Sharing my brie, roasted garlic, thyme & blood orange/port cranberry sauce babka wreath recipe whilst cooking up some festive showstoppers!
RECIPE:
2 garlic bulbs (roasted in salt & olive oil in foil at 200C on roast setting)
350-400g STRONG Brie
Fresh thyme
Cranberry sauce:
600g fresh cranberries
250ml port
1 blood orange (zest & juice)
1/2 cup brown sugar
Simmer everything for 20 minutes until softened, adjusting to taste.
Dough:
1 packet active dry yeast
200ml lukewarm milk
1 tbsp sugar
(Leave to sit for 10+ minutes till frothy)
575g plain flour
1 tbsp sugar
1 tsp salt
2 eggs, beaten
Using a dough hook, mix on medium for 12 minutes until soft & smooth.
Gradually add in 90g of room temperature butter over a few minutes, then mix on low for a further 5 minutes until the dough comes away from the bowl - it shouldn’t be too wet!
Leave to prove for minimum of 60 minutes until doubled, then punch down. Wrap in clingfilm and refrigerate overnight (or an hour in the freezer)
Take dough out and roll out to a 60x40cm rectangle. Melt the Brie and roasted garlic in a microwaveable bowl till incorporated.
Spread dough with cranberry sauce, Brie and fresh thyme.
Roll tightly into a log, then slit down the middle (where you connected the seam preferably). Carefully twist the pieces together, then transfer to a paper lined sheet and twist & knot into a wreath.
Leave to prove for a further 30 minutes.
Brush with egg wash and sprinkle with sea salt/thyme before baking for 30-40 minutes at fan 180C. Serve warm!

Inspired by one of our favourite dishes in Rome, I recreated a Roman style stuffed Artichoke filing with a beef mixture before broiling with extra Parmesan and plating with anchovy aioli, basil oil & a smooth artichoke butter bean base. One of our favourites 🤌
