Baked Salmon with Garlic and Dijon
Ingredients:
4 salmon fillets, skin removed
2 tablespoons Dijon mustard
2 tablespoons honey
2 tablespoons olive oil
4 cloves garlic, minced
Salt and black pepper to taste
Lemon wedges for serving
Instructions:

Preheat the oven to 400°F (200°C).
In a small bowl, whisk together the Dijon mustard, honey, olive oil, and minced garlic.
Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and black pepper.
Brush the mustard mixture over the top of each fillet, spreading it evenly to coat.
Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
Serve hot with lemon wedges.

Quinoa Salad with Roasted Vegetables
Ingredients:

1 cup quinoa
2 cups vegetable broth
2 sweet potatoes, peeled and diced
1 red onion, sliced
1 red bell pepper, sliced
1 tablespoon olive oil
Salt and black pepper to taste
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 cup crumbled feta cheese
Juice of 1 lemon
Instructions:

Preheat the oven to 400°F (200°C).

In a large bowl, toss the sweet potatoes, red onion, and red bell pepper with olive oil, salt, and black pepper.

Spread the vegetables in a single layer on a baking sheet and roast for 20-25 minutes or until tender and lightly browned.

In a medium pot, bring the quinoa and vegetable broth to a boil. Reduce heat to low and simmer, covered, for 15 minutes or until the liquid is absorbed and the quinoa is tender.

In a large bowl, combine the cooked quinoa, roasted vegetables, parsley, cilantro, mint, and feta cheese.

Squeeze the lemon juice over the salad and toss to combine. Serve warm or chilled.

Chicken Tikka Masala
Ingredients:
2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
1 cup plain yogurt
2 tablespoons lemon juice
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon cayenne pepper
1 tablespoon butter
1 onion, chopped
3 cloves garlic, minced
1 tablespoon garam masala
1 tablespoon tomato paste
1 (14-ounce) can crushed tomatoes
1 cup heavy cream
Salt and pepper to taste
Instructions:

In a large bowl, whisk together the yogurt, lemon juice, cumin, paprika, salt, ginger, cinnamon, and cayenne pepper. Add the chicken and toss to coat.

Cover and refrigerate for at least 1 hour.

In a large skillet over medium heat, melt the butter. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute.

Add the garam masala and tomato paste and cook for 1 minute, stirring constantly.

Add the crushed tomatoes and bring to a simmer. Cook for 10 minutes, stirring occasionally.

Add the marinated chicken and any remaining marinade to the skillet. Cook for 10-15 minutes or until the chicken is cooked through.

Stir in the heavy cream and season with salt and pepper to taste. Serve hot with rice or naan bread.

Mac and Cheese:
Ingredients:

1 lb. elbow macaroni
4 tbsp. unsalted butter
4 tbsp. all-purpose flour
3 cups milk
2 cups shredded cheddar cheese
1 cup grated parmesan cheese
Salt and pepper, to taste
Pinch of nutmeg (optional)
1 cup breadcrumbs (optional)
Directions:

Cook the macaroni according to the package directions. Drain and set aside.
In a large saucepan, melt the butter over medium heat.
Stir in the flour and cook for 1-2 minutes, or until the mixture is smooth and bubbly.
Gradually add the milk, whisking constantly, until the mixture is smooth and thick.
Stir in the cheddar cheese, parmesan cheese, salt, pepper, and nutmeg (if using). Cook until the cheese is melted and the mixture is smooth.
Stir in the cooked macaroni until evenly coated.

Beef Tacos:
Ingredients:

1 lb. ground beef
1 small onion, diced
2 cloves of garlic, minced
2 tbsp. chili powder
1 tsp. cumin
1/2 tsp. paprika
Salt and pepper, to taste
8-10 small corn tortillas
Shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa, for serving
Directions:

In a large pan, heat a bit of oil over medium-high heat.

Add the ground beef to the pan and cook until browned. Drain any excess fat.

Stir in the onion and garlic and cook until softened.

Add the chili powder, cumin, paprika, salt, and pepper to the pan and stir to combine.

Warm the tortillas in the microwave or on a griddle.

Serve the beef mixture in the warm tortillas, topped with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa.

