Ugba/Abacha Recipe 😋😋😋

Ingredients for making Abacha (African Salad)

3 handfuls abacha

2 cups ugba (ukpaka)

30 cl red palm oil

2 tablespoons Powdered Potash (food tenderizer)

Fish | Mackerel/Dry Fish/Stockfish

1 large Onion

Salt and dry pepper (to taste)

4 tablespoons ground crayfish

2 stock cubes (Maggi/Knorr)

1 teaspoon ground Ehu seeds (Calabash Nutmeg)

🍗🍗🍀🍀Other meat and vegetables for the Abacha

3 Fresh Utazi leaves (Gongronema latifolium)

Ponmo / Kanda (cow skin)

Garden Eggs | As much as you can eat

Garden Egg leaves | 1 medium bunch

1 medium onion (for serving)

🔪🍽Before to Make Your African Salad

Prepare the ehu seeds by roasting, peeling and grinding them with a dry mill. See this video for how to do that.

If you will use kanda (cow skin), cook till done and cut into small pieces.

Depending on your choice of fish (you can also use all of them), fry or roast the mackerel, soak the stockfish in water and debone the dry fish.

Wash and cut the vegetables into tiny pieces. Cut the big bulb of onion into tiny pieces and cut the medium one in circles. Wash the garden egges and set aside, no need to cut these.

Grind the crayfish and pepper

Soak the Abacha in cold water and rinse the Ugba with lukewarm water.

Once the Abacha has softened, put in a sieve to drain.

Put the powdered potash in a cup or bowl and pour about 1 cup of cold water. Stir well and you are ready to start making the African Salad.

🏺Cooking Begins🏺
Pour the palm oil into a sizeable pot. Yes you need all that oil so that your Abacha will not have a dry feel in the mouth when done. Pour the water from the potash mixture, making sure not to pour the sediments.

Stir very well and you'll see the oil turn into a yellow paste.

Add the ground pepper, ground ehu, crushed stock cubes, crayfish, diced onions and ugba (ukpaka), then stir very well. Please not that we are doing everything off the stove.

Add the iru/ogiri and make sure it is mixed very well. Add the diced kanda/pomo and stir very well.

Now add the soaked and drained Abacha and stir till it is well-incorporated in the palm oil paste.

Add the sliced Utazi and salt to taste and stir well. You can also use dry Utazi if the fresh one is not available where you live. It is important that you add salt last because after adding all that seasoning, your Abacha may not even need salt any more.

I like my Abacha warm. If you like yours that way too, transfer to a stove at this point and heat it up to your desired temperature at medium heat. When done, turn off the heat and add the sliced garden egg leaves, stir very well and serve.

If you like your Abacha cold, after step 6, add the sliced garden egg leaves, stir and serve with garden eggs, fish and onions.

You are done, Eat with chilled Palm Wine Or Life Lager Beer😋😋

OGBONO SOUP RECIPE
Ingredients:
Assorted meat and fish: goat meat, kpomo, stock fish, and dried fish
Ogbono seeds
Palm oil
Ground crayfish
Medium onion, sliced
Seasoning cubes (Maggi/Knorr)
Ugu (pumpkin) leaves. Alternative you can use spinach or bitterleaf
Salt and pepper to taste (hot pepper)

Tip: Ogbono soup should be thickish and draws, hence try not to cook ogbono soup with too much water – usually the little stock/water from cooked meat.

Preparation Method:
Get the major ingredients ready. Grind the Ogbono seeds with a dry mill. Pick and cut the pumpkin leaves, and set aside. Defrost chopped spinach if that is what you are using. Grind crayfish and pepper, and set aside.

Wash and clean the meat thoroughly. Cook with sliced onions and seasoning cubes to taste. Cook on low heat – cover pot and allow to it simmer for about 30 minutes. This allows the meat to cook tender and soft, but also helps to release its natural juices.

After 20 minutes, add the stock fish and dried fish. Add the hot pepper and ground crayfish, and continue to cook for the next 10 minutes. Add palm oil, cook for another 5 minutes to allow the palm oil melt and combine well with cooking contents.

Put heat to very low and stir-in ogbono gradually, stir continuously – this allows ogbono to dissolve nicely, and eliminates forming lumps. You will notice the Ogbono start to thicken and draw – keep stirring till the ogbono has completely absorbed the meat stock.
Combine thoroughly and leave to cook for about 15 minutes on medium heat.

