Pork belly burnt ends
Cut up a pork belly in 1” cubes and seasoned them with Eh Sweat Heat Rub.
Smoked them on my XL with until 195F internal temp.
Transferred them into a Dutch oven with butter, brown sugar, and bbq sauce for about an hour.
Soft, squishy heavenly meat in my mouth. Sooo good. Served with Kae salad.
Happy to my sweet Angel. Daddy loves you so much. I cannot wait to see you when I get back.

Seasoned with Jamaican Jerk. Reverse seared on the
Signal making sure I cook them to perfection.

Seasoned a sirloin steak with Cajun Rub.
Smoked it until 115F internal temp. Then sear it over hot coals to give it a nice crust.
Serve it over your choice of salad. I chose Sweet Kale Salad.

Asian Boneless Chicken Thighs over Instant Noodles.
Smoked on indirect heat until 165F IT in the XL. Then cooked directly over the coals to crispy them up.
Sauce for the noodles:
Minced up some garlic and cooked them in a pan with butter for a couple minutes.
Add 1/4c heavy cream, 3 Tbsp Yuzu sauce, 2tbsp Hoisin sauce, 2tbsp oyster sauce.
Let it simmer for a couple 3-5 mins and then add noodles.

This morning was an emotional one for me. It marked that it was our last morning together in this home. We had so many amazing memories together in this house. When one door closes, another one opens up. I’m looking forward to our new chapter and I will do my very best to make it the best for you my Angel.
