Kadai Paneer Capsicum - (Indian cottage cheese) and bell peppers cooked in a spicy masala! Enjoy it with rice, roti, naan or paratha!
Ingredients:
Oil - 3-4 tbsp
Jeera - 1 tspn
Coriander Seed - 1 tspn
Ginger - 2 inch chopped finely
Garlic - 5-6 nos chopped finely
Onion - 1 no medium chopped finely
Tomato - 1 no small chopped finely
Thai Green Chili - 3 no slit lengthwise
Red Chili Powder - 1 tspn
Turmeric powder - a pinch
Coriander Powder - 1 tspn
Water - 1 cup
To sauté vegetables:
Oil - 3 tbsp
Onion - 1 no medium chopped largely
Tomato - 1 no small chopped largely
Capsicum - 1 no small chopped largely
Panneer - 200gm / 1 cup
Method:
1. Add oil to a kadai, add Jeera and Coriander Seed
2. Add ginger garlic, onion and green chili. Sauté well
3. Add tomato and sauté well.
4. Add red chili powder, turmeric powder and coriander powder. Mix well and add water
5. Close lid and cook for 5 minutes
6. In another pan, add oil and shallow fry capsicum, onions, and panner for 2 minutes
7. Lastly, add tomatoes and cook for 1 minute. Don’t overcook the tomato as it will turn mushy.
8. Add sautéed panner and vegetables to the gravy. Close lid and cook for another 5 minutes.
9. Kadai Panneer Capsicum ready to serve with hot rice / roti!
