Crispy Zinger Burger 🍔

Zinger Burger
It is very tricky to make authentic crispy zinger chicken fillets or zinger pieces.
The flour shouldn’t be too much and coating shouldn’t be over done.
So
1. first coat the marinated chicken in flour mixture
Press with fingers and thumbs, remove excess flour
2. Then in ice cold water
3. In flour mixture again pressing with fingers, remove excess flour.
4. Deep fry in hot oil on medium high flame
If you don’t remove extra flour, the chicken will become hard.
Secondly if you are making fillets, use as thin strips as you can. Otherwise the fillets will become hard and thick chewy.

The origin of Jalebi is from Western Asia. In Turkish, Persian, Arabic languages it's mostly called Mshabek or Zulabiya. Originally they were made like doughnut balls. With the time, they got many names, shapes and colours.
In the Turkish or Arab countries it is a Ramadan favourite sweet.I am making this Arabic version as it's very easy and tasty.
I dipped them just for a few seconds in the sugar syrup, as we don’t prefer too much sweetness. You can dip the Zulabiyas in sugar syrup for as long as you want them sweet.

Chicken Karahi In a different way..

There are many recipes of Karahi Chicken out there. May this one must be somewhere cooked by someone but I made it up first time. This time I cooked in a bit different way, add dried Kasuri Methi for first time and I made it during fast. Still the spices came out perfect, the aroma was just awesome and the Karahi itself tasted yumm..
Note: I like some extra oil in Karahi or Handi as it gives nice colour and plus we have to cook the chicken in oil itself. so may be I added about 3/4 to 1 cup oil but ofcourse you can cut off extra oil if you want.

So these are Middle Eastern all time favourite sweet specially for Ramadan Kareem. I have just made a few changes. Due to quarantine nowadays.. I was out of yeast so tried them without it.. And I didn’t soak them in sugar syrup to avoid extra sweetness. You can freely soak them just like we do our Gulab Jamuns..
Also I added Khoya to the filling which is totally upto you to add or leave..
Final thing is that they can be fried or baked.. I fried them.. And the end is that they turn out so delicious and yummy as it is..
Tips: If you have yeast, add half tsp to the lukewarm milk and sugar and keep for 10 mins then add them to the other ingredients.
If you cant close the ends, brush some batter to the ends and fold and pinch softly..

In Persian cuisine it's called باميه Bamiyeh and In Arabic or Egyptian cuisine it's called بلح الشام
Whereas in Spanish cuisine you call them Churros..
The only difference is that in all the Middle Yeast we dip them in sugar syrup after deep frying and coat them in some pistachios powder or any dry fruit powder you can use..
Mostly Ramadan favourite in all Arabs. And my favourite too..
But the Churros are drizzled with some sugar and cinnamon powder.
So you can make them 2 ways.. we anyhow prefer the Arabic version..
Tips:
1. Oil should be medium hot, fry on medium low flame to cook them properly from inside. Cut into small lengths preferably.
2. I used almonds, pistachios and walnuts powder as I already had it, the original recipe calls for pistachios powder.
3. You can dip them into sugar syrup for long, I remove them at once as we don’t prefer too much sweetness.
