- juice of 1 lime
Cilantro lime rice
- 180g washed uncooked rice (cook to package instructions)
- juice of 1-2 limes
- handful chopped cilantro/coriander
- salt to taste
Creamy Chipotle Sauce
- 250g fat free cottage cheese
- tbsp chipotle paste
- tbsp honey
- tsp garlic powder
- tsp onion powder
- lime juice
Homemade guacamole (can use store bought)
- 2 (240g) medium avocados
- 1 medium red onion (diced)
- handful chopped cilantro/coriander
- 1/2 lime juice
- tsp salt & pepper
- tbsp olive oil
Homemade Pico de Gallo (can use salsa or store bought)
- 4 salsa tomatoes (diced)
- 1 medium red onion (diced)
- handful chopped cilantro
- lime juice
- salt to taste
Other ingredients
- 4 plain tortillas
- 120g grated cheese (I used mozzarella)
Storage & Heating ♨️
- Store for up to 5 days in the fridge
- To reheat, wrap in a damp paper towel microwave on medium-high power for 2-3 minutes. Optional toast in the pan after for crispness
