Meethi Eid ki meethi batay!!!
Eid and meethai(sweet) goes saath saath...
Are you a garam ghulab jamun person or room temperature ???
I’m both😂😂

The only ghulab jamun recipe you need......

For the sugar syrup......
2 cups water
1 cup sugar
4-6 cardamom

Mix all and bring to boil.. let it boil for 5-8 mins....
Note.... syrup should not be too thick nor should be too thin..

For ghulab jamun
Milk powder......1 cup
Flour....... 2Tbs
Cream.......3Tbs
Egg.........1
Baking powder...... 1 1/4tsp
Oil...... 1Tbs

Take a plastic bowl and mix egg, cream and oil, in another bowl mix milk powder, flour and baking powder....
Then mix both together to form a soft dough.... mixture will be a bit sticky...
Put it in the freezer for 5 mins only then mix ag*in by hand
Now put a little oil on your hands and make shapes. Make small balls ( smaller then the size you atchually want)

Fry then in warm oil keep turning your ghulab jamun to ensure even color....

When they turn golden evenly, then remove and add to the hot syrup. The syrup has to be hot and not boiling hot otherwise the jamuns may crack. If the syrup is not hot, then also the jamuns will not absorb the syrup.
Soak them for 20 mins....

I bet when you try this you will forget about all other chatnies!!!

This is very popular in south India and mainly eaten with dosa but I love this with almost anything....
Try it with just papadum.. it’s yummm

All you need is
Fresh coconut....1 cup
Coriander ..... 1/2 cup
Green chilli....2-3
Garlic cloves.....1-2
Salt

For tarka you need
Oil —1Tbsp
Mustard seeds...1/4 tsp
Curry leaves...6-7
Whole red chilli..

Grind all ingredients and do tarka on top ... easy peesy!!!!

As for myself I have made these kebabs...
A very good vegetarian option and trust me you won’t stop at one...

Here is the recipe ...

*Channa Daal (boiled)...1 cup
*Potatto (boiled)...1 cup
*chicken (boiled)... 1|2cup (optional, not necessary)
*whole coriander (roasted) ...2Tbsp
*whole cumin (roasted ) 2Tbsp
*Garam masala... 1tsp
*Black pepper ...1tsp
*Red chilli crushed ..1/2 tsp
*green chilli finally chopped ...1-2 tsp
*onion Chopped 1 medium
*spring onion chopped 2-3
*salt .. to taste
*Roasted gram flour ..1 Tbsp
*coriander and mint (chopped) ..half cup

Dry roast cumin and whole coriander and coarsely grind them in Mortar and pestle

Mix everything and make kebabs...

Shallow fry in oil and enjoy..

As promised sharing today’s the easiest teatime snack and the yummiest☺️

Here is the recipe ...
1 cup flour
1 cup oats
1/4 tsp baking soda
1/4 tsp salt
1/2 cup brown sugar
1/2 cup softened unsalted butter
Jam of your choice

Mix together flour, oats, baking soda, salt and sugar. Add the butter and with fingertips work it into the mixture till it is all like soft breadcrumbs.
Put 2 cups of the mixture into a foiled, buttered tin and press it in. Then spread a generous amount of jam on it but leave an inch all round so it can spread when hot. Crumble the rest of the oat mixture on top. Then bake at 175 f for about 35/40 mins xx

So easy peasy .....

Here is my recipe

Paneer on skewers (Oven, Bbq, airfryed , tawa)

Fresh paneer
1 Onion, medium sized
Pepper red or green

1/2 cup Greek yogurt
1 tbsp Ginger-garlic paste
1 tsp Lemon juice
1/4 tsp Black pepper, powder
1/2 tsp Chaat masala powder
1 tsp Garam masala, powder
1 Salt
1/4 tsp Turmeric, powder
1 tsp Red chilli
1tsp roasted cumin
1tsp roasted and crushed coriander
2Tbsp gram flour

1 tbsp Mustard oil

Just merinate paneer with above ingredients and grill it...

And as for myself!!!
You all wanted something really easy!!!
So I’m sharing cinnamon twist ....
They are so easy and looks super impressive..

