Chocolate & Biscoff- match made in heaven!
This chocolate cake is both Chocolatey & Biscoffy and makes the richest, most indulgent cake ever. Perfect to make any occasion memorable. I made this for my bff on her 36th birthday.
Sharing the much awaited recipe with all.
Ingredients for the cake sponge
Dry:
All purpose flour- 1&1/2 cups sifted
Baking soda- 1/2 tsp
Baking powder- 1&1/4 tsp
Salt- 1/4 tsp
Wet:
Thick yogurt- 1 cup room temp
Sugar- 1/2 cup + 2 tbsp
Refined oil- 1/4 cup
Butter unsalted room temperature- 1/4 cup
Vanilla essence- 1 tsp
Ingredients for Creamcheese frosting
250g
500g icing sugar
3tblsp cocoa powder
1tsp vanilla extract
1tblsp milk
Biscoff spread

Method:
Preheat oven @ 180 degrees c & line the cake tin (round preferred) with butter paper/ butter.
In a bowl, combine all the dry ingredients & set aside. Take another big bowl, add butter, oil and sugar in it. Cream oil+butter+sugar till fluffy for about 3 min. Beat yogurt separately for a minute till creamy.
Add yogurt to the butter & sugar bowl. Mix well.
Add vanilla essence. Fold them together.
Mix dry ingredients into wet ingredients in batches. Pour the batter in the lined tin. Level it out by tapping the tin on counter few times and put in oven. Bake it for 35-40 minutes, till the toothpick comes out clean from the center.
Once done place the cake on a cooling rack and allow to cool fully.
For frosting- add creamcheese, beat until light & fluffy, then add icing sugar, cocoa powder vanilla extract.
Soften the cake base by drizzling some sugar syrup (wait for 30 mins for it to get absorbed both sides) then fill the bottom layer wd chocolate creamcheese and Biscoff spread, place the second layer & coat the whole cake with another layer of creamcheese. give some rocky road texture. Pop into the fridge to set. This will take 10-15 minutes.
For final look add a swirl of Biscoff on top of the creamcheese frosting decorate with using an icecream scoop or scoop of chocolate creamcheese onto a waffle cone, turn it upside down. Add melted Biscoff spread around for the effect. Serve it fresh!
