Menu:
SMOKED SALMON PLATTER: smoked salmon, crackers, cucumbers, radishes, cream cheese, capers, olives, lemon, dill, parsley, arugula > Arrange ingredients on top of arugula.
GREEK TOMATO SALAD: 2 grated garlic, 2 parts red wine vinegar to 1 part extra virgin olive oil, 1 tsp oregano, salt, pepper, 5 beef tomatoes, 1/2 cucumber, 1/4 sliced onion, 1/4 cup feta cheese > Add garlic, vinegar, oil, and spices to bowl. Cut tomatoes into wedges and slice cucumber and onion. Add feta and mix well to combine.
SPICY MAPLE BACON: 2 packs bacon, 1/4 cup maple syrup, 1 tsp cayenne, 1 tsp smoked paprika, 1 tsp black pepper, 1 tsp red chili flake > Combine ingredients together and coat bacon. Broil in oven at 400 degrees for 5 minutes on each side.
EGG STUFFED TOMATO: beef tomato, egg, salt, pepper, chive > Cut the bottom of each tomato to create a flat surface, making sure not to cut the entire bottom off. Cut the top lid off each tomato and remove the core. Crack an egg into each tomato and season with salt, pepper and chive. Bake in oven at 400 degrees for 10 minutes or until the eggs have cooked to your liking.
SHEET PAN PANCAKES: 2 cups flour, 2 tbsp baking soda, 2 tbsp sugar, 1 tsp salt, 2 cups milk, 2 eggs, 2 sliced strawberries > Sift dry ingredients together in bowl before adding wet ingredients. Butter a baking tray and pour batter into tray. Add strawberries on top and bake in oven at 400 degrees for 15-20 minutes or until the batter is cooked and fluffy. Serve with butter and maple syrup on the side.

INGREDIENTS -
1.5 cups Flour
1 tsp Salt
1/2 tsp Baking Soda or 1.5 tsp Baking Powder
3/4 cup Brown Sugar
6 tbsp Butter
1 large beaten Egg
1 tsp Vanilla Extract
3 mashed ripe Bananas
2 sliced ripe Bananas
4 tbsp Maple Syrup
1 tsp Cinnamon
1/4 cup chopped Walnuts
INSTRUCTIONS -
1 Preheat oven to 350 degrees Fahrenheit.
2 Melt the butter and set aside.
3 Sift the dry ingredients: flour, salt and baking soda (or baking powder) together.
4 Beat the brown sugar, butter and vanilla extract together in a separate bowl until the mixture becomes fluffy.
5 Add the beaten egg and mashed banana to the wet mixture.
6 Slowly add the dry ingredients to the wet ingredients, incorporating them together in thirds.
7 Add sliced bananas, maple syrup, cinnamon and walnuts on top of the loaf or each muffin, depending on your baking dish.
8 Place in the oven on the top rack for 30-35 minutes or until the banana bread is fully cooked through.
9 Serve warm or room temperature and enjoy!

CRISPY SALMON PASTA with LEMON GARLIC BROTH: a weeknight favorite in our household πππ§ Details below...
INGREDIENTS -
Pasta of choice
1 cup Broccoli
2 cups Chicken or Seafood Broth
6 tbsp Butter
1/4 sliced Onion
5 sliced cloves of Garlic
1/2 juice of a Lemon
2 frozen Salmon filets
Salt
Pepper
INSTRUCTIONS -
1. Bring water up to a boil with a small handful of salt. Cook pasta in boiling water according to package instructions, adding the broccoli during the last minute. Drain pasta and broccoli and set to the side.
2. Add broth, butter, onion, garlic, lemon, salmon filets, salt and pepper to your air fryer - our favorite is from @gourmia. Cook at 400 degrees for 25-30 minutes, separating the salmon filets if they are stuck together halfway into cooking.
3. Once salmon is cooked to your liking (fully cooked through, moist throughout, crispy skin), serve on top of pasta and broccoli with a generous amount of broth.
4. Enjoy!

2 cups Milk
Salt and Pepper
1 tube pre-made Polenta
1 cup shredded Cheddar Cheese
8 tbsp Butter
1 lb raw Shrimp
2 tsp Old Bay Seasoning
2 tsp Cajun Seasoning
1/4 cup Flour
2 Andouille or Kielbasa Sausage
1 Yellow Onion
1 Celery Stalk
1 Bell Pepper
2 Garlic Cloves
1 bunch Scallions
1 Lemon
INSTRUCTIONS -
1. For the "grits": bring the milk, 2 cups broth, and 1 tbsp of butter up to a boil and then add the polenta, whisking continuously. Finish with cheese.
2. Making sure your shrimp is thawed, peeled and deveined, add to a large bowl and toss with seasonings.
3. Dice the vegetables, mince the garlic, and cube the sausage.
4. Melt 6 tbsp of butter over medium high heat and cook shrimp until bright pink on both sides, about 1-2 minutes. Once cooked, remove from the skillet and set aside.
5. Add the sausage and vegetables to the same skillet you cooked the shrimp in. Cook for about 3 minutes until the vegetables turn translucent and the sausage starts to brown.
6. Add the garlic and cook for an additional minute.
7. Add 2 tbsp of flour and stir for 5 minutes, then add the remaining 2 tbsp and stir for 5 more minutes.
8. Slowly add the remaining chicken broth while stirring, allowing the mixture to come to a boil.
9. Squeeze in the juice from half a lemon. Reduce the heat to medium low and let simmer for 10-15 minutes.
10. Slice the scallions and the rest of the lemon for garnish.
11. Serve the shrimp over the "grits" with more cheese and the garnishes.

