Luke and Andy continue their Tiki/Exotica series with a focus on Steve Crane, his legendary Beverly Hills lounge The Luau, and Arthur Lyman’s debut album “Taboo”!
 
Luke shakes up the classic 1950’s Jet Pilot, a tweaked Zombie of sorts that checks off all the Tiki boxes…
 
Jet Pilot

1 oz Demerara Rum
¾ oz Aged Jamaican Rum
¾ oz Overproof Rum
½ oz Falernum
½ oz cinnamon syrup
½ oz fresh lime juice
½ oz fresh grapefruit juice
Dash of Angostura bitters
Dash of Absinthe
 
Add all ingredients to a shaking tin with a handful of crushed ice and a single cube. Shake briefly but vigorously and open pour into your favorite Tiki glass or mug. Top with more crushed ice. Traditionally this is served without garnish but this is Tiki so have fun and load it up. Luke used fresh mint and grapefruit peel. A large cinnamon stick would also add some nice aromatics.

Add syrup and basil leaves to a shaking tin and muddle. Add remaining ingredients with ice, shake, and double strain into a Nick & Nora glass. Garnish with a basil leaf.

½ oz Dry Curaçao or Creole Shrubb
½ oz Orgeat
¼ oz Demerara syrup
1 oz fresh lime juice
 
Add all ingredients to a mixing tin. Add ice, shake vigorously and pour unstrained (dirty dump) into an old fashioned glass. Top with fresh crushed ice. Garnish with a spent lime shell and a sprig of mint to create your own tropical island floating in a sea of rum.

Luke and Andy head out to sea for a deep dive into the 1975 Steven Spielberg classic “Jaws”, celebrating it’s 46th anniversary on June 20th. Like the film itself, the iconic score by legendary composer John Williams has been incredibly influential and remains just as effective today as it was upon it’s release.

Luke shakes up a fun riff on a Blue Hawaii(an), incorporating elements from the film.

½ oz Rhum Agricole Blanc
½ oz Falernum
½ oz Blue Curaçao
½ oz Allspice Dram
¼ oz Coconut Liqueur
¾ oz fresh lemon juice
¾ oz fresh pineapple juice
Barspoon of grenadine or Luxardo cherry syrup (floated)

Garnish with rolled up lemon peel to resemble the Orca’s yellow barrels

Add all ingredients except the grenadine/cherry syrup to a shaking tin. Add ice, shake, and strain into a double old fashioned glass. Top with crushed ice. Float a barspoon of grenadine or cherry syrup on top and garnish.

1 oz Aged Rum
¾ oz Funky Jamaican Rum
¾ oz 151 Proof Demerara Rum
1 tsp Pamplemousse (grapefruit liqueur)
1 tsp Falernum
1 tsp Cinnamon Syrup
Dash of Angostura Bitters

Rinse or mist a chilled old fashioned glass with absinthe. Add all ingredients to a mixing glass, stir until chilled, and strain into prepared glass over a large ice cube. Express a lime peel over the drink and garnish. Enjoy!

I whipped up a classic tiki cocktail called the Jet Pilot created in the 1950's at The Luau in Beverly Hills. One of my absolute faves that checks off all the boxes.

¾ oz Aged Rum

½ oz Falernum
½ oz Cinnamon Syrup

1½ oz Puerto Rican Rum
1½ oz Dark Jamaican Rum
1 oz Overproof Demerara Rum
½ oz Falernum
¾ oz fresh lime juice
½ oz Don's mix (2 parts grapefruit juice to 1 part cinnamon syrup)
1 tsp grenadine
Dash of Absinthe
Dash of Angostura bitters

Using a drink mixer, flash blend with crushed ice (or shake briefly with ice in a standard mixing tin) and pour unstrained into a tall straight-sided highball glass or tiki mug. Top with additional crushed ice and a sprig of mint. Enjoy but remember…only 2 per customer.

Luke and Andy return to synth with solo artist and discuss his most recent LP “Persuasion System”.

Luke details the origins of the classic and elegant martini which, if the legends are true, was first made for a dirty old prospector in the mid 1800’s.

Luke enters uncharted territory with a vodka martini riff and things get weird.

2 oz Smoked Vodka
1 oz Manzanilla or Fino Sherry
1 tsp Apricot Liqueur
1 tsp honey syrup

To smoke the vodka, just place a glass over some torched wood chips to capture the smoke, then add the vodka to the glass and swirl to incorporate. Add all remaining ingredients and stir with ice until chilled. Strain into a stemmed glass and garnish with a lemon peel expression. Try it out at home and let us know what you think.

Barspoon of Absinthe
Barspoon of Green Chartreuse
3 to 4 drops of Celery Bitters

Muddle basil leaves with syrup.
Add remaining ingredients and shake with ice. Double strain into a rocks glass over fresh ice.