Chicken Parmesan:
Ingredients:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 eggs, beaten
2 cups seasoned breadcrumbs
1/2 cup grated parmesan cheese
Salt and pepper, to taste
1 cup marinara sauce
1 cup shredded mozzarella cheese
Directions:

Preheat the oven to 400°F. Line a large baking sheet with parchment paper.

Place the flour in a shallow dish, the beaten eggs in another shallow dish, and the seasoned breadcrumbs in a third shallow dish.

Season the chicken breasts with salt and pepper. Dip each chicken breast in the flour, then the eggs, and finally the breadcrumbs, making sure to coat evenly.

Place the breaded chicken breasts on the prepared baking sheet. Bake for 20-25 minutes, or until the chicken is cooked through.

Remove the chicken from the oven and spread a layer of marinara sauce over each chicken breast. Sprinkle with shredded mozzarella cheese and grated parmesan cheese.

Return the chicken to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Tomato Soup:
Ingredients:

2 lbs. ripe tomatoes, chopped
1 small onion, diced
2 cloves of garlic, minced
2 tbsp. tomato paste
4 cups chicken or vegetable broth
2 tbsp. heavy cream
Salt and pepper, to taste
Directions:

In a large pot, heat a bit of oil over medium heat.
Add the onion and garlic to the pot and cook until softened.
Stir in the chopped tomatoes, tomato paste, and broth. Bring to a simmer.
Reduce heat and let the soup cook for 20-25 minutes, or until the tomatoes are tender.
Using an immersion blender or transferring to a blender in batches, puree the soup until smooth.
Stir in the heavy cream and season with salt and pepper to taste.
Serve the tomato soup hot, garnished with fresh basil or croutons if desired.

1 large onion, sliced
4 cloves of garlic, minced

Directions:

Preheat the oven to 400°F. Line a large baking sheet with parchment paper.

In a large bowl, toss the sliced carrots, zucchinis, bell peppers, onion, and garlic with the olive oil.

Season with salt and pepper to taste.

Arrange the vegetables in a single layer on the prepared baking sheet.

Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly browned.

Fried Rice:
Ingredients:
2 cups cooked white rice
2 eggs, beaten
1 small onion, diced
2 cloves of garlic, minced
1 cup diced carrots
1 cup frozen peas
1/2 cup diced ham
2 tbsp. soy sauce
1 tsp. sesame oil
Salt and pepper, to taste
Directions:

In a large pan or wok, heat a bit of oil over medium-high heat.

Add the beaten eggs to the pan and scramble until set. Remove the eggs from the pan and set aside.

Add a bit more oil to the pan, along with the onion and garlic. Cook until softened.

Stir in the carrots, peas, ham, soy sauce, sesame oil, salt, and pepper. Cook until the vegetables are tender.

Add the cooked rice to the pan and stir to combine with the vegetable mixture.

Add the scrambled eggs back to the pan and stir to distribute evenly.

Serve the fried rice hot.

Grilled Cheese Sandwich
Ingredients:

4 slices of bread
4 slices of cheddar cheese
2 tbsp. butter
Directions:

Heat a skillet over medium heat.
Place 2 slices of bread on a cutting board and top each slice with a slice of cheese.
Close the sandwich and spread butter on the outer side of bread.
Place the sandwich in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
Repeat the process with the remaining 2 slices of bread and cheese.
Serve hot and enjoy.

Chocolate Chip Cookies:
Ingredients:

2 and 1/4 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup unsalted butter, room temperature
3/4 cup granulated sugar
3/4 cup brown sugar
2 large eggs
1 tsp. vanilla extract
2 cups chocolate chips
Directions:

Preheat the oven to 350°F. Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt.

In a separate large bowl, cream the butter and both sugars until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Stir in the chocolate chips.

Using a cookie scoop or spoon, drop balls of dough onto the prepared baking sheet.

1 lb. spaghetti
1 lb. ground beef
1 onion, diced
2 cloves of garlic, minced
1 can of diced tomatoes
1 cup of beef broth
1 tsp. dried basil
1 tsp. dried oregano
Salt and pepper, to taste
Directions:

Cook the spaghetti according to the package instructions. Drain and set aside.

In a large pan, brown the ground beef over medium heat. Drain any excess fat.

Add the onion and garlic to the pan and cook until softened.

Stir in the diced tomatoes, beef broth, basil, oregano, salt, and pepper. Bring to a simmer and cook for 10-15 minutes.

Serve the bolognese sauce over the cooked spaghetti.
