Mercy Chefs – a Virginia-based nonprofit dedicated to feeding survivors, volunteers and first responders after a natural disaster strikes – has been deployed to Romania to assist famished Ukrainian refugees crossing the border.

Yesterday, our team arrived in Romania and immediately met with our partners on the ground to establish a plan of action. We have never seen or responded to a disaster that compares to this international crisis. Families are torn apart living in terror. Hospital resources including baby formula are unavailable. Homes and schools destroyed leaving these communities with nowhere to return to. This image was shared with us by a local partner who’s sister’s apartment building was destroyed in Kharkiv last night. Ukrainians have displayed great courage and tremendous faith despite the horrific circumstances they are facing, and we are honored to do whatever we can to provide tangible relief during this time. You've seen the news. We want to let you know that Mercy Chefs has team members in the air traveling overnight to provide immediate food relief for the Ukrainians crossing the border into Romania. As soon as tomorrow, we will begin mobilizing emergency relief food packets to the border working with our international relief partners. Our team will be assessing the long-term needs and opportunities for continued relief. We are working to provide the most support we can for those in desperate need of basic necessities. We appreciate your prayers as we move forward during this difficult situation.

We shared this recipe on Super Bowl Sunday five years ago, and it's just so good we needed to post it again!

Chef Jon White's Crab Stuff Mushrooms

Ingredients:
1lb Fresh Lump or Jumbo Lump crab
24 Portabella Mushroom Caps
4T Unsalted Butter
2T Minced Green Onion
1t Fresh lemon juice
1/2C Fresh Breadcrumbs
1 ea Large Egg (beaten)
1/2t Minced Garlic
1/3C White Wine
1/2C Freshly-grated Parmesan or Reggiano

Procedure:
1. Pre-heat oven to 400°F.
2. Melt 2 tablespoons of butter in sauté pan and sauté green onion.
3. Remove from heat and add lemon juice, wine, crab, breadcrumbs, egg and cheese. Fold gently to combine.
4. Brush outside of mushrooms and the bottom of a sheet pan with the remaining 2 tablespoons of butter. Stuff mushroom caps with fillings.
5. Bake for 17-20 minutes. Garnish with fresh parsley if desired.
