山本さん
相模湾と箱根の山に囲まれた小田原に、山本良憲さんが営むMECIMO(メシモ)というレストランがあります。メシモとは、フランス語で海、空、山を意味するMer(メ)、Ciel(シ)、Montagne(モ)の頭文字を合わせた、山本さんの造語。メシモは、山本さんとビジネスパートナーである葛窪拓真さんが2017年から営んでいる、地元のオーガニック食材を使ったフレンチレストランです。
小田原で生まれ育った山本さんは、サーフィンを通じて、海とのつながりを育んでいきました。若い頃からレストランで働いていた山本さんは、国内外のサーフィンの旅費を得る傍ら、食とワインへの情熱を高めていきます。
25歳のとき、山本さんは自然のワイン造りを学ぶため、フランスへの新しい旅に乗り出すことに決めます。2年間、フランスの自然ワイナリーで働く中で、地元のコミュニティとのつながりを持ち、大切さに気づかされました。
日本に帰国後、山本さんは東京の一流レストランで働き、3年後小田原に戻り、メシモをオープンしました。これまで培ってきた地域とのつながり、そして国際的な知識をブレンドした高級料理のカタチを追求していきます。
小田原の職人さんたちのこだわりと、地元の農園から生まれるストーリーが、メシモの一皿一皿には詰まっています。

Yamamoto san
Born and raised in Odawara, Yamamoto-san has grown a natural attachment to the sea while working in local restaurants and surfing in the waves. After turning 25, he decided to embark on a new journey, in France to study natural wine by working at a winery for two years, building relationships with the local community. Upon returning to Japan, he returned to Odawara and opened Mecimo, blending his life-long relationships with locality with an international knowledge of fine dining.
“Mer” as the sea, “Ciel” as the sky, “Montagne” as the mountain, “Me” “ci” “mo” marks his restaurant in Odawara between Sagami Bay and the mountains around Hakone. Owned by Yamamoto-san and his business partner/ chef Kuzukubo-san since 2017, Mecimo is a French-style restaurant specializing in local, organic ingredients.
At Mecimo, he brings farms’ presence to the table, together with the fruits of craftsmanship of Odawara. How does following his instinct for locality and community reflect on running a successful business?
