Ginger Beer

Traditional ginger beer is a sweetened and carbonated, usually non-alcoholic fermented beverage. Historically it was produced by the natural fermentation of prepared ginger spice, yeast and sugar. Current ginger beers are often manufactured rather than brewed, frequently with flavour and colour additives, with artificial carbonation. It is still produced at home using a symbiotic colony of yeast and Lactobacillus known as a 'ginger beer plant ' or from a 'ginger bug' starter created from fermenting ginger, sugar and water.
It has many benefits such as relieves nausea and improves digestion, lowers cancer risk, anti-inflammatory properties, antibacterial properties and anti-aging.

Kvass

It is a fermented cereal -based low-alcohol beverage with a slightly cloudy appearance, light brown colour, and sweet sour taste. Kvass originates from northeastern Europe, where grain production was considered insufficient for beer to become a daily drink. It is made from a mash obtained from eye bread or eye flour and malt soaked in hit water , fermented for about 12 hours with the help of sugar and bread yeast at room temperature. It contains not more than 1.5% of alcohol by volume.

Tepache

It is a Mexican fermented beverage made from the peel and the rind of pineapple, and is sweetened either with piloncillo or brown sugar, seasoned with powdered cinnamon, and served cold. It is fermented for many days but the resulting drink does not contain much alcohol. Different microbes found in tepache are Lactobacillus pentosus, Lactobacillus paracasei, Lactobacillus plantarum, Lactobacillus lactis and Saccharomyces cerevisiae.
It is a delicious, cost effective, easy to make and sustainable beverage with many health benefits like it has a high content of vitamin C, it also provides vitamin A and B and minerals like magnesium, protects the microbial flora of the colon, helps to fight intestinal parasites contributing to good digestion since it contains bromelain, an enzyme that helps to improve the digestive process, it also contains tibicos, which revitalize tissue harmed by traumatism and recurrent infections and helps with weight loss.

Makgeolli (막걸리)

It is a traditional Korean alcoholic beverage. It is a type of rice wine that is made through the process of fermenting rice, water, and a fermentation starter called 'Nuruk' (누룩). It is known for its refreshing taste and cultural significance. Traditionally, makgeolli was homemade and consumed by farmers and commoners in Korea.
The starter culture used is nuruk. It contains enzymes that help breakdown the starches in the rice and initiate fermentation, mixing, fermentation, aging, straining, bottling and refrigeration. The main ingredients of nuruk are wheat, barley and rice. Inoculated with specific strain of fungi called Aspergillus oryzae. After fermentation it's dried and grinded. Other microbes present in makgeolli are Saccharomyces cerevisiae, Lactobacillus and Leuconostoc.
It is said that fermented alcoholic beverages don't have any health benefits but makgeolli has many health benefits like:
- It has a low alcohol content of only 5-6% which is considered as both a health elixir and well-being drink.
- It has 2% protein, 10% fiber, amino acids, vitamin C and B, antioxidants.
- It reduces cholesterol, stress reduction, probiotic properties, improves cellular function, helps kill gastric cancer cells and reduces the size of tumors, improves complexion, fights fatigue, helps digestion, low fat or fat free, anti-aging, etc.