All you need...
Puff pastry sheet...
Egg 1 beaten
Cinnamon 1Tbsp
Brown or caster sugar 2Tbsp

Just brush the puff pastry with egg wash sprinkle sugar and cinnamon on top.
Fold the pastry in half..
Cut finger long rectangles..
Twist them
Egg wash ag*in and sprinkle some sugar
Bake at 180’ for 10-15 mins...
Let it cool completely and enjoy

Other filling suggestions
🧀 Parmesan cheese and Italian seasoning
🍓Raspberry conserve and choclate
🌰Nutella
🍩lotus biscoff
Basically anything 🙂

Wellcome to the third episode of Chit chat over chai, hosted by myself and Fatima .dhaaba

And as for myself!!!
I’m sharing a very basic tea cake recipe.. plz have a look at my stories where I’ve explained everything ...

The method that I have shared today is effortlessly simple & absolutely ancient.
You start with a basic sponge recipe (which is always the weight of an egg in flour, butter & sugar, doubled, tripled etc. depending how big you want your cake) and then drizzle it in lemon heaven isn’t it easy...
Cake:
I’ve used
2 eggs 100g
self raising flour 100g
caster sugar 100g
unsalted butter (room temp) 100g
Zest of 1 lemon

Drizzle:
Juice of 1 lemons (the ones you zested)
Water 2Tbsp
200g powdered sugar
Grease a bread tin (about 24 x 10.4) & pre-heat your oven to 180C/350F.
Cream together your cake ingredients until you’re left with a nice smooth cake batter. Pour into your pan & bake for about 30-35mins. While you’re waiting, mix together your icing sugar & lemon juice until totally smooth, pop it to one side. After 30mins check the cake by inserting a skewer into the middle, if it comes out clean it’s done. If not, give it a few mins more. When it’s ready use your skewer to poke holes all over the cake, all the way down to the bottom. Pour over your lemon glaze…
The glaze is optional but I highly Recomend it...

I personally use less sugar...

The only waiting here is the baking time but you can always make tea in the mean time 😀

—Betty Crocker choclate buttercream Icing ...2Tbsp
( if you do t want to use icing you can use
Coconut oil....2Tbsp
Honey or maple syrup..,,2Tbsp)
—3/4 cup....oats
—-1/2 cup mixed nuts( I’ve used almonds, pumpkin seeds, pistachio, raisens)
—-choclate chips..optional

Mix everything up.. shape a flat cookie with the help of cookie cutter,
Bake At 180’c for 8-10 mins
Let the cookies cool compleatly befor removing them from the baking sheet..

☕️ Tea time is my most favorite time of the day. I look forward to this time and specially if I’m baking something this makes it even more special.
Growing up, loving with your grandparents makes your house a focal point, which means all your family, your extended family, friends visiting your city or family members visiting from abroad have to come and see your grand parents which means food, tea, dinner parties all the time....
I remember my grandmother always had goodies on a trolly on the side of her room. Which used to be full with jars and those famous English tea biscuits tins that normally Pakistani’s dont throw away😂

Naan khatai was one of them!!!! This is very special to me and I make this with so many different variations ....
Sharing one today ....

*Flour....1 cup
*Basen (chickpea flour)...1/2 cup
*Suji...(semolina)1/4 cup
*Almond flour..1/4 cup
*cardamom powder..1tsp

So here we go..

As you know that tea time is my favorite time of the day.. I keep experimenting and making new thing and my kids love helping me out in this aswell..
What I make depends on the phase I’m going through diet/controlled eating or just eat whatever....
This recipe is for the phase when I’m
Watching what I’m eating..
I put coconut sugar or if I’m
Using strawberries and they are sweet then no sugar at all....

Let me know what you think of the recipe...

Ingredients
* For the crust and crumble:
* 1 ½ cups oat flour (or sub all purpose flour)
* 1 cup old-fashioned rolled oats
* ½ cup packed brown sugar (or sub coconut sugar but you may not get the best 'crumble')
* ½ teaspoon ground cinnamon
* ¼ teaspoon baking soda
* ¼ teaspoon salt
* 8 tablespoons butter ,melted
* 1 teaspoon vanilla extract
* ¼ teaspoon almond extract
* For the filling:
* 2 1/2 cups fresh or frozen blueberries
* 3 tablespoons pure maple syrup
* 1 tablespoon cornstarch
* ⅛ teaspoon almond extract
* Optional to make the with a hint of lemon flavor: zest from 1 lemon
* Pinch of salt

