This is a great thanksgiving recipe. You can either use the filling as cranberry sauce or use it in a dessert topping for these squares.

Crust:
2 cups almond flour
1 cup dates
(optional) 1 tbsp coconut oil for less crumbly crust

Filling:
2 cups cranberries
1 cup date syrup
zest and juice of 2 oranges
2 tbsp tapioca starch.

Blend the crust ingredients in a food processor, then transfer the mixture to the serving dish and press it onto the bottom to create a crust.

In a medium saucepan, combine the cranberries, date syrup, zest and juice of the oranges and bring to a boil. Reduce heat and simmer for 5 minutes until cranberries begin to pop. With an immersion blender, roughly blend the mixture so that some of the texture of the cranberries still stays intact. Add tapioca starch and heat for another minute until a thick mixture forms. Remove from heat and transfer the mixture to the serving dish on top of the crust.

Cool for a few hours and cut into squares.

This set was a gift from my uncle, who knows how much I like to experiment in the kitchen. It was really easy and we had all the necessary ingredients at home. This set is a cool way to bring science into your kitchen. And it's a lot of fun too.

Happy Summer! Whether you are hosting a pool party, a brunch or a picnic, this is a refreshing drink you can whip up in no time. It's naturally sweet and refreshing and makes a great summer time treat.

4 cups of watermelon
juice of 1 lemon
750 ml of sparkling water

You can also play around with flavors, by mixing in flavored sparkling water, different fruits, and garnishes (raspberries are great as they float up to the top). Enjoy the summer.

I posted a video tutorial for this dessert yesterday. The great part is it can be made with any fruit combinations. What are your favorite fruits?

This was my first time working with Agar Agar, and it's such a fun ingredient. It's a plant-based gelatin extracted from seaweed. It has no flavor, so it blends well into liquids. It's completely vegan, so you can use it in any vegan recipe.

This dessert came out so pretty with 3 distinct layers, and you can play around with the ingredients by adding different fruits, different juices, and different fillings.

Recipe

First Layer:
2 cups of apple juice
2 tsp of agar agar powder
1 cup of fresh mango, diced into cubes

Second Layer
1 cup of full fat coconut milk
1 tsp vanilla
1/4 cup of water (to dilute the coconut)
1 tsp of agar agar powder

Third Layer
1 cup of mango puree made from blending fresh mangoes (about 3 mangoes)
1/4-1/2 cup of water - you want to dilute the puree (ours came out too thick, you may want to add more water 1/4 cup at a time)
1 1/4 tsp of agar agar powder

Dilute Agar Agar in the liquid by bringing it to a boil while stirring. Once the liquid is at a boiling point, reduce the heat and continue stirring until completely dissolved. Move it to the mold quickly, because as soon as it comes to room temperature, it begins to set. Keep adding layers and refrigerate to cool down your dessert.

May 13th was the National Hummus Day. In its honor, I'm making this delicious dessert hummus.

We love chickpeas in any way, but combining them with chocolate makes a great dip, topping, or even a spread for sandwiches. Try it.

1 15oz can of chickpeas (reserve the liquid "aquafaba"
1/4 cup tahini
1/2 cup cocoa
5-6 large dates (add more or less to taste)
1 tbsp vanilla

Blend all the ingredients until hummus is smooth; add aquafaba a few tbsp at a time until you get the right consistency. Enjoy!

Now that it's strawberry season, we really like visiting local strawberry farms and picking our own strawberries. We eat most of them, but they are a fun ingredient to use for different desserts. We didn't have too many left to make this pudding, so follow the recipe below to make yours, and be sure to check out the bloopers at the end of the video.

1 can of coconut cream (we used coconut milk, but coconut cream will set faster)
3 cups of strawberries (we used one, but you will get more of a strawberry flavor)
3 tbsp maple syrup (for sweetness)
1 tsp vanilla
1 banana for creaminess
zest and juice of 1 lemon

17/04/2021

This is my favorite breakfast. It's yummy, nutritious, and you can make it without any added sugar (since bananas and apple sauce add the sweet flavor). This banana bread comes out very moist and light. Try it out.

Recipe:
3 ripe bananas - mashed
1/2 cup coconut oil
1/2 cup apple sauce
1 tsp vanilla
1 cup whole wheat flour
1/2 cup almond flour
2 tsp baking powder
1 cup of chocolate chips

Bake over 350 for 1 hour and 5 minutes.