2 Andouille or Kielbasa Sausage
1 Yellow Onion
1 Celery Stalk
1 Bell Pepper
2 Garlic Cloves
1 bunch Scallions
1 Lemon
INSTRUCTIONS -
1. For the βgritsβ: bring the milk, 2 cups broth, and 1 tbsp of butter up to a boil and then add the polenta, whisking continuously. Finish with cheese.
2. Making sure your shrimp is thawed, peeled and deveined, add to a large bowl and toss with seasonings.
3. Dice the vegetables, mince the garlic, and cube the sausage.
4. Melt 6 tbsp of butter over medium high heat and cook shrimp until bright pink on both sides, about 1-2 minutes. Once cooked, remove from the skillet and set aside.
5. Add the sausage and vegetables to the same skillet you cooked the shrimp in. Cook for about 3 minutes until the vegetables turn translucent and the sausage starts to brown.
6. Add the garlic and cook for an additional minute.
7. Add 2 tbsp of flour and stir for 5 minutes, then add the remaining 2 tbsp and stir for 5 more minutes.
8. Slowly add the remaining chicken broth while stirring, allowing the mixture to come to a boil.
9. Squeeze in the juice from half a lemon. Reduce the heat to medium low and let simmer for 10-15 minutes.
10. Slice the scallions and the rest of the lemon for garnish.
11. Serve the shrimp over the βgritsβ with more cheese and the garnishes.

SUPERFOOD TRUFFLES π«π₯π―
1. Combine 1/2 cup almond flour with 3 heaping tablespoons of peanut butter, 2 tbsp honey and 2 tbsp cocoa powder well in a mixing bowl.
2. Once well combined, roll the mixture into small balls in the size of your choosing - I prefer mine to be around 1 cm.
3. Once formed, roll balls into toppings of choice - I like using cocoa nibs, hemp hearts, shredded coconut, matcha powder and cocoa powder.
4. Serve with an optional side of hot tea and enjoy!

BEEF BOURGUIGNON (French beef & wine stew) π₯©π·
1. Preheat oven to 350 degrees Faranheit.
2. SautΓ© 3-4 strips of bacon in pan - our favorite is the @lecreuset 2.5 qt. signature French oven - with 1 tbsp avocado oil on medium heat or until the bacon fat has rendered out and the bacon pieces are crispy.
3. Remove bacon from pan, leaving the fat.
4. Add seasoned steak or chuck pieces - seasoned with salt, pepper & garlic powder - to hot bacon fat.
5. Sear beef on all sides or until a dark brown crust has formed.
6. Remove beef from pan, leaving the fat once again.
7. Add largely diced potatoes, onions & carrots to pan with 1 tbsp tomato paste, minced garlic cloves to taste (this is not traditional but I love adding it), and 2 sprigs of fresh time to pan and sautΓ© for a couple minutes or until the vegetables start to soften. *Add more oil if necessary.
8. Add the cooked bacon and beef back to the pan with 3 cups of red wine and enough beef broth to cover the ingredients. *Traditional but we omit: add mushrooms sautΓ©ed in butter and garlic here.
9. Let the sauce come up to a simmer and add 1 sprig of fresh thyme on the top.
10. Cover the pan and place in oven for 2-3 hours, or until the meat is fall apart tender.
11. Add a beurre maniΓ© - equal parts butter and flour to thicken the sauce.
11. Serve beef on top of buttered egg noodles or mashed potatoes and garnish with freshly chopped parsley.

CAESAR SALAD π₯
1. Dressing: add 1 grated garlic clove, grated parmesan cheese to taste, at least 1 teaspoon of anchovy paste, juice of 1/2 lemon, 1 tablespoon worchestershire sauce, 1 tablespoon extra virgin olive oil, 1 teaspoon Dijon mustard, 2-3 tablespoons mayo, salt & pepper to taste.
2. Cut romaine lettuce into bite size pieces.
3. Toss romaine with dressing well in mixing bowl.
4. Optional garnishes: poached shrimp, parmesan cheese shavings, freshly cracked black pepper, crostini
