I never really liked sourdough until I started to make it. Understanding how much it takes to make a good loaf really made my appreciation for bread in general grow. Each loaf process is different and the satisfaction that comes when you open the oven to check to see if there’s a good oven spring or color to it is unmatched. I’ll always try to improve my process!
