Humba-Balbacua-Lechon Belly

1) HUMBA:
a) Ingredients:
*Oil (for frying) = 1 Liter
*Pork (any part as you like but the recommended either BELLY, RIBS, KNUCKLE = 5 pounds
*Salted Black Beans = 2 cans
*Pineapple Juice = 1 Liter
*Coke = 1 can
*Sugar = 5 Tbsp
*Soy Sauce = 5 Tbsp
*Pepper Corn = 10 pcs
*Bay Leaves = 10 pcs
*Black Pepper = 2 Tspn
*Scallions = 1 Pound (10 small bundles)
*Red Onions = 1 pc (big)
*Garlic = 2 whole piece
b) Procedure:
*Fry quickly the Pork (high heat to easily get little golden brown, not cooked)
*Put all the fried pork in the big pot
*Add all the ingredients except the scallion
*Cook in HIGH HEAT for 15 minutes
*Check the taste if you'd like the taste or not, maybe you need to add little soy sauce and sugar
*Cook in MEDIUM HEAT for 30 minutes
*Add the scallions
*Cook in LOW HEAT for 30-45 minutes (check if meat is tender enough and during the cooking process you may need to add a little pineapple juice, check the taste once you add juice)
*Bon Appetit
