Restaurant style rich & creamy Shahi Paneer😋
➡️ Steps :-
1. Heat oil in Kadhai. Splutter Cumin seeds, Bay leaf, Peppercorn, Clove, green Cardamom, Black Cardamom, Cinnamon, dry Res Chilli
2. Add Garlic, Ginger, green Chilli. Fry for a min
3. Fry sliced Onion until translucent
4. Add tomato, Cashews, Salt. Mix well
5. Add water, cover and cook for 10 min
6. Add in Turmeric, Red chilli powder, Coriander powder. Fry for a while
7. Add Curd and mix and cook for 2 min
8. Once the mixture cools down transfer to a jar and blend into a paste
9. Heat butter in Kadhai
10. Add in paste, Kashmiri red chilli powder, Salt and Sugar. Mix well
11. Once the gravy comes to boil add in Paneer
12. Finish off with Garam masala, Kasuri Methi, Cream
13. Serve and Enjoy!!

➡️ Steps :-
1. In a bowl mix whisked Curd, Ginger garlic paste, Turmeric, Red chilli powder, Coriander powder, Biryani masala, Salt
2. Add green Chilli, Potato, Cauliflower, Beans, Carrot, Peas, Paneer, lemon juice, chopped mint leaves, Coriander leaves, fried Onion. Combine well
3. Pour some ghee over hot coal to release smoke. Rest for 15 min and let the smoke penetrate into vegetables.
4. Heat ghee in a Handi, add marinated veggies and fry on high flame for 5 min
5. Add some water, cover and let it cook on low flame
6. Meanwhile in boiling water add Shahjeera, Bay leaf, Cinnamon, Clove, Peppercorn, Cardamom, Star anise, green Chilli, Salt, Lemon juice
7. Add soaked Biryani rice ( soaked for 30 min ) and cook for 5 min
8. Remove the whole spices, strain rice and evenly spread over the marinated vegetable
9. Top with some chopped mint leaves, coriander leaves, fried Onion and Saffron milk
10. Cover the lid of Handi and seal using dough
11. Cook on low flame for 15 min
12. Let Handi rest for 10 min then open the seal
13. Vegetable Dum biryani is ready
14. Serve with your favourite Raita and Enjoy!! 😋

#DiwaliwithNidhi Let’s make comfort food, Dal Makhani for Diwali dinner 🪔
➡️ Steps :-
1. Wash 1 cup black Urad dal, ¼ cup Rajma and 2 tbsp Chana dal thoroughly. Soak them overnight
2. In pressure add Dal and Rajma, 5 Garlic clove, 1 tsp Salt, 1 tsp Kashmiri Red chilli powder, 1 Inch Cinnamon, 1 Black Cardamom, 1 Bay leaf
3. Add 3 cup of water, 1 small tsp Ghee. Cover the lid and Pressure cook for 5-6 whistle
4. Remove whole spices and slightly mash the Rajma
5. Heat Oil& Bitter in kadhai
6. Add 2 tbsp Ginger Garlic & green Chilli paste. Sauté well
7. Add 1 tsp Kashmiri Red chilli powder, ½ tsp Cumin powder. Fry well
8. Add tomato purée ( 4 tomato ), 1 tsp Salt and pinch of Sugar. Mix well
9. Once oil separates from tomato add in boule dal and give a mix. Cook for 3-4 min
10. Add in 2 cup hot water and mix well
11. Now slow cook the dal, Cover and cook for 20-25 min on low flame. Stir in between
12. Finish with 1 tbsp Kasuri Methi, 1 tsp Garam masala, Butter and Cream. Mix well
13. Rest Dal makhani for 15 min
14. Serve with rice and Enjoy!! 😋

