Upgrade those chicked wraps!🔥🔥 1. Slice up your chicken and season with your favourite mix and some oil - leave this for at least 20 mins or overnight in the fridge to get FLAVOURY 2. Make your wrap dough, just go by eye because then youre more likely to keep doing it. Boil the kettle and just let it calm down, then add it to your flour and salt - we want to mix it into a ball that isnt too wet but also not too dry, go by feeling (i do have a recipe in the from scratch series for these but i prefer by eye)… then knead for a few mins to develop some gluten and leave it to chill out 3. Add your chicken to the pan with veggies like onions and peppers and cook through for about 10 mins 4. Then grab a ball of dough, grab a rolling pin or bottle and roll out your dough into wraps on a floured work surface 5. Then add then to a hot frying pan or hot plate to get some nice colour! 6. Now layer up your wraps, yogurt down, some cucumber and tomatoes, your chicken n veggies, pickled cabbage if you have it, coriander and sweet chilli sauce (really just whatever you want) 7. Restaurant style NACHO CHEESE 🔥🧀 The secrent ingredient of sodium citrate is the answer! I literally just got a pot on amazon, it essentially locks up the calcium and allows the casein to run freely - meaning its thick and creamy!! 1. Grate cheddar cheese and make aure you weigh it 2. Use around half of that weight in milk (but add more if you need to) 3. Then we want 3% of the cheese weight in sodium citrate into the milk on the heat 4. (This is actually so class) - homemade bagel recipe is a few vids back - open up your sausage and shape it around the bottom of the bagel (it will house the egg) - get this into a pan and then crack an egg in the hole - lid of with some water to steam for a few minutes - parmesan on, ketchup - ENJOY!!! #bagel #breakfastsandwich
From scratch ep 14: PASTA 🍝 No equipment needed! A good rule of thumb is every 100g of flour used, we use 1 large egg 00 pasta flour is the best quality and will produce the best tasting pasta but i just used all purpose plain flour and it was delicious! Its much easier to mix the flour and egg in a bowl too to save the mess! Save the dough for 24 hours in the fridge or up to a month in the freezer! 1. Mix 300g flour with 3 large eggs, a pinch of salty salty flavours & a good drizzle of olive oil! 2. Then flour your work surface and knead the dough for a few minutes until it becomes a smooth tight ball 3. Wrap in cling film or stick in a bowl for at least half an hour at room temp or overnight in the fridge 4. Then cut into quarters & grab a bottle or a rolling pin and roll it out into a strip.. i like to get the pasta to be thin enough to be translucent 5. Then fold it up like a tube, and then slice even strips of spaghetti style pasta - make it as wide or thin as you like - make sure they are well floured so they dont stick 6. Bring a saucepan of water to a boil with plenty of salt and boil for 2 mins 7. Drain and serve with your favourite sauce and sides!!!🔥 #pastarecipe #homemadepasta #pastafromscratch
Ep 10 FROM SCRATCH: PESTO 🍃🔥 This is so class and so much better than shop bought, play around with ratios and weights and ingredients but heres a rough guidline: 1. Add a big bunch of basil to a food processor (or parsley or rocket OR all three!) 2. Add around 60g toasted pine nuts (or i used sunflower seeds, almonds, pistachios) 3. Add around 60g grated parmesan 4. The zest of a lemon and juice of half if you fancy! 5. A good solid pinch of salty salty flavours 6. And around 2-3 cloves of garlic 7. Blend it up to your desired consitency! Will last around a week in the fridge!!! #fromscratch #pesto #homemadepesto #pestorecipe
From scratch ep 9: OMELETTE 🍳 Mastering an omelette is such an underrated thing imo… its such a class quick filling and nutritious snack OR big meal - either way it’ll keep you full and satisfied for a long time! 1. Crack your eggs into a bowl, whisk (i dont season now to avoid the salr brwaking down the eggs too much and whites getting watery) 2. Non-stick pan on medium heat (i also use cast iron and stainless steal but if you have a non-scratched non stick its perfectly safe and soooo good for omelettes) 3. Get some butter in and then pour in your eggs - keep moving them around with a spatula like its scrambled eggs - but ensure all of the runny egg covers the entire pan - season with salt now 4. When we become more stable, take off the heat (the residual heat will continue to cook the egg) - then grate in cheddar and fresh black pepper 5. Now take one side of the omelette and fold it in, then roll it and do the same to the other side to meet in the middle. Tuck in the ends and fall onto a plate with the seamside down 6. Top with parmesan, pepper, chives & some flakey ruby salt!👊🏻👊🏻❤️❤️ 7. Ideally its still a little runny inside, add veggies if you wish or have with bacon/fish etc… ENJOYYYYY 🔥🔥 #omelette #fromscratch