Garnish with basil leaves like Yoda's ears.

Pour seltzer into a chilled highball or Collins glass. Add remaining ingredients into a mixing tin. Shake briefly with ice and double strain into the glass over the seltzer. Add ice and garnish with a lemon slice and a skewered blackberry. Make one yourself and let us know what you think!

release their new album "Cheap Dreams" this Friday 4/9 so Luke and Andy decided to celebrate by revisiting their favorite album from the band's catalog: 2013's "Limits of Desire".

Luke crafts a classic whiskey highball for the first time and it ain't half bad!

Whiskey Highball

2 oz Blended Scotch
4 oz Seltzer

Add scotch to a chilled highball glass. Slowly lower a large ice cube into the glass and let sit for 10 seconds. After the ice has tempered, stir for 10 seconds. Add another ice cube and stir briefly. Pour half of the seltzer into the glass and using a barspoon, slowly lift the bottom cube up and then lower back down. This will gently mix the ingredients. Finally, pour in the remaining seltzer and give one last stir. Cheers!

2 oz Stout Edition
¼ oz Banana Liqueur
¼ oz stout syrup
2 dashes Angostura bitters
1 dash orange bitters

I found the Guinness stout syrup recipe on
It's easy to make and super tasty.

This is just a simple riff on an old fashioned where I've split the sugar component between a syrup and a liqueur.

1½ oz Dark Rum (Demerara or Jamaican)
½ oz Mezcal
¾ oz Bruto Americano (or Campari)
⅔ oz Ancho Reyes Chile Liqueur
1 oz fresh pineapple juice
½ oz fresh lime juice
½ oz simple syrup
(Luke used ¼ oz each of demerara and pineapple syrup)

Add all ingredients to a shaker with ice, shake and strain into an old fashioned glass over fresh ice. Garnish with a pineapple frond and sprig of rosemary. Whip one up at home and let us know what you think!

Luke lays out the questionable origins of the classic Manhattan cocktail and creates a Batman inspired riff.

Gotham
••••••••••••
2 oz Rye Whiskey
½ oz Sweet Vermouth
½ oz Averna
1 tsp Green Chartreuse
2 dashes Angostura bitters

Add all ingredients to a mixing glass with ice, stir until chilled, strain and serve up in a stemmed glass. Express a lemon peel over the drink and if you're up to it, carve a bat symbol lemon peel for added effect. Stir one up and let us know what you think!

Hey everyone, Luke here with a fun little cocktail tip!

In this week’s episode we talked about the classic New Orleans cocktail, the Sazerac, and listed a couple variations (see our previous post for the recipes). One technique I didn’t mention in the podcast that adds a bit of flair as well as a subtle tweak to the flavor is a flamed absinthe rinse.

Here’s how to do it. Add absinthe to a small atomizer (pump & spray bottle), direct the nozzle toward a chilled old fashioned glass and using a match or culinary torch, spray the absinthe through the flame and into your glass. Not only does this create a dramatic fireball due to the high alcoholic content but, more importantly, it caramelizes the absinthe, changing the flavor in the process.

The only slight downside to this is that, depending on how many pumps of absinthe you do, it can warm up your glass a bit. Just give it a couple minutes to cool and be sure to properly chill your cocktail when mixing. Obviously it should go without saying, anytime you’re dealing with fire and alcohol, use caution.

Two bands enter, only one...leaves?

Luke delves into the history of one of America's oldest (and tasiest) cocktails: the Sazerac. Stir up one, or better yet both, of the variations below and let us know which you prefer!

Classic Sazerac
••••••••••••••••••••••
1½ oz of Rye Whiskey or Cognac
1 sugar cube
3 dashes Peychaud's bitters
Absinthe rinse

Death & Co Sazerac
•••••••••••••••••••••••••••
1½ Rye Whiskey
½ oz Cognac
1 tsp demerara syrup
4 dashes Peychaud's bitters
1 dash Angostura bitters
Absinthe rinse

For both versions, pour just enough Absinthe into a chilled old fashioned glass to roll and coat the inside. Add remaining ingredients to a mixing glass and stir with ice until properly chilled, then strain into prepared glass with Absinthe. Express a lemon peel over the drink and discard. Enjoy!

Luke stirs up a simple riff on an old fashioned and then smokes that bitch. Make it yourself at home!

MAPLE FASHIONED
•••••••••••••••••••••••••••
2½ oz Bourbon or Rye
½ oz maple syrup (preferably barrel aged)
5-6 dashes Angostura bitters

To smoke the cocktail, Luke used Smoke Top but you can also just torch wood chips on a cutting board and place your glass over them to capture the smoke. Stir all ingredients with ice and strain into smoked glass over a large cube. Express an orange peel over your finished cocktail and enjoy!
