Chicken and Broccoli Alfredo Pasta
🍴 Ingredients 🛒
12 oz penne pasta
2 chicken breasts, cubed
2 cups broccoli florets
2 tbsp olive oil
2 cloves garlic, minced
1 cup heavy cream
1/2 cup Parmesan cheese, grated
1/4 cup chicken broth
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Cook the pasta according to package instructions. Add broccoli to the boiling pasta water during the last 3 minutes of cooking. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Season the cubed chicken with salt and pepper, then sauté until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
In the same skillet, add minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and heavy cream, bringing to a simmer. Let the sauce thicken for 2-3 minutes.
Stir in Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
Add the cooked pasta, broccoli, and chicken back into the skillet, tossing everything to coat in the Alfredo sauce.
Garnish with fresh parsley and serve hot.
