SERVICE INDUSTRY SPOTLIGHT AWARD WINNER ROGER BARRERA

This month’s Service Industry Spotlight Award winner is Roger Barrera. Roger has been cooking at Brewster Street Icehouse since 2006 and has over 25 years in the service industry. He says that cooking has always been a part of his life. He picked the art up during his childhood. Roger’s grandparents were avid cooks, and their house was a hub where family dropped by anytime during the day to enjoy the delicious products of their kitchen.

“Food is about family,” said Roger. “Their door was open to anyone anytime.”

Roger continues to cook family recipes that have been handed down through generations. He said his first truly successful dish was grilled shrimp and Spanish rice. “That was the moment I finally got it,” said Roger, speaking of understanding the art of cooking even simple foods. Today, Roger’s favorite thing to cook is a “perfect steak.” His secret? Roger uses McCormick black-label steak seasoning and cooks over an open flame with mesquite wood to impart a unique flavor. “If everyone loves it, don’t change it,” Roger continued, lauding McCormick’s black label.

Roger’s favorite dish to prepare (and) at Brewster Street Icehouse Downtown is their signature Chicken Street Tacos. Still, he admits to jazzing them up with extra cumin and fajita seasoning when he prepares them for himself.

Roger thrives as a cook, despite the situation often being high-pressure. “You have to believe in yourself and have strong willpower,” Roger explained. “Restaurant work can be really tough, so you have to stay focused and strong-minded to succeed. It’s all about loving what you do.”
Roger’s recipe for success includes a lesson he learned early in his career. “Try not to quit,” advised Roger. “Take it one day at a time, and results will happen.”

During his 16-plus year tenure, Roger has seen many great bands come and go at Brewster Street but says his favorite so far was Cyprus Hill. “I like the old school,” Roger explained.

Roger attributes much of his success to his close-knit family and friends. “I want to thank my family and friends for believing in me and the support along the way,” Roger wrote in a letter of gratitude.

“Thank you to my son Roman for being in my life until this day, and I am proud of the man you have become. A shout out to my daughter-in-law Celisa for bringing a beautiful angel into this world. I love you, Avilena; you are a true blessing to us.
I want to thank my mom Esperanza and Robert for never giving up on me when life got rough.

I also want to shout out to someone special who has put up with my craziness and still believes in me. Thank you, Christie Marshall (and my little sunshine “Elvira”), for never giving up on me. Thank you, Christie, for everything you have done and still do.

All of you in my life have made my world a beautiful place, and I cherish it every day. I truly love you all, and thank you with all my heart. I wouldn’t change anything. You are a true blessing in my life, and I couldn’t imagine it without you.”

Roger also thanked his Brewster Street Ice house team, “A major shout out to my Brew Krew family. Thank you for everything you do and the hard work, dedication, and loyalty along the way. I love you guys to the moon and back.”

“Most of all, I would like to thank my Lord and Savior for the strength and guidance He has given me to be where I need to be,” Roger continued.

“Thank you, Brewster Street, for the opportunity to grow and share my experience in the restaurant industry. Brew Krew for life,” he finished.

Roger’s strong family ties include his beloved dog Demus, a four-year-old pit bull and beagle mix (Roger calls him a peagle), and several backyard cats.

“Everybody has their own story,” Roger said as our interview concluded, reflecting on his long journey in the service industry. “Sometimes it’s worth a listen.”

And the unlikely ways the species is surviving

JANUARY 11, 2023 If you traverse the waters of the Aransas National Wildlife Refuge between November and March, you may hear a strange call echoing across the waters.

“Whooo-ooop! Whooo-ooop!” screech the irascible creatures, one of the few of their kind remaining in the world.

The raucous call of the whooping crane (grus americana) can be heard from up to two and a half miles away and is so distinctive that the species was named for it.



At nearly five feet tall, whooping cranes are the tallest birds in North America. They have a wingspan of seven and a half feet. Whooping cranes are white with rust-colored patches on top and back of head, lack feathers on both sides of the head, yellow eyes, and long, black legs and bills. Their primary wing feathers are black but are visible only in flight. They are one of only two crane species (along with the sandhill crane) native to the continent.

But the giant bird (currently the fifth largest bird species) isn’t known only for its call or size. The whooping crane’s most extraordinary claim to fame may belong not to the bird but to the science that might save the creature from extinction.

DECEMBER 14, 2022 Eight white gazebos stand like silent sentinels on the seawall overlooking Corpus Christi Bay. While it may seem as though they have been there forever (an extension of the seawall as natural as the steps), the Miradores del Mar (or Overlooks of the Sea) are a relatively new addition to local architecture, completed in 1991.

