Off to process this glorious bundle of lemons I've been blessed with. I'll be making lemon curd to can so it will be shelf stable for a few months. Also, will be dehydrating the peels to use in teas and seasonings. I'd like to also make some lemon bread and of course fresh lemonade but I may have to harvest more lemons AND energy to accomplish all of that. It all sure sounds like a good idea at this moment. ๐Ÿ˜†

This popped up on my memories today. So, I wanted to share this cake I was commissioned to make 15 years ago with y'all. I used to be pretty good at specialty cake making and carving and sugar art. This one was so so very fun to make. Sometimes I very much miss being able to create cakes like this. Details below of what it was made of. Hope everyone has had a wonderful weekend. Bottle is Carved yellow cake with chocolate truffle filling and chocolate icing covered in fondant. Hand painted fondant bottle label. Cigarette is rice krispy treat covered in fondant. Smoke is pulled sugar.

If you or a family member has been affected or know of any local organizing to raise funds or supplies, please share so that I can share, and let us know ways that we can help. I'd rather put efforts into more local/individual fundraising as I feel that more of the resources actually get to the victims as opposed to larger national associations.

Crawfish, Shrimp, or Seafood Bread & side salad recipe

Crawfish/Shrimp Bread

1 loaf french bread
1 lb crawfish tails (drained)
1 onion chopped
1 bunch green onions chopped
4 cloves garlic minced
16 oz cream cheese
โ…“ cup mayo
2 tsp dijon or Creole mustard
1 tsp Louisiana hot sauce
ยฝ cup shredded parmesan plus ยผ cup for topping the bread
1 cup shredded Colby Jack plus ยผ cup (or other melty cheese)
2 tbsp butter
Cajun all purpose seasoning

In a skillet over medium heat, add butter and onions. Sautee until tender. Add green onions and garlic. Cook for 2 minutes. Add crawfish tails and desired amount of seasoning. Stir well. Turn off heat and stir in cream cheese until melted and well combined.

Pour mixture into a bowl. Stir in mayo, mustard, ยฝ cup parmesan, 1 cup colby jack, and hot sauce until well combined.

Slice french bread length wise. Either scoop out some of the soft bread in the middle or mash down.

If using a cheaper french bread with a softer crust, place on baking sheet and broil at 500 degrees on both sides for 3 to 4 minutes until crusty. If using a quality french bread that has the traditional crusty outside, you may skip this step if desired.

Spread half of the crawfish mixture onto each half of the bread. Bake at 350 degrees for 15 minutes. Remove from oven and top with remaining cheese. Broil at 500 degrees until cheese is golden.

*May substitute with a salad size or chopped larger size shrimp if unable to obtain crawfish meat.*

*If using crawfish or shrimp left over from a boil that have been properly seasoned, you will need less seasoning than if you are using packaged tails or unseasoned shrimp.*

Before I show how I prepare them, I thought it might be safer to share how I identify wild chanterelle mushrooms. Absolutely ALWAYS do your own research and NEVER eat a wild mushroom unless 100% sure it's safe. Just a few things that help ME identify a chanterelle.

-beautiful golden sometime orangish caps with a slighty paler but same color stem
-caps do not have a slimy texture. More of a matte finish
-false gills that do not easily flake off like true gills (gills meaning the raised lines beneath the cap)
-the false gills will vein out and run together usually close to the edges of the cap and the veining is usually even more prevalent on older larger mushrooms
-do not grow in big clusters together. Can be found growing close together but always from a separate stem
-when split, the inside of the stem is white, not solid yellow or orange like some look alikes
-when split, the meat of the mushroom will sort of separate reminiscent of string cheese
-will not smell bad. Nice mushroom smell, even an apricot smell to them
-if using the nibble and spit test (not recommending it) it will not have a bitter or peppery taste. Will have a nutty mushroom flavor.

Ok, I think I covered all of the tell tale signs that I use. Again, I am in no way an expert on the matter. Always do your own research and happy foraging if that's your cup of tea. Next video, I'll show you how I clean and prepare them.
