Vulcan music would be like Bach: ordered, precise, logical, and exceptionally mathematical.
Klingon Classical music must be like late Scoenberg, or other 20th century composers who explored the aleatoric music, but with more aggression.
I'm thinking Romulans are Beethoven-esque; a good grounding in tonality but ultimately rejecting the order of master-of-counterpoint Bach, due to its association with Vulcan.
Ferengi? 💯 bubble gum pop. They never even bothered with classical music; doesn't sell well.
