Break up the string hoppers in small pieces resembling a rice look
Add the curry leaves and rampe (Pandon leaves) and salt, then the onion, veggies and fried potatoes. Stir fry until well blended
and the cooked vegetables and scrambled egg to the stir fry in with other ingredients and toss together.
Add string hoppers to mixture and stir fry together for 10-15 mins until golden brown. Keep stir frying for another few minutes and serve.

• 4 -P -Crabs Cleaned and chopped
• 1 inch ginger minced
• 6-8 cloves garlic
• 1- onion chopped
• 2-tbsp currypowder
• 1 cup tamarind paste
• 1 bunch curry leaves
• 5-green chillies slit into half
• 3-tabs oil
• Salt to taste
2-tsp Fenugreek
2- tsp mustard seeds
1- tomato
1- tsp turmeric powder
1 -tsp fennel seeds
Take a bowl and pour two tablespoons of oil and after boiling add two tablespoons of mustard seeds and two tablespoons of fenugreek and fry it.
Add chopped onion, green chillies, curry leaves, garlic and tomato and fry.
Now add the crab pieces and stir well to remove the tamarind solution and cover the cooking pot and put the oven in medium heat.
After 10-minutes, add curry powder, turmeric powder, water, salt and cover the pot again for 10 minutes.
After the water boils and evaporated, taste your delicious crab curry, drizzle some curry leaves on top and turn the stove off! Now u have your delicious crab curry, ready to serve!

1-tablespoon oil use oil of choice
1-teaspoon chana dal
3-4 large garlic cloves
1 small onion chopped, 100 grams, I used white onion
20-dried red chilies adjust to taste
3-large tomatoes chopped, 350 grams
1-teaspoon salt or to taste
1 teaspoon oil use oil of choice
1-teaspoon mustard seeds
6-7 curry leaves.
1 -ginger
Coriander Leaves
1- Heat 1/2 tablespoon of oil in a kadai/pan on medium heat. Once the oil is hot, add the chana dal and cook for around 2-3 minutes or until the dal is golden in color. Remove the dal from pan and set aside.
2- To the same pan now add garlic, onion and dried red chilies. Increase the amount of red chilies as per your taste.
3- Cook for around 3 minutes until the onions are soft.
4- Then add in the tomatoes and salt and stir.
5- Cook the tomatoes until they are soft and mushy, around 6-7 minutes.
6- Let it cool down a bit and then transfer to a blender along with the roasted chana dal.
7- Grind to a smooth paste. I also added 1/4 teaspoon kashmiri red chili powder while grinding but that’s optional. Transfer chutney to a bowl.
8- To make the tadka/tempering, heat 1 teaspoon oil in a small pan on medium heat. Once the oil is hot, add the mustard seeds and let them pop. Then add the hing and curry leaves. Saute for a minute until the curry leaves turn little crisp.

தேவையானவை
ஒடியல் மா -400g
மீன் - 1 கிலோ (முள் குறைந்த மீன்களாக இருப்பது நல்லது)
நண்டு - 1 box இவை கூட மிகச் சிறிய நண்டுகளாக இருந்தால் நல்லது)
இறால் -400g கிலோ
பயிற்றங்காய் - 250 கிராம் (1 அங்குல நீள துண்டுகள்)
பலாக்கொட்டைகள் - 25 (கோது நீக்கி பாதியாக வெட்டியது)
செத்தல் மிளகாய் - 400 g அரைத்தது
பழப்புளி - 400 gகிராம்
மரவள்ளி கிழங்கு 400g
வாழைக்காய் -4
மிளகுதூள் -1/2 -tbsp

உப்பு - சுவைக்கேற்ப
மீன், நண்டு, இறாலை நன்றாக சுத்தம் செய்து கொள்ளவும்.
ஒடியல் மாவை ஒரு சிறு பாத்திரத்தில் கொஞ்சம் நீர் விட்டு ஊறவிடவும். நீரில் மிதக்கும் தும்புகளை அகற்றி மாவை நன்றாக நீரில் கரைக்கவும். 2 மணி நேரமாவது ஒடியல் மா ஊற வேண்டும்.
காய்ந்த மிளகாயை நீர் தெளித்து நன்றாக விழுது போல் அரைக்கவும். காரம் அதிகமாக இருக்க வேண்டுமானல் 300gஅல்லது 400gக

After soaking the Idly rice, Urad dal and Fenugreek for 3 hours, put it in a grinder and beat it well.
Then add salt and mix it.
Put it in an idli pan the next morning and take it out.

Heat the oil in a large cooking pan and add of onions Sauté the onions on medium flame until it gets translucent.
Add of green chilies and curry leaves. Stir and cook for 2 minutes.
Add cabbage mix, stir, and cook for another 2 minutes.
Add the green pepper and cook for 1 minute.
Add the eggs Put the flame on medium. Using a spatula, move the eggs around in the pan to make sure that they cooked thoroughly.
Taste the kothu roti and add salt & pepper if needed.
Now add the pieces of parotta.
Add the mutton curry as well.
Turn the flame to high, mix and stir everything well for at least 1 or 2 minutes constantly.
Serve and enjoy this delicious Sri Lankan style mutton kothu roti. This is how to make kothu roti at home easily.
