Caramelized Pork ribs with eggs. This is a Vietnamese/Lao comfort dish that I grew up eating. There are so many diff ways to make this but the main ingredients are pretty similar. I love using quail eggs in my recipe because you get that bite sized egg with every bite! Ingredients: 3 lbs pork spare ribs, 2 inch pieces 1/3 cup sugar 2 tbsp oil 2 tbsp minced garlic 3 tbsp shallots 1/4 cup fish sauce 1/2 tsp black pepper 12 ounces coconut water/soda 2 tbsp dark soy sauce 2 cups of quail eggs (I buy canned ones) 3 tbsp green onions On medium heat, add oil and sugar and continuously stir it until it is a nice golden brown color. Be careful not to burn it or it will taste bitter. If it’s burned, toss it out and start over. Once the sugar has caramelized, add the ribs and cook thoroughly. Once it’s browned, add garlic, shallots and cook for a few minutes. Add fish sauce, black pepper, coconut soda/water and dark soy sauce. Cover and simmer for another 20 minutes, stirring occasionally to keep that nice caramel color. Add quail eggs and cook for another 5 minutes. Taste and adjust the sauce if needed. Creamy Coconut Mango Sago recipe. You only need 4 ingredients, sago, mango, coconut milk and condensed milk. I like using champagne mangos for this recipe but you can use any ripe mangos. Ingredients: 1/2 cup tapioca pearls/sago 3/4 cup of coconut milk or coconut cream 4 tbsp condensed milk (adjust to your sweetness) 3 mangos (I’m using champagne mangos) Start off by boiling the sago for 10 minutes, stirring occasionally, then turn off heat and cover for 15 minutes or until they are translucent. This may vary on the brand you buy so just follow instructions on package. Drain and rinse in cold water. Cut up the mangoes and reserve 1 cup for topping. Blend the diced mango, coconut milk and condensed milk until smooth. Pour into a bowl and add the sago and mix. Refrigerate for 1 hour. Serve in a glass and top with some more mango. *if you don’t like it thick, use full can of coconut milk or add regular full fat milk to thin it. The best spinach dip recipe. I don’t like Parmesan cheese, cream cheese, jalapeno or artichoke in my spinach dip so this is perfect with just the flavor of spinach and crunch from the water chestnuts. Ingredients: 12 oz frozen chopped spinach 1 8 oz can water chestnut 16 oz sour cream 1 cup mayonnaise 1 packet Knorr vegetable recipe mix Prep spinach according to the package then squeeze out all the excess water. Place into a bowl and use kitchen sheers to cut the spinach into tiny pieces. Chop the water chestnuts as well. Add all the ingredients to a bowl, mix well and refrigerate for 6 hours before serving. Pumpkin Bread Pudding I love bread pudding so I wanted to try something different and I made pumpkin bread pudding. This reminds me of overnight French toast and it’s so good served warm with the sweet cream sauce. Ingredients: 1 loaf of day old French bread 1 can 15oz pumpkin purée 4 eggs 1 cup heavy cream 1 1/2 cup whole milk 1 cup sugar 3 tsp pumpkin spice mix 2 tsp vanilla 3 tbsp melted butter Cream sauce: 1 stick unsalted butter 1 cup heavy cream 1/2 cup brown sugar 1 tsp vanilla Preheat oven to 350 degrees. Cut bread into 2 inch cubes. Grease 9x13 baking dish with butter or cooking spray. Add bread to dish. In a large bowl, add eggs, heavy cream, milk, pumpkin puree, pumpkin spice, sugar, melted butter and vanilla. Whisk everything together. Pour mixture over the bread and coat all pieces. Bake for 1 hour. Sauce: In a pan add butter, heavy cream and sugar. Bring to a boil, reduce to low heat and simmer for 5 minutes until the sauce thickens.