Pancakes 3-ways 🔥👌🏻 🥞 American Style Pancakes 💪🏼 Protein Pancakes 🇫🇷 Crepe Style 🥞 Maple & Bacon American Pancakes: 1. Mix 250g plain flour, pinch of salt, 2 tsp baking powder, 300ml milk, 3 tsp sugar, 1 egg 2. Get some streaky bacon in a hot oven for 10 mins to get crispy 3. Heat a frying pan on medium heat and melt some butter 4. Pour in your mix, try get 2 or 3 on the go at the same time 5. Flip when it starts bubbling, make sure you have good colour 6. Now layer up, pancakes, bacon and cover in maple syrup and icing sugar - ENJOY Protein Pancakes 💪🏼 1. In a shaker, add 1.5 scoops of ESN pancake mix and 145ml milk - shake 2. Add to the pan on medium heat with melted buttter 3. Stack them up, add yogurt, berries, seeds, honey 4. Literally 30g protein in no time! 5. Use code EATS to grab a deal! Caramelised banana Crepes 🇫🇷 1. Mix 100g plain flour, 2 eggs, pinch of salt, 1 tsp sugar, 300ml milk 2. Pan on medium heat with melted butter, pour in the mix and cover the whole pan 3. After a few mins, pull back the sides, make sure it isnt stuck and then flip 4. Add butter, brown sugar, cinnamon and a banana to a pan and leave to get caramelly for a few mins 5. Ep 3 STEVIE SNACKS: HEALTHY ICE LOLLIES 🍭 These are so class & so easy, stevie is having like 2 a day atm which isnt great but is better than the normal shop bought ones.. and cheaper! You can deffo mix up the fruit, a pineapple and mango one would be LOVELY 1. Blend together: - 1 banana - a handful of frozen blueberries, raspberries, strawberries - 1 tbsp of seeds (i used chia, hemp, flax) - 2 tbsp greek yogurt - & enough milk to get it to the right consistency 2. Pour into your ice lolly molds & freeze for a few hours 3. Use this same trick to create “healthy ice cream” they love it! Top with chopped nuts and fruit too! HONEY-BUFFALO CHICKEN WINGS 🍗🔥 Sometimes we just gotta FRY! So very tasty - if you want more of a crispy wing with little bits, you could add an egg to the flour and get it sticky! Also potato starch if apprently the best for crisp so ill try next time! In my opinion the best oil is either peanut or rapeseed (high quality) as these have high smoke points! I also paired these with a good baked sweet potato and a little salad… keep it half healthy and get that volume in there!!!👊🏻 1. Slice the wings in half, down the joint 2. Add to a bowl with 1 part flour, 1 part corn/potato starch, 1 tsp baking powder & a mix of seasonings 3. Here is where you could add an egg to get it slimy or some people add to a batter 4. Get your oil to about 190 degrees C, and drop it and fry for a good few mins until youre happy with the colour 5. Add to a rack or paper towels to drain off the oil 6. Add to a bowl with honey, hot sauce & more seasoning plus PLENTY of parmesan 7. ENJOY!! #chickenwings #wings #buffalowings #honeywings

Well that didnt go to plan… 🤣😩🔥 Chocolate banana bread is CLASSSSS 1. Whisk and cream 140g softened butter with 150g brown sugar (i did half light, half dark) 2. Add 2 eggs & then your mashed bananas 3. A tsp baking powder, 150g flour, 15g cocoa powder, pinch of salt 4. Chop up some dark chocolate and get it in! 5. Into a loaf tin and in the oven at 160 degrees C for 40 mins 6. Dont drop it 7. Let it cool, enjoy with yogurt and berries!!👊🏻🔥 #bananabread #bananabreadrecipe #chocolatebananabread
EASY HOMEMADE PEANUT BUTTER 🥜 (2 ingredients!) This is class and soooo very easy 1. Grab a bag of plain, blanched peanuts and roast them for 10 mins at abut 200 degrees until they’re slightly toasted and you can see some oil oozing out 2. Then add to a food processor or blender with a pinch of salt and blend until smooth (keep bashing down the sides, trust the process) 3. Jar it up and fridge it for up to a month if it last that long!! CLASS #peanutbutter #homemadepeanutbutter
From Scratch Ep 7: RASPBERRY JAM 🔥 So very easy, so very simple, so very tasty 1. Grab 500g of either frozen or fresh raspberries & mix with 500g sugar (equal parts of both) 2. Get on the heat and being to a foamy boil (you can add butter to reduce the scum if you want) 3. Remove from the heat and add the juice from a lemon & half a packet of pectin if you have it 4. Now cool 5. Meanwhile, wash out your airtight jars - just wash them out id youre going to keep your jam in the fridge - if you want to cupboard them then sterilise them in the oven for about 10 mins and cool 6. Add your jam, lock it tight and cool fully 7. Itll last open in the fridge for 1 month or sealed shut (as long as you sterilised) in the cupboard for a few months! 8. ENJOY AND SLAP IT ON EVERYTHING #homemadejam #jamrecipe #jam #raspberryjam

Chinese takeaway style beef stir fry 🔥🤤 - grab some cheap cuts of beef - slice up as thin as you like (if you want really thin, stick the meat in the freezer for an hour before) - then mix in salt, pepper, tsp cornflour, 1/4 tsp bicarbonate soda - then fridge it - then mix soy sauce, honey, rice wine vinegar, sesame oil & then mix some corn flour with water and add to the mix - get the wok/frying pan super hot with oil, and then fry off your beef in a few batches - add your sauce - add in your chopped veggies - get some noodles on the go - mix it all together - stick on a plate & top with parsley, spring onion, sesame oil & black flakey salt! (I promise actual snacks are coming, Stevie just isn’t too down with this work life) Key points about choking hazards here, always chop or pop everything up!! Always go for colour, a variety of veg for micronutrients, volume and fibre.. cut in different ways to let her get tactile! Protein is very key for fullness and overall health.. this chicken breast from Tesco is so very class.. really high quality and easy to pull apart to make safe A boiled egg or BabyBel is also great not only for the good fats but also to actually sit and peel them both!
