over medium heat until crispy, about 5 minutes. Chop & set aside. In a stock pot, over medium heat and add olive oil. Add onion and sauté until soft and translucent, about 3 minutes.Add Bone broth. I use powdered about one stick to about 4 cups of water. Reduce heat to simmer and slowly add beaten eggs to the pot, stirring constantly until eggs scramble. Season to taste with salt and pepper. To add a little kick and crushed pepper or hot sauce. The soup is a little bit bland flavor, so I find these enhance it. Add chopped bacon, then chopped spinach. Let it wilt a little, then ladle soup into bowls.I had mine with fresh toast and sliced tomato. It was a fun twist on a BLT with also giving breakfast flavors.The benefit about the soup is, it’s very easy to make and needs very few ingredients . Do you have kids who are CONSTANTLY wanting snacks throughout the day, even after 3 full meals?
My kids were constantly asking me for snacks and it got to be such a tension in our house. One child despite my answer would sneak into the fridge and help herself (a few things breaking in the process) and another would just burst in to tears if for whatever reason I asked him to wait. I definitely wanted my kids to eat and be full but it just seemed I could never get the balance right. Getting up for snacks constantly, going to the store every other day, having meals be such a stress and the kitchen never fully cleaned…made me want to pull my hair out!
I saw someone else on the internet share this idea and thought I’d try it to. Here’s how it works:
Each child gets a bin with their own snacks, fresh fruit, snacks they can eat (My kids are GF) all in little baggies or portions. If they are hungry in between meals they can help themselves out of their own bin, no asking. They can eat the whole bin if they want! Whatever is in their is theirs. But once it’s gone, it’s gone and doesn’t get refilled till the next day.
So far it’s worked great! I’m not getting up a million times, the kids aren’t going through the fridge and the snacks are lasting!
One child will each hers gradually and the other likes to eat almost everything in the morning (and gets mad that there’s only his apples left at the end of the day).
I thought it would mean they wouldn’t eat their meals but *so far* they still eat most everything offered at meal times. I also keep fresh cut fruit, yogurt, cheese and snackable veggies in the fridge to go with meals so they get a well rounded offerings.
We don’t always have sweet snacks, it’s just whatever we happen to get at the store, but I make sure it’s things I don’t mind them having.
