😃😋🍝 Mac and "Cheese"

💡You need:
➡ Your favorite Legume pasta
200ml unsweetened plant milk ( i use almond milk)
300g Hokkaido (alternatively a mix of potatoes (200g) and carrots (100g), sweet potatoes and cauliflower would be also fine)
2 cloves of garlic
3-4 tbsp yeast flakes *
1/2 red onion
80g cashew nuts or sunflower seeds
1 tbsp lemon juice
opt. 1 tbsp tapioca starch
salt, pepper, nutmeg, turmeric, paprika powder
Toppings: parsley, spring onions, chilli flakes etc.
* Yeast flakes give the sauce a spicy and cheesy taste. They also make the sauce thicker.
➡ That's how it's done:
1. Soak the cashew nuts in hot water for about 20 minutes.
2. Cook the vegetables. Pour off the remaining water, add the drained cashews and the remaining ingredients to the blender and puree for about 2 minutes until creamy.
3. Cook the pasta according to the instructions on the packet. Pour the sauce over the finished noodles, simmer briefly and serve with chopped parsley. Enjoy!
