I love that you can go at your own pace, and there's also a growing community and ongoing support for the questions and techniques that you can learn as you get more seasoned in baking. I've personally learned that working with sourdough starter is a little different than regular cooking and baking, and while it can be a bit challenging at times, the reward is some great tasting homemade food!

How a new nonprofit is keeping Type 1 diabetic kids safer at school.
We all want our kids to feel included, and to not ever feel like they’re alone in their struggles. Nico’s story shows how type 1 diabetic kids need a little extra help to feel safe when they’re at school.
Type 1 diabetes is not controllable by diet. It’s not about eating less sugar, or no sugar. Type 1 diabetes is what happens when a person’s pancreas just stops making insulin, so it becomes harder to regulate the body’s glucose levels, and that happens with insulin by injection or with an insulin pump.
When a type 1 diabetic kid has an emergency at school it can be life or death, and most of the schools out there are un equipped and under educated. Listen to Nico’s story to hear how he’s trying to change that. The link is in the comments.
Today I had the privilege to sitting down with Nicholas Leitch from Diabetic Wellness Initiative who is this year’s winner of the Southwest Region Eagle Scout Project of the year, and was 1 of 8 national finalists for Eagle Scout Project of the year.
Nico is a Type 1 diabetic - diagnosed at age 10- and we talked about his diagnosis and how that became the inspiration behind his project.
