Fresh not frozen.
It’s no secret, January isn’t a particularly busy month for hospitality. Why am I pointing this out? We have had a number of complaints recently about running out of some dishes on the menu and I would like to tell you why.
Simple, we buy less from our suppliers based on what we think we are going to serve. If for example we think we will serve 20 of our fresh fish in a day but an unexpected amount of you decide you fancy haddock and we serve 40 portions, we may not have enough to last until our next delivery.
What could we do? We could buy enough for 40 portions per day and put the 20 we don’t sell in the bin. Firstly, this is a huge waste of money, secondly this isn’t at all environmentally friendly even though we do compost our waste food. Those fish have been caught using fuel, landed, processed and delivered to us all using resources.
What else could we do? Well, we could freeze it and the quality will be lost. You’ve told us that quality is key and this is why you come to Threaplands. I’m using fish for an example but the same applies to loads across our menu. We use Stornaway black pudding, fish from Sutherlands of Portsoy, burgers and roast beef from AJ Jamieson Fochabers, fresh veg from Speyfruit Elgin, fresh eggs from Mill of Tynet Farm, the list goes on.
Please be patient as we work to ensure quality, reduce waste and keep costs under control. We apologise some dishes sell out but surely this is actually a positive that we don’t just defrost another meal from the freezer? We have loads of options on our menus and nobody will leave hungry, if your favourite isn’t available, try something different, it might be your new favourite ❤️