Taste for seasoning, salt and pepper – adjust if necessary. Stir occasionally, scraping the ogbono that sticks to the base of the pot.

Finally, add the pumpkin leaves (or any of the alternative leaves you using). Stir very well, turn the heat low and allow to cook for about 5 minutes.

Best served with pounded yam or garri (eba). OR serve with your favourite kind of fufu (swallow).

Boil your pomo with cube, salt and black pepper,

DESCRIPTION
•Chocolate cake is a cake that is baked with cocoa powder.
•This chocolate cake is moist, fluffy and delicious.
•Double chocolate cake is when you use cocoa powder and chocolate to your cake.
➖➖➖➖➖

MAIN INGREDIENTS
▪120g unsweetened cocoa powder
▪280g all purpose flour
▪1/2 cup Vegetable oil or 280g butter
▪350g granulated sugar
▪5 large (250g) eggs
▪1 tsp baking powder
▪2 tsp baking soda
▪2 tsp vanilla extract
▪200ml buttermilk/ liquid milk
▪1 cups of warm water

OPTIONAL INGREDIENTS
▪2 tbsp dark chopped chocolate chips
▪1/4 salt
▪1/2 tsp cinnamon
▪1/2 cup raisins
▪1/4 cup preservative (liquor/powder)

ALTERNATIVE INGREDIENTS
▪Butter/margarine or Vegetable oil
▪Liquid or powdered milk
▪Flour of choice
▪Preservative of choice
▪Flavour of choice
▪Spices of choice

TOOLS NEEDED
•Oven/gas cooker/stove
•Electric hand/stand mixer
•Measuring cups & spoons
•Wooden spoon/spatula
•Measuring cup/jug
•Mixing bowls
•Baking pan
•Sieve/sift

BEFORE PREPARATION
▪Measure all your Ingredients accurately, according to what is stated on the recipe.

▪Bring all your Ingredients to room temperature.

▪Make sure you have all the tools needed, as well as, all of the ingredients for this recipe are fully ready.
➖➖➖➖➖

PREPARATION METHOD
Step 1: Preheat the oven to 350° Fahrenheit or 180° Celsius.

Step 2: Grease your cake baking pan with butter and dust it with flour; cover the sides with flour, and remove the excess.
Note: Use a pastry brush to butter the baking pan.
Note: You can use cocoa powder to dust your pan.

Step 3: Sift your dry ingredients such as flour, cocoa powder, baking soda, baking powder, and salt ( the optional Ingredients, only if you are using any of them) in a large bowl and set aside.

Step 4: In a mixing bowl, add in the butter and sugar and mix with your electric mixer on low speed. Increase the speed and whisk the butter mixture for 3 to 5 minutes or until you get a pale yellow colour, fluffy, light and smooth cream.

Note: make sure you always scrape down bowl occasionally in order to get all the ingredients mix well.

Step 5: Add/whisk in the eggs into the butter mixture, one at a time and beating well after each addition.
Note: Make sure you mix until the yellow eggs disappear.

Step 6: Add in the vanilla extract or any other extracts/flavours of your choice and mix to incorporate. It is at this point/stage you can add in the alcohol/brandy ( to preserve the cake from spoiling ).

Step 7: Alternate adding the dry ingredients/flour mixture and the milk. Fold in the flour/dry mixture in 3 batches and milk in 2 batches, making sure, you mix well per batch. Stir together everything with your spatula or wooden spoon until everything is well Incorporated.
Note: The mixture should only be turned in one direction to prevent air from entering into the batter.

Step 8: Add in the warm water and mix to combine.
Note: Always use warm water to bake this cake.

Note: Batter will be very runny.

Step 9: Once every Ingredients is well Incorporated, pour the cake batter into the greased baking pan. Once you have poured in all the cake batter into the baking pan, gently lift and drop the cake pan several times to level out the cake batter as much as possible.

Step 10: Put your baking pan in your preheated oven and baked for about 40 to 50 minutes or until golden brown.
Note: Depending on your oven and the size of the baking pan, it may take more than 40 minutes to bake this cake.

Step 11: To check if your cake is done, Is if a toothpick, sharp knife or wooden skewer is inserted into the center of the cake, comes out clean or If the cake springs back quickly after it has been pressed gently on the top with a finger.

