Recipe: Lemon Garlic Shrimp with Quinoa and Roasted Vegetables
Ingredients:
1 pound of large shrimp, peeled and deveined
3 cloves of garlic, minced
2 tablespoons of fresh lemon juice
2 tablespoons of olive oil
Salt and pepper to taste
1 cup of quinoa
2 cups of water or vegetable broth
1 zucchini, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, sliced
1 tablespoon of olive oil
1 teaspoon of dried Italian seasoning
Instructions:
Preheat the oven to 425°F (220°C).
In a bowl, combine the minced garlic, lemon juice, olive oil, salt, and pepper. Add the shrimp and toss until they are well coated. Set aside to marinate while you prepare the quinoa and vegetables.
Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, bring the water or vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the liquid is absorbed. Fluff the quinoa with a fork and set aside.
Meanwhile, place the sliced zucchini, red bell pepper, yellow bell pepper, and red onion on a baking sheet. Drizzle with olive oil, sprinkle with dried Italian seasoning, and season with salt and pepper. Toss until the vegetables are well coated. Roast in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized.
While the vegetables are roasting, heat a large skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, until they turn pink and opaque.
Serve the lemon garlic shrimp over a bed of cooked quinoa and roasted vegetables.
