Some days you really earn that nightcap. Tonight’s is a simple one. The Gold Rush. 2oz of Bourbon, 3/4oz of freshly squeezed lemon juice and 3/4oz of honey syrup (3 parts honey, 1 part hot water). Give it a good shake and enjoy.

This week I sit down with a good friend and incredible sales coach, Mike Petritis. Due to USPS shipping the Boulevardier I made for Mike a day late we free poured some bourbon and getting extremely candid about all kinds of topics including:

- Mike's start as a DJ in high school in Chicago and how his life started as an entrepreneur at a young age

- Why Mike transitioned from DJ to business coach

- How Mike met his girlfriend and instantly bonded with her son Nick, taking on a father role

- What led Mike & his family to packing up their lives and moving to Austin, TX

We pour bourbon after bourbon and talk about everything from COVID-19 to dealing with absolute abrupt life changes, kids, toxic negativity, masks, vaccines, and the power of automating your life and business. There’s a lot of talk that the whiskey highball is the test of whether or not you’re a good bartender. At its core a whiskey highball is a shot of whiskey in a glass of ice topped off with club soda. But the whiskey you choose and the type of club soda you use play a role. Same with the ice and how you pour.

This one isn’t bad. But I’ve got a lot to learn. Honestly, my favorite whiskey highball is Suntory Toki, Topo Chico Grapefruit and a splash of fresh squeezed grapefruit. This one is distinct with a very flavorful Barrel Bourbon. Here’s a baseline recipe, play with it and let me know what you think.

Fill highball glass with ice
2oz. Whiskey
4oz. Club soda or any kind of carbonated water
Splash of citrus (1/2 oz.)

First add your citrus and whiskey, tilt your glass and pour club soda super slow. Enjoy!

When David mentioned that he was a fan of good bourbon and Old Fashioned’s I put my head down and got to work. I came up with the concept of a peach tea old-fashioned. The only question, how would I go about making one that would stand up to being shipped across the country? After several attempts, here’s what worked best. With the addition of home-brewed Red Diamond brand Tea, we swapped the traditional orange for a lemon and then we swapped the traditional Angostura Bitters for Fee Brothers Peach Bitters which really helped make the perfect flavor profile.

PEACH TEA OLD FASHIONED COCKTAIL RECIPE

2 oz. Evan WIlliams Single Barrel Vintage Bourbon
4 oz. Red Diamond Fresh Brewed Iced Tea
3 Sugar Cubes
4 Dashes of Fee Brothers Peach Bitters
Lemon Wedge for Muddling
Lemon Wheel for Garnish

To start, you’ll want to put three sugar cubes in a glass. Next, soak the sugar with four dashes of your peach bitters, and then add your lemon wedge. Muddle all of the ingredients until you’ve got a nice liquidy paste. From there, strain the mixture into an old fashioned glass, add your bourbon and tea, give it a quick stir, add a single large cube and garnish with a lemon wheel. Enjoy it, it’s a good one!