Instructions
1. Preheat oven to 350 degrees F. Line an 8x8 inch pan with parchment paper and generously spray with nonstick cooking spray. Set aside.
2. Make the base + topping: In a large bowl, use a fork to mix together the oat flour, oats, coconut sugar, cinnamon, baking soda and salt. Add in melted butter, vanilla extract and almond extract and stir until a nice crumble forms and dough begins to clump together.
3.
4. Place 1 3/4 cups of the mixture into the prepared pan and place the remaining mixture into the fridge (the remaining mixture will be used for the topping). Use your hands to evenly press the dough to the bottom of the pan.
5. Next make your blueberry pie filling: place a medium pot over medium heat. Add in blueberries, maple syrup, almond extract, cornstarch (or arrowroot) and salt. Use a wooden spoon to press down and break down the blueberries just a bit.
6. Bring to a boil, then reduce heat and cook for 3-5 more minutes until mixture is thickened up and nicely coats the back of a spoon.

When Anam asked me to do a sweet dish from rice for the end of year sweet collab I took the opportunity to try something that I loveeeee....

In Lahore you call it Andrasay ki golyaan...

This is also famous in Qasoor where they make it like meethi tiki ... more like shami kebab shape....

What do you know about these ???

This was my first time trying these at home and after watching several YouTube videos and reading many blogs I decided to go with this recipe....

Choclate orange bread....

This bread is inspired by babka but it’s not babka...

When Noor .food asked me to be a part of orange collab initially I wanted to make orange drizzle cake which is one of my favorite cake to make but then I thought to challenge myself and make choclate orange truffles .. I had everything on hand but but but me being me just before starting making truffles I was kneeding the bread dough!!!

So I decided to make choclate orange bread...
Inspired by babka ....
Why I’m not calling it babka because the dough for babka is slightly different and when it’s baked you put sugar syrup on top....

Ok
Ok
The recipe continue....

Bread dough( recipe is already on my page)

Roll the dough.. spread orange marmalade ( I used homemade )
Then Nutella ....( I used 50% n and 50% choclate frosting )
Then zest of orange and choclate chips ...
Roll the bread, cut from the middle and twist..
Put in the loaf pan and let it rise.

Now brush with egg yolk and egg mixture and sprinkle zest of orange and pecan nuts...

Bake for 20 mins...

Run Run as fast as you can!! You can’t catch me I’m a gingerbread man!!!!
My kids love making gingerbread man and what can be more perfect time to make these then winter holidays ...
I hope you make this with your kids and enjoy as much as we did..

Recipe for the gingerbread man

🍪Brown sugar... 2 cups
🍪Butter....225 grams
🍪2 eggs
🍪Golden syrup...1/2 cup ( you can also use honey or corn syrup)
🍪Flour..... 4 3/4 cups
🍪3/4 Tbsp Baking soda
🍪1 Tbsp of cinamon powder
🍪1 tsp ginger powder
🍪nutmeg 1/4 tsp
(I didnot put ginger powder and nutmeg)

Preheat the oven at 400F

Combine flour, baking soda, all spices, set aside..

Cream butter and sugar, add eggs and golden syrup mix till combine ...

Add flour mixture and mix till you have a soft dough...

Note.. The dough will be soft.

Roll the dough between two baking paper..
Cut the house using templet..

Now oppotional if you want you can cut the window and add hard candy or jelly in the middle and bake... but if you are not confident you can skip this step...

Bake for 15 mins...

Note.... if you are making gingerbread men you only need to bake for 10 mins...
Let it cool completely befor decorating with icing....

Icing........
Icing sugar....3 1/4 cups
Meringue powder..1Tbsp
Water..5-6 Tbsp

Whip everything together until you have a smooth paste...
Decorate and enjoy....

When Sehrish approached me for Cheetos collab I knew Exectly what to make.....
My kids loveeer this sandwich ... recipe is so easy and it’s like a cheese sandwich with a kick..

All you need to do is layer the slice of bread with pizza sauce, your fav cheese and Cheetos .....
Then in the outside spread butter generously and sprinkle crushed Cheetos and grill till nice and crispy...

