Breakfast of champions 🤤
Peach blueberry baked oatmeal…

2-3 servings
1 banana
1 cup oats
1/2 cup oats separate
2 peaches (I usually make this when I see my peaches are getting soft)
1/2 cup blueberries (I don’t ever measure this tbh)
1tsp baking powder
1/2 cup oat milk ( maybe a dash extra if it’s too thick to mix with the immersion blender)
2tbs of honey
1/2 a pinch of Salt
1/2 teaspoons vanilla bean paste
First, in a cup or bowl I blend the bananas, milk, and 1cup of oats. I have an immersion blender so that’s what I use but use what you have long as you blend it.
Then dump everything else in and mix.
I bake at 350 for about 25 minutes if you use a large pan it will take less time. My pan was 4in x 4in as I bake it in my glass Tupperware so I don’t make too much. The larger the pan the thinner your oatmeal so if you want more crispy edges I’d say use a larger pan.
I like to top mine when warm with something so I mix
Yoghurt (Greek)
A splash of whipping cream
And Chobani white chocolate mocha coffee creamer together (I use my hand mixer but a wisk is a suitable substitute)
I put two- three servings but usually I eat more right after the first bowl then eat the rest sometime throughout the day as a snack.