Today, tourists and locals alike enjoy sitting inside the Miradores on shady benches watching the boats sail, and the waves wash. The concrete structures are decorated yearly at Christmas and help light up the seawall with holiday cheer. The Miradores are so lovely that many couples have chosen them as venues for small weddings.

The story behind this incredible gift to the City of Corpus Christi is, however, one that begins with an unimaginable tragedy.

Splendiferous will be featured at New Year's Eve bash on Saturday, December 31st.

MEET SPLENDIFEROUS
A musical journey and an unusual name

Splendiferous is one of Corpus Chrisit’s most popular local bands. Perhaps it’s their signature mix of top hits from multiple decades that keeps fans coming back for more. Maybe it’s their horn section which features both trumpet and trombone, or the bass and drums (including a full set of toms) that cause outbreaks of dancing? And then there’s frontwoman Kristine Tomlinson’s powerful vocals which ebb and flow playfully with the masterful guitar playing of Thomas McLelland.

Each Splendiferous set is an exercise in artistry, as songs are arranged in an almost operatic order -- compelling the absolute maximum emotional response from the crowds.

Well here we are quickly approaching the first day of winter in South Texas but it has felt much more like summer over the past few weeks. Light winds and very moderate temperatures with foggy mornings have created some great conditions to explore and cover a lot of water which makes for some great opportunities. We have caught and seen many big fish cruising the ultra shallows and had some very exciting days sight casting in crystal clear water. It’s that time of year when the fish understand that winter is coming and they do venture onto the shallowest flats and feed quite vigorously with the intention of putting on some weight to make it through the sparse winter months. Normally I would expect to see the redfish gathering in schools but they have been singled out with individuals slowly feeding in their own private sand holes. The great conditions have made it easy to approach those fish and with a good cast they have been very likely to attack. December is always one of my favorite months to be out there and this year the late Fall fishing has not disappointed.

DECEMBER 14, 2022 Merry Christmas ya filthy animals!
I’m not sure how many of ya’ll know that Abi (our brilliant and hilarious editor) is my best friend, but she has been for a decade. She was my manager at a local restaurant and talked me down from several panic attacks. A year or so later, I accepted a friend request from an odd name that had a picture of a Port-a-potty as the profile picture and agreed to get drinks. I had no idea who it was. It was Abi who told me how cute my shirt was, and then scolded me for agreeing to meet at the bar for drinks with someone who I thought was a stranger.

Our friendship was born.

Since then, her family has adopted me as their own and she has become my big sister. Over the years we have started many traditions. Christmas is my favorite. At some point in December, we always drink enough adult beverages to convince ourselves that making cookies is an excellent idea. The first year we made hundreds -- I’m not exaggerating -- hundreds of sugar cookies. We spent all day painstakingly cutting them out, baking, and decorating them.

I feel like a lot of art is redundant and especially in a niche area where themed art is in demand. In the learned language of picture-making, there should always be room for spontaneity. Art should convey your feelings -- not be a conveyor belt of mass destruction; I mean mass production.

Yes, I have probably painted 127 sea turtles because, yes, I can, and yes it sells, and mamma has bills to pay. When I make art, real art, I think of it as a one for you, two for me kind of situation. Make one painting that is gonna sell fast and make two that I love and will take forever to sell.

They don’t say “starving artist” for no reason.

WEIRD HOLIDAY TRADITIONS FROM AROUND THE WORLD

1: Mari Lwyd- South Wales
Kind of like traditional caroling seen here in the states, with a twist. Mari Lwyd is a horse skull, often with lights for eyes and streamers for the mane, that is draped with a white cloth and on a stick that the person under the sheet uses to control the head, often snapping its jaw at people. They are accompanied by wassailers, sometimes dressed as Punch and Judy, and go house to house singing traditional Welsh songs or engaging in pwnco: an exchange of rude rhymes with the person who lives there. If the Mari and her gang win the standoff, the household is said to have good luck for the year. The Mari is known to be mischievous and will try to steal things and chase people she likes. They also eat good food and drink whiskey. The next day should be a national hangover day.

SERVICE INDUSTRY SPOTLIGHT WINNER BREANNE BEAL

December’s Service Industry Spotlight Award winner is Brewster Street Icehouse General Manager Breanne Beal. We caught up with Breanne (which wasn’t easy because this girl is always running) for an interview.

Edge: How long have you been working in the service industry? Where did you start out and in what position?

Beal: I have been working in the service industry for 10 years. My first job was at a local bar and grill back in Baytown, TX called Pipeline, I was a server there. Then my next job was as a bartender/cart girl at a golf course and that was a super fun summer job (highly recommend!).

