Phở noodles can be found on every street food corner and in restaurants in Cambodia.

The word phở refers to the type of noodle that is flat rice noodles served with beef or boiled chicken in hearty beef stock and considered a national dish for the Vietnamese. Created in the 1900s in the region of Nam Định located 90 km from Vietnam’s capital city, Hanoi.

The more popular of the two widely known varieties is Phở Hanoi. It is distinguished by a clear broth and dressed only with a squeeze of lemon and slices of bird’s eye chili.

The southern version, Phở Nam, has a murkier broth and is served with a bouquet of fresh herbs like bean sprouts, basil, and mint.

Chef Fred have been in the food industry for more than 40 years. Originally from Hong Kong, he started his career since he was 16 year old because of his passion in cooking especially because he love to eat and wanted to learn more. He came to Phnom Penh, cambodia in 2018 working in Nagaworld, Phnom Penh as an Executive Chef but his ideal dream is to to own his own restaurant. So in 2020 he set out to start his own new adventure with his wife and opened Golden Palace Cantonese restaurant serving, dim sum, Hong Kong noodle and roasts and seafood. Watch his story and he shared his journey becoming a chef, a business owner in Phnom Penh.

In this video, Chef Fred shared with us one of Hong Kong historical dish, the 'Sweet and Sour Pork' and he's going to cook it the traditional way. It was said that during the Qing dynasty, a lot of foreigners who traveled to south of China love this simple fried pork dish.

RECIPE INSTRUCTIONS
Pork Belly - marinate with salt, sugar, spring onion, ginger and a bit of chicken seasoning powder.

Once marinated, he coat it with flour than to egg and again to flour and than deep fried for 2-3 minutes and put aside

For sides, we need red and green bell pepper, pineapple and onion. Deep fried all about 2 minutes and put it aside. Then deep fried again the pork to make it more crispier and brings out the flavor. Be careful not to overcook it.

For the sauce, add in ketchup and vinegar mixture, fry it for a minutes or so then add in the pork until fully covered with the sauce.

Finally add in the sides of bell peppers, pineapple and onion and assemble the dish.
