Celebrity chef Adrianne Calvo is no stranger to bringing maximum flavor to the famously decadent dishes she creates at her namesake restaurant in Miami. True to form, Calvo's tempting Haute Chocolate cocktail is a spice-sweet mixture of cocoa and chile pepper powders and smooth, smoky mezcal that makes it the perfect cocktail for the coziest week of the year.
INGREDIENTS
1/2 cup cocoa powder
1 tablespoon granulated sugar
Pinch of kosher salt
1 teaspoon pure vanilla extract
2 cups whole milk
6 cinnamon sticks
1 whole dried ancho chile pepper pod, split
8 oz bittersweet chocolate chips
5 ounces Senorio Mezcal
Chile powder
Dark chocolate shavings for garnish
DIRECTIONS
In a medium saucepan, stir cocoa with sugar. salt, and vanilla. Stir in milk, two cinnamon sticks, ancho chile, and bittersweet chocolate. Heat over medium heat, stirring constantly, until the chocolate is melted, and the mixture is hot. Gently whisk to completely blend the mixture. Simmer over low heat, whisking occasionally, for about 10 minutes. Strain and discard chile and cinnamon sticks. Return to pot and add mezcal. Heat through. Using a hand blender or a whisk, beat chocolate until foamy, then divide into four glasses. Garnish with chile powder, dark chocolate shavings, and a cinnamon stick. Save immediately.
