Why are there so many ways to spell Chanukah? Because the word is transliterated from Hebrew. Nope, not translated; transliterated. In Hebrew, it always looks the same: חֲנֻכָּה, and in order to express it in English, we have to assign English letters to the sounds of the words in Hebrew.

Osmosis causes the water and salt inside your turkey to balance with the water and salt in the solution surrounding the bird. There's more salt outside than inside, so osmosis pulls salt into the meat, which causes the tightly wound bundles of proteins to pull apart and the muscle fibers to relax, making more room for the yummy flavors in your brine to pe*****te the meat. Then, when the turkey is roasted, it retains more moisture than if there was no brine. And you get a more moist, more flavorful, and tastier turkey!