E: What are your favorite aspects of working in the service industry?

B: A couple of my favorite aspects of working in the service industry are the challenges that it brings. Your day is never going to be the same, there will always be new problems to adjust to and figure out. Another one would be is that there are ALWAYS different faces and names to meet. I cannot even begin to tell you how many different people I have met and stories I have heard from all over the world from working in the hospitality/service industry. I even got to wait on GEORGE STRAIT once!

E: You recently switched positions from party planning to being a general manager at BSI. How has your life changed?

B: Good question.. When I was the event manager I used to think I was NEVER home, but I am truly NEVER home now. Lol. And even when I am home I feel like I am missing something and should be at work. I get up get dressed, go to work, come home, sleep and repeat. With a few cups of coffee here and there. I have forced myself to develop a FOMO for work, but I wouldn’t trade it for the world.

E: What’s the secret to being a good leader?

B: I believe the secret to being a good leader is being able to teach. There are a lot of things that I have learned over the past few years and being able to give that knowledge to my employees, coworkers and even friends, to help better their lives and to get them directed towards their goal(s) is something I will forever be grateful for because the leaders in my life have also given that to me. Which, I know for a fact, has helped me get to where I am today.

E: What’s the secret to being a good employee?

B: The secret to being a good employee is dedication. There are a lot of long and tiring days, and times that you just want to throw in the towel and be done, but showing perseverance through the hard days, showing up, getting the job done, or more than just the basics of the job done goes a long way. And even though, sometimes as an employee, it might seem like the dedication goes unnoticed, but I promise it doesn’t.

E: I’m sure that over your tenure at BSI you’ve seen many great shows. Which was your favorite?

B: My favorite show has been our last Pecos and the Rooftops show in November. I remember seeing them here last year when the Icehouse was hardly full. This year they sold out, everyone was having a great time and the vibe in the Icehouse when “This Damn Song” was played was unreal. Also, it is always such a great feeling to see the band grow on our stage from show to show.

E: Who would be your dream band to perform at BSI and why?

B: Tough one. I am going to have to go with Cross Canadian Ragweed (And they have to sing Fightin’ For.) I didn’t really get into their music until they separated, but I feel like if they came back around it would be SUCH a great show!

E: How do you build a good party? Why is BSI a good location for a party? What services do you provide that set you above your competitors.

B: To build a good party there requires a lot of patience and flexibility. Your RSVP’s are never going to be timely and the weather will almost always play a factor in your event (especially in Corpus). BUT as long as there is cake and a few drinks, I would say that really is the key to having a great party. Oh, and a good DJ (or just a good playlist).

E: What’s your favorite food on the menu? Do you like it prepared a special way?

B: I am not a picky person, so I normally flip flop on my lunches and dinners here at Brew. I would say I normally gravitate to our Chop Steak, with gravy on the side.

E: What was the most useful thing you learned in school? What lesson helps you every day?

B: Looking back, and just realizing this now, I think the most useful thing I learned in school was working in teams. I hated team work back in school, but it actually is the one thing that helps you adapt to working with others in a workplace setting. A lesson that helps me every day came from a General Manager at Olive Garden. One morning during a pre-shift meeting, he was telling us about how important it is to make a connection with your guests. He explained to us that you do not always know what they have going on in their life (we worked close to a few hospitals) and how meaningful a conversation could be for someone who might not be having the best day. Simply by asking how their day is going, what plans they have for the holidays, even just a smile or a joke about the weather can go a long way for someone who just needs a moment out of their day. I have had this happen to me a handful of times and seeing how it can turn someone’s day around, can make a server’s job feel more meaningful than just making another transaction.

E: If you could travel anywhere in the world, where would it be and why?

B: If I could travel anywhere in the world I would want to go to Rio de Janeiro, but specifically during Carnival. I love to travel, but I think completely immersing yourself in different cultures, especially such a well-known festival would be a once in a lifetime experience.

E: Favorite cocktail at BSI?

B: Hmmm. I love our Summer Shandys. It’s Deep Eddy Lemon, Karbach Love Street and a splash of Lemonade. Perfect for the summer!

E: Any family members or friends you’d like to give a shout out to?

B: Yes! My mom and dad, they have been my biggest support with anything I have wanted to do in my life, and they have helped me so out so much. I wouldn’t know where I would be without them and their guidance. Also, my friends. They keep me sane.

E: What’s the worst trouble you ever got into (or the funniest)?

B: I wouldn’t consider this as trouble, but when I am out and about with friends I ALMOST ALWAYS end up falling and hurting myself. It never fails. I feel like we have all made a game about how long into the day or night it is going to take me to fall.
