➡️ Steps :-
1.Heat pan add 1 cup Makhana
2. Dry roast the Makhan until crisp
3. Add 2 cup Curd in a bowl. Whisk it until there are no lumps
4. Add in 1 tsp Salt
5. Add in half tsp each Black salt, Red chilli powder, Cumin powder, Chaat masala, Sugar. Mix well
6. Add in roasted Makhana and mix

Sauté Chicken pieces ( ½ kg ) for 6-7 min in medium-high flame. Once done remove and keep aside 2. In the same oil sauté whole spices. Add 1 Bay leaf, 3 dry Red Chilli, 1 tsp Cumin seeds, 1 inch Cinnamon, 10 Black peppercorn, 4 Clove, 2 Cardamom3. Add 2 whole Garlic, 4 medium size sliced Onion. Cook on medium flame until Onion turns brown 4. Once done add 1 tbsp Ginger garlic paste. Sauté for a min 5. Add ½ tsp Turmeric powder, 1 tsp Red chilli powder, 1 tsp Coriander powder. Cook the masala. Add small amount of water and mix to prevent masala from burning 6. When the water dries up add the fried chicken pieces 7. Mix chicken well with masala 8. At this point add 1 tsp Garam masala and 1 cup hot water. Mix well with gravy 9. Finish off with chopped coriander leaves 10. Cover the lid and let it simmer on low flame for 15 min 11. Once the oil separates from gravy, Chicken is ready 12. Serve and Enjoy!!😋.

1) In a kadhai heat 2 cup of milk (500 ml)
2) Add pinch of Cardamom powder, 10-12 saffron strands
3) Add 2 tbsp each of Milk powder and Sugar
4) Mix well
5) Stir and boil the milk until it thickens and quantity reduces to half
6) Add crushed dry fruits. Mix well
7) Let it rest to cool down completely
😎 Meanwhile cut head of two mangoes
9) Take out the seed out of mangoes, leaving a cavity
10) Pour in the cool kulfi in hollowed mango till top
11) Place the mango cap over it
12) Refrigerate for 6 hours or overnight
13) Peel off the mango skin
14) Thickly cut the mango slices

For CHICKEN Marination :-
1. In a bowl add ¼ cup fried brown Onion, ¼ cup whisked Curd, 1 tbsp Ginger garlic paste, 2 green chilli, chopped Coriander and Mint leaves
2. Add in 1 tbsp Salt, 1 tsp Turmeric powder, 1 tsp Red chilli powder, 1 tbsp Coriander powder, 1 tbsp Biryani masala, 2 tbsp Onion oil (oil in which onion was browned), half lemon juice. Mix everything well
3. Add 250 gram of Chicken pieces. Mix well and rest for half an hour
🍗 For KESAR syrup
4. In a bowl add ½ cup Milk, 1 tbsp water, 10-12 Saffron strands. Mix and rest for a while.
🍗 For BIRYANI RICE
5. Boil water in an utensil
6. Add 1 tsp Salt, 1 tsp Ghee, 1 Bay leaf, Cinnamon stick, 2 Cardamom, 2 Clove, 4 Peppercorn
7. Add in 1 cup washed Biryani rice
8. Cook for 5-7 minutes
9. Once the rice is half cooked strain from water and keep aside
🍗 For CHICKEN cooking
10. In a kadhai heat Onion oil
11. Add in marinated Chicken, fry for 2-3 min. Cover and cook for 5 min
🍗 For BIRYANI LAYERING
12. Add half cooked rice on Chicken, evenly spread the rice
13. Add Saffron syrup, Ghee, chopped coriander leaves and Mint leaves
14. Finally top with fried Onion
15. Cover the lid of kadhai, seal well so that steam does not pass and place the kadhai on hot tawa
16. Cook on low flame for 15 minutes
17. Once cooked well, rest for 10 min and then open the lid
18. Chicken Biryani is ready. Serve with any raita and Enjoy!!

Stir fry until translucent 8. Add prepared ginger garlic paste. Stir fry for a min 9. Add in 2 chopped Tomato and 1½ tsp Salt. Mix well. Cover and cook until tomato turns mushy 10. Add ½ tsp Turmeric powder, ½ tsp Red chilli powder, 1 tsp Coriander powder, 1 tsp Garam masala. Cook the masala for a min 11. Add in fried Potato and Peas. Mix well 12. Add 1½ cup of warm water and mix well with gravy 13. Cover the lid of kadhai and Simmer on low flame for 10 min 14. Once the oil comes on top, finish off with coriander leaves 15. Serve Matar ka Jhor with rice and top generous amount of Ghee 16. Enjoy!!😋.