➡️ Steps :-
1. In a bowl add 2 cup Maida, ½ tsp Baking powder, 2 tbsp Ghee. Combine well
2. Gradually add water and knead into a soft dough
3. Rest dough for half an hour
4. For the stuffing - heat ghee in a pan
5. Fry chopped Cashews and Almonds, then add Raisins and desiccated coconut
6. Add ½ cup Khoa and mix well
7. Let Khoa mixture cool down then add ¼ cup powdered Sugar, pinch of Cardamom powder and mix well
8. For the sugar syrup - Dissolve 1 cup Sugar in ½ cup water
9. Boil for 5-7 min
10. Add pinch of cardamom powder for the flavour
11. Now prepare Chandrakala - divide dough into 3 portions
12. Roll each ball into a big roti
13. Using a glass cutting board out small puris
14. Apply water on edges of puri
15. Place Khoa mixture in the centre
16. Top this with another puri and seal the edges
17. Pinch and fold the edges to give it a design
18. Add Chandrakala in warm oil, once oil heatens, Chandrakala will float over oil surface
19. Flip and fry on both the sides until golden
20. Remove from oil and dip Chandrakal in warm sugar syrup
21. Let it soak in syrup for 15 minutes
22. Serve them warm and Enjoy!! 😋

#DiwaliwithNidhi Let’s make spicy and flavourful mini Samosa bites for Diwali 🪔
➡️ Steps :-
1. Take 2 cup Maida, 1 tsp Ajwain, 1 tsp Salt, 1 tbsp Oil
2. Gradually add water and knead into a dough
3. Let the dough rest for a while
4. Now coarsely grind 1 tsp Coriander seeds, 1 tsp Cumin seeds, 1 tsp Fennel seeds
5. Heat mustard oil in a pan, add in grounded spices
6. Add pinch of Heeng, 1 large tbsp finely chopped Ginger, Garlic and green Chilli. Sauté well
7. Add in ½ cup Peas and 2 boiled potato. Fry for a while
8. Add in 1 tsp Red chilli powder, ½ tsp Garam masala, 1 tsp Salt, 1 tsp Amchur powder. Mix well
9. Finish off with chopped coriander leaves
10. Take half dough portion and roll into a large size roti
11. Using a knife diagonally cut pieces out of the dough
12. Place small portions of potato mixture over each slice
13. Apply water on the edges and fold the slice from each side
14. Seal the edges well
15. Place the potatoes in hot oil
16. Deep fry until they reach golden colour
17. Serve mini Samosa with green chutney and Enjoy!!

➡️ For white gravy :-
1. Heat 1 cup water in a kadhai
2. Add 2 roughly chopped Onion, 2 slit green Chilli, ¼ cup Cashews, ¼ cup melon seeds
3. Cover and cook for 20 minutes
4. Once the mixture cools down blend into a paste
➡️ For the Kofta stuffing
1. Crush handful of Cashews, Almonds, Pistachios and raisins
2. In a bowl add crushed dry fruits, ¼ cup Khoa, 1 tsp crushed Ginger, 1 finely chopped green chilli, 1 tsp Salt, coriander leaves
3. Combine well
➡️ For the Kofta balls
1. Crumble 200 gram Paneer until there are no lumps
2. Add 1 tsp Salt, 1 tsp Ginger, 1 tsp green Chilli, ½ tsp Garam masala, ½ tsp Black pepper powder, ¼ tsp Cardamom powder
3. Mix everything well
4. Take small portions of Paneer and give a round shape
5. Make small depressions in paneer and stuff in the Khoa mixture
6. Roll with hands and form round balls
7. Deep fry in hot oil until golden in colour
8. Remove once done
➡️ For the final gravy
1. Heat oil in kadhai
2. Add in 1 Bay leaf, 1 inch Cinnamon, 3 Clove, 2 green Cardamom, 1 Black Cardamom
3. Add in 1 tbsp Ginger Garlic paste. Fry until it loses rawness
4. Add Onion paste and fry for 5 min
5. Add in ¼ cup Curd, mix and cook well
6. Add 1 cup water, 1 tsp Salt, ½ tsp Salt, ¼ tsp Black pepper powder and some Khoa. Mix well
7. Cover and cook for 5 min
8. Add 1 tsp Kasuri methi and ¼ cup Cream. Mix well
9. Add in kofta balls while serving
10. Enjoy!!