These donuts are practically guilt-free. They come out soft and airy and are a great dessert (or even breakfast).

3/4 cup coconut milk
2 tsp apple cider vinegar
1/2 cup maple syrup
1 tsp vanilla
2 tbsp oil (we used grape seed)
1 cup apple sauce
2 cups flour (we used 1/2 all purpose, 1/2 whole wheat)
1 tsp salt
2 tsp baking powder

Use an ice cream scoop to place them into a donut shaped pan. Bake for 10-15 min over 325.

You can then top them with your favorite jam, icing, or chocolate gonache (1/2 cup of chocolate chips and 2 tbsp of coconut milk and melt over double boiler).

27/03/2021

Pick your favorite dark chocolate combination:

Orange
Strawberry
Raspberry
Peanut butter
Coffee
Sea salt
Banana

What's Aquafaba? It's liquid in which chickpeas get soaked. So when you are using chickpeas for a recipe (check out my chocolate truffles video in a few days), don't discard the water. Try this recipe instead. It's super easy and fun. This chocolate mousse doesn't have butter or fat, it's super light, and a perfect treat.

Recipe:
Aquafaba - Liquid from 1 can of chickpeas
1 tsp vanilla
1/8 cup maple syrup
6 oz of melted dark chocolate

22/03/2021

This is another super easy no-bake dessert to make. And you probably already have everything you need in your pantry.

Recipe:
2 1/4 cup tahini
1/2 cup maple syrup
1/2 cup coconut oil
1 tsp vanilla
1/3 cup chocolate chips
1/3 cup pistachios
1/4 cup cranberries

Whisk the first 4 ingredients together, add the toppings. Pour into a parchment paper lined loaf pan and refrigerate for 2 hours.

These fudge squares come out rich and yummy. And the colors look really pretty.

21/03/2021

These muffins are super healthy, they use no added sugar or oil. You can make them with any non-dairy milk and flour of your choice.

Recipe:
3/4 cup of whole wheat flour
3/4 cup of almond flour
2 tsp flax meal
2 tsp baking powder
1 tbsp cinnamon
2/3 cup of almond milk
1/2 cup of unsweetened apple sauce
1 tsp vanilla
1/3 cup of maple syrup
1 cup of chopped apples

Add the first 5 ingredients in a bowl and mix together with a fork.
Add the milk, apple sauce, vanilla and maple syrup into a separate bowl and mix together. Add the wet ingredients into the dry ingredients and mix with a fork. Do not overmix to ensure muffins come out light.

Bake over 400 degrees for 15 - 20 minutes.

16/03/2021

We have tried several cookie recipes - this one is by far our favorite! Try it and let me know what you think!

Recipe:
1/2 cup of coconut oil
1/3 cup of coconut cream
1/2 cup of apple sauce
1/2 cup of maple syrup
1 tsp of vanilla
1 cup of almond flour
1 and 1/4 cup of coconut flour
1 tsp baking powder
2 cups of vegan chocolate chips

Follow the instructions in the video.

Quick tips:
- Let the cookies cool down completely before eating
- Store in the fridge after you are done

Substitutions:
- if you don't have apple sauce, 1/2 of a ripe banana will work
- Use 2 and 1/4 cups of whatever flour you have on hand - we just like this combination for light and airy cookies

11/03/2021

This cheesecake is incredibly creamy, sweet, tangy - everything you like about a cheesecake, without the dairy and refined sugars. You put it together in 2 easy steps - crust and filling. Simple ingredients, any kid (or adult) can make this.

Crust:
2 cups of walnuts
6 large pitted dates
1/4 cup of oats
pinch of salt

Filling:
3 cups of raw cashews soaked overnight
1/2 cup of melted coconut oil
3/4 cup of maple syrup
3/4 cup of lemon juice
1 tbsp of vanilla

Start with the crust. Add all the ingredients into a food processor and blend until the mixture is sticky and well-incorporated. Transfer to the bottom of the spring pan and use a glass to help you press it down. Once done, add all the ingredients for the filling into a high powered blender. Blend for 2-3 minutes until the mixture is smooth and creamy. Pour the mixture onto the crust and put the cheesecake into the freezer for 3-4 hours. Once set, you can garnish it with your favorite fruit, peanut butter or chocolate topping and serve. Enjoy!