Step 12: Once your cake is baked, remove and cool the cake. Cool the cake inside the baking pan and on a rack for only about 10 minutes.

Step 13: After the stipulated 10 minutes, then take out the cake from the baking pan and leave to cool down completely before preserving or decorating it.

ANOTHER METHOD OF MAKING IT
Baking this cake with Vegetable oil without butter.
Note: This method is the main baking procedure to bake chocolate cake.

▪Add in your eggs, sugar and vegetable oil together in a mixing bowl and mix.
▪Then add in vanilla extract, buttermilk, warm water, and beat on a medium speed until smooth.
▪Fold in the dry ingredients and mix to combine.
▪Add the warm water, mix and pour in the baking pan.

SECRET
•The secret of baking this delicious dark cake, is to use unsweetened cocoa powder and warm water to bake this cake, but to make it much richer, add it chopped chocolate when making it.

PRESERVING/STORING
•You can preserve this cake by wrapping it with plastic wrap, put in airtight container and put in the fridge or freezer.

•If you have leftover cake, you can wrap it up with aluminum foil or plastic wrap to keep them from drying out.

•You can keep this cake on the counter for up to 3 days.

HOW TO SERVE/EAT THIS CAKE
•This cake can be served plain or iced and decorated, before serving.

•You don't have to fridge this cake if you are going to eat it immediately, they are best served warm or at room temperature.

•This cake can be served as a dessert, after a meal or eaten alone as a snack.

•You can serve this cake with a cup of tea or any soft chilled drink of your choice.

•To serve the leftover cake, you can warm them up in the microwave ( for few seconds) or toaster oven before eating the leftover.

•You can dust it with icing sugar or cocoa powder or decorate it on the top with chocolate, before serving it.

Ingredients:
Oxtail (excess fat removed)
Fresh hot peppers, thinly sliced
Fresh tomatoes, chopped
1 big onion, sliced
Thyme
Garlic and ginger, grated
Ground crayfish
Mint/scent leaves
Peppersoup spice mix
Seasoning cubes (Maggi/Knorr)
*Nigerian local spice seeds 2 ehuru seeds (toasted, and finely ground).
2 uda pods (toasted, and roughly crushed)

Preparation Method:
Wash meat and fish thoroughly. Use warm water and salt to get off the slime. Get rid of excess fat and unwanted bits.

Place the cowtail in a large cooking pot – season with ginger, garlic, onion, thyme, seasoning cubes and salt. Cover pot, place on low heat and leave to simmer without water for about 10 minutes. This allows the meat to release its natural juices and flavour.

After the 10 minutes, add the sliced fresh peppers and tomatoes. add enough water to cover just above the meat. From now till cooking is done. Cook for about 45 minutes to an hour, adding more water as required to level up, until the meat is tender.

Add peppersoup spice mix, crayfish, ehuru and uda seeds, and scent leaves. Taste for salt and seasoning – adjust if necessary. Cook further for additional 20 minutes.

Serve hot and enjoy! Pair with any side dish of choice. So, delicious, so satisfying!

HOW TO MAKE CATFISH PEPPER SOUP

🐟🐟Pepper soup is a popular Nigerian delicacy, and also a prominent West African soup that is prepared using various meats, chili peppers and local ingredients to give native flavours. We bring you this catfish pepper soup recipe. It’s an amazing healthy delicacy and enjoyed by all.🐠🐠🐠

🌹Ingredients
fresh catfish (or white fish of your preference)
Nutmeg seeds
Habanero Pepper/Hot pepper (to taste)
Fresh mint leaves (bay leaf, basil chopped)
1 fresh tomato
Large onion, sliced
Minced ginger and garlic
All-purpose seasoning
Bouillon cubes (Maggi or Knorr)
Salt to taste
2 big stock cubes
Tip: feel free to use local spices of your choice, if desired.

🌹Preparation
Get the fish ready; wash and clean fish with salt and warm water to get all the slime out. Cut into sizable chunks and put in a cooking pot.

Pour water just cover the fish, add seasoning cubes and bring to the boil.
Roughly blend tomato, pepper with some of the onion, add ginger and garlic.

Once it starts to boil add the blended ingredients, onion, and the mint leaves and continue cooking.

Add salt, adjust seasonings to taste, thickness of soup with water and spices. Remove bay leaf.

Serve hot with boiled green plantains, boiled white or boiled yam. It can be eaten alone with your favorite drink. Enjoy!

