The holiday season often means lots of food, which we happily endorse. Now if youโre looking for something healthier to add to your lineup of dishes, something tasty, and something a little different, weโve got you. This episode is our season finale, our fourth Special and features salads from different parts of the continent.
From Tunisia in North Africa, we have Omek Houria, a lovely spicy carrot salad that pairs well with tuna, olives, and eggs.
From South Africa, thereโs Chakalaka, a relish made with peppers, carrots, and baked beans.
From Seychelles of the East African coast is Salade de Palmiste, made with Heart of Palm and onions.
Finally, join us in West Africa where Ghana and Nigeria pretty much share a particular kind of salad. With its medley of vegetables, corned beef, baked beans, boiled eggs, and salad cream, this could easily be a large meal rather than a side.

Jollof rice is a much-loved dish throughout West Africa and in parts of Central Africa, including Cameroon. We have carried our passion for Jollof beyond the African continent and taken it world wide! We are proud of Jollof and will defend its honour to the end. As separate countries, we will fight each other over whose Jollof is the best. In unison, we will fight anyone who messes with #Jollof.
In honour of the upcoming ๐๐จ๐ซ๐ฅ๐ ๐๐จ๐ฅ๐ฅ๐จ๐ ๐๐ข๐๐ ๐๐๐ฒ, we present five spins on this culinary treasure.
๐๐ข๐๐๐ซ๐ข๐๐ง ๐๐จ๐ฅ๐ฅ๐จ๐โ filled with mixed vegetables and an assortment of beef, sausage, and shrimp
๐๐ก๐ข๐๐๐จ๐ฎ๐๐ข๐๐ง๐ง๐ โ the original Senegalese dish that birthed all other types of Jollof. Itโs also eaten in Mauritania, and in The Gambia, it is called Benachin.
๐๐ก๐๐ง๐๐ข๐๐ง ๐๐จ๐ฅ๐ฅ๐จ๐ โ flavour-packed with ginger, garlic, and anise (We did the right thing and used jasmine rice ๐)

Africa in my kitchen: Madagascar - Voanjobory sy Henakisoa and Ranovola
Rice lovers, gather here! We are in Madagascar and rice is big in Madagascar. Our feature dish, Voanjobory sy Henakisoa, is a pork and โbeansyโ mix served over rice.
Voanjobory is a high-protein legume that originated in West Africa. It is also called Bambara nuts and used to make a variety of other dishes across West Africa.
Along with this, we tried Ranovola, a drink made from rice. There are many ways to enjoy โbottom-pot riceโ and Ranovola is certainly one of them.

The country of Liberia has elevated this rather annoying vegetable (yes, we said it) to levels of greatness with a simple fry / steam that includes pork and additional meats as you like. Whatโs more, Liberia is so modest about it, they didnโt even bother to give it a special name. Just mention โcabbageโ to a Liberian and theyโve got you.