Ingredients

Cauliflower Pizza Crust Ingredients
* 1 Cauliflower Head medium sized
* 2 tablespoons Italian Seasoning
* 1/3 cup Parmesan Cheese shredded
* 1/3 cup Mozzarella Cheese shredded
* 1 Egg
* Salt + Pepper to taste..
Instructions
1. Preheat oven to 400 Fahrenheit*�
2. Line a cookie sheet or a pizza stone with parchment paper sprayed with cooking oil�
3. Cut cauliflower into florets, and pulse in food processor until it resembles rice�
4. Option 1: Place cauliflower in a pans and cook for 15 mins, stir continually.
5. Option2: Place cauliflower rice in a bowl and microwave on high for about 3 minutes. Allow to cool and pour onto a thin dish towel ( I personally don’t like using microwave so I use the pan technique, in this technique cauliflower will cook and the water dries at the same time. Obviously microwave is much quicker option. �
6. Very important step.....Wrap the cauliflower in the towel, twist and wring it hard enough to extract all the liquid. This process is important as the more liquid you are able to remove the better the crust will come together�
7. Next, pour the cauliflower into a bowl along with the rest of the ingredients above and mix
8. Now using a spoon spread the mixture evenly on the pizza pan.. remember it’s a thin crust..�
9. Bake for 8 - 10 minutes or until it starts to turn golden. Remove from oven and add any topping you wish�
10. Place in the oven ag*in until cheese melts. �
. I usually make the base, bake it and freeze for later use..
Whenever you want pizza just take the base out of the oven do your favorite toppings and bake...

There are few tricks if we do to make them foolproof every time ...

1. Add gelatin it will help them hold their shape...
2. Add cornflour it’s will also help them hold shape.....
3. Use double cream....

Happiness is fresh homemade bread!!!

And when you can kill two birds with a same dough it’s even better🤣

I have used the same dough as the last post...
The recipe give you enough dough to make two portions of cinnamon rolls and one large bread like this...

Dough... see the previous post (I’ve used Cake mix in the dough)

For the filling I’ve used

🍏Apples.. 2 Granny Smith and 1 Royal gala
🍎cinnamon ...1 tsp
🍏corn starch... 1 Tbsp
🍎sugar...3 Tbsp
🍏a pinch of salt
🍎water..1/4 cup..

Peel, Cut apples, mix everything and cook..
Let the filling cool down complete before filling the dough...

Brush with egg wash and sprinkle some sugar

Let’s dough this!!! Start the week with comfort sweets...
Trust me this recipe comes out so good you will have a super soft dough that will actually stays soft for the next few days... only if you have any left 😂
Box mix cinnamon rolls

Recipe explained in the stories

* Dough
* 1 box yellow cake mix
* 4 cups all purpose flour
* 1/4 cup sugar
* 2 cups warm water (no warmer than 110 degrees)
* 2 packets of yeast
* 2Tbsp milk powder
* extra flour for kneading
* 8 Tablespoons room temperature butter -divided
*
* cooking spray
* Cinnamon Sugar Filling Mixture
* 3/4 cup brown sugar
* 2 heaping tablespoons of Cinnamon powder
* 2tsp corn flour
*
* Cream Cheese Cinnamon Roll Frosting
* 4oz Room Temperature Cream Cheese
* 4 Tablespoons Butter
* 1 teaspoon vanilla
* 1 Tablespoon milk
* 3 1/2-4 cups Powdered Sugar

Instructions
1. Dough
2. Start by proofing the yeast by adding warm water and the 2 packets of yeast to a small bowl. The water needs to be at least 95 degrees but no hotter than 110 degrees. It takes about 5 minutes to proof.
3. While the yeast is proofing Mix together 3 1/2 cups of flour , cake mix, and sugar in a large bowl. Make a well in the center to pour the liquid.
4. Once the yeast is completely dissolved give it a little stir and pour into the well of the dry ingredients.
5. I do this the old fashioned way and use a wooden spoon . Slowly stir until all of the ingredients are incorporated. At this point you can add remaining flour until the dough isn't too sticky to knead
6. Turn the dough out onto a floured surface and knead and add flour as needed if the dough gets too sticky
7. After about 5 minutes of kneading the dough should smooth and elastic like
8. Form the dough into a ball and Place in an oiled bowl, cover with a towel.
9. Place in a warm, non drafty area to allow to rise. The dough should double in size after about an hour
10. Mix the ingredients to the cinnamon sugar filling and set aside
11. Punch dough down and turn out onto a floured surface.
12. Cut dough in half , set one half aside and keep one on the floured surface
13. Roll the dough evenly to rectangle , it should be about 14x10