I met my wife in Summer of 2004 in the states. I had only been in the states for 8 months (Crazy right?) finishing my masters in Environmental Science.

I happened to have her in the Organic chemistry lab I was teaching at the time. She was beautiful and the most intelligent student I had. And most of all, she was STUBBORN!!! She intrigued me.

I was hesitant, she was 20. But she was so matured and beautiful, I just felt like she guys had to be flocking over her.

One day I pulled her out of class and asked her to stay behind and help me clean the lab I didn't need help but I just wanted to TALK to her I then found out that she and her family was from Benin and I was very excited. She was beautiful, intelligent, AND from my tribe, but it gets better,

So I finally got the nerve to ask her out and to my surprise she said yes with no hesitation. I took her out to eat, we walked on the canal near my house and we talked about love, family, and God. I fell in love with her that day, July 14th, 2004. We dated for 9 months and then I proposed to her.

We got married July 14th 2005 and we had our twin girls, Imade and Osato on June 29th 2006. Really short but I am a direct kind of guy.

How We Met

With nothing to do on a Saturday a few years back, I decided to drive down to Saskatoon (Canada) with my flatmate. I had the day all planned; arrive early in the morning, binge watch my tv shows and do absolutely nothing – pure bliss. On getting to Saskatoon, I was asked to drop off a package for K’s sister who I had met 10 years ago. I dropped off the parcel and was hanging out with her daughter when K comes up to introduce himself. I quickly shifted my attention to this intriguing young fellow that had just moved from Nigeria for his masters. I wasn’t “looking” so I enjoyed the conversation and attention. Later in the day, he invited me for lunch with his sisters at a restaurant downtown, which I politely declined.

He (with the help of his sisters) finally succeeded in persuading me to go to lunch with them. We had a nice lunch, talked for a few hours and right before we said our goodbyes, he asked for my number. I remember him saying that I shouldn’t feel obliged to give it to him just because of his sisters. We exchanged numbers and that was the beginning of our beautiful journey.

How I Met My Wife💞💝💖💕

We both met at NYSC Camp where we were drafted to the same platoon. Though, we were sworn enemy at camp due to egos.

Surprisingly on the last day after receiving posting letters, I felt that emptiness in me and I started looking for her but all efforts proved abortive. Little did I know that she acted the same way.

As destiny we put it ,I got information about her location from a platoon-mate whom I met at the church during my trip to capital city where she was posted to.
I acted on the info and paid her an unscheduled visit.

I was suprised at the response of her 3 roomates when I mentioned my name.They later disclosed to me that she had been having sleepless night for the past 2 month and the name on her lips was my Name.

I wooed her same day and she gave her consent and the rest is history now. We left the state together and landed in my parents house for introduction. Lucky enough for us, we stay very close to ourselves in the state.

Now, this is us, getting married and thinking of having our own children

🌹Embarrassing Moment In My Life🌹

Earlier this month in a gym house, I met a very beautiful and well-shaped lady and 2 of her friends.

I got into discussion with 3 of them, as interesting and funny our discussion was, the one I was interested in jokingly came to me and sat on my laps, almost close to my diiick, I locked up.

The more we gist, the more she shakes her ass, I got hard and uncomfortable, wanted to stand her up but thought it'll look embarrassing to her before her friends, I still locked up.

She was putting on a hanging belly-button revealing sleeveless with a very tight leggings. Her nyash no dey stay one place, she dey gist with both mouth and nyash.

I was just so hard! I couldn't bear it any longer as I faked a call and jokingly tried to end the discussion, telling them that I'll be leaving to catch up on something. She stoop up, standing before me with a huge ass, she pleaded that I'll drop them off.

As all these were happening, my diick was as erect as f**k, almost getting noticeable while seated that i can't even stand up before them. I obliged to her request, but was still seated.. I no wan cast myself by standing with my errected preeq because i was putting on sports trouser.

They were expecting me to stand but i pretended to be so weak and tired, hoping and looking for thoughts that will bring down my stubborn john-Thomas.

As God may have it, immediately i thought of BUHARI and NNAMDI KANU, you need to see how my stubborn jnr dropped like music album, I smiled at them without them noticing the reason behind that smile, then stoop up and left with them.

Omo since that day, I no dey miss small mini-tight and Buhari picture anytime I dey go gym.
