My favorite kind of cooking is when you heat & eat! This is a super easy recipe that's a go-to when I'm tired of cooking !

You can substitute the chorizo for chicken too--same process, just shred chicken when throughly cooked. And if you don't have the soup mix, it's an easy one to whip up from scratch too.

To kick us off on Week of Recipes Worthy of the Church Cookbook (you know, the ones you actually want to go down in history for), here's my husband's best !

Hands down, this is the recipe for which I recieved the most compliments. Do I tell them it was my husband who found the recipe, made the list, went to the grocery store, chopped, sauteed, and made the roux? Do I say he's the one who rolls the enchiladas and sprinkles the cheese?

Not a chance! I just smile, say thank you, and keep stuffing my face.

Hey y'all! First, we apologize for being incommunicado for the last few weeks. is sometimes really busy and hectic.

On top of all that, about 2/3 of our last recordings have disappeared somewhere in the clouds and we don't know why.
It has been really discouraging to spend time creating episodes we love, but we can't release.

And we know there are systems that would make recording easier, however they cost money. This podcast is solely for fun, so that's not something we want to shoulder or ask for at this time.

The good news is we believe we have a solution and will (hopefully) be releasing our next episode on Friday and every week after that.

Thank you for your support and sticking with us. You're the egg to our meatloaf--holding us together.
