Chef Hideaki Sato from restaurant Ta Vie shows us his take on the traditional French dessert blancmange. Chef Sato’s Asian twist involves infusing the blancmange with jasmine, and accompanying it with fresh Japanese melon, to create a lighter and fresher dish more suited to hotter climates.

Ta Vie in Hong Kong is a two-Michelin-star restaurant.

Chinese people cook spring rolls at Lunar New Year because they are said to resemble gold bars and are therefore auspicious. But you can make these any time, and they're sure to go down well.

Easy sakura shrimp aglio e olio pasta recipe - a fusion treat for two

A twist on the classic Italian pairing of aglio e olio - garlic and oil that's cooked with chilli flakes. Bonus: this recipe yields enough to have some topping leftover to spice up other meals. 🌶️🦐

Take a classic Italian pasta sauce, add tiny Japanese shrimp, serve with fine pasta topped with tobiko caviar (flying fish roe). Fine fusion fare for two, with sauce left over for next week.

I love XO sauce. Some might even argue XO sauce makes everything yummier. One thing's for sure, XO sauce with shrimp roe noodles and an onsen egg? MmMmm

SCMP Cooking is made up of a small team of food lovers who are fortunate enough to live in Hong Kong, where they can indulge in all types of cuisine. Several of them - Susan, Nellie and Jonathan - have been working together for years to cook, style and photograph the enticing photos you see in Susan’s recipe column in the SCMP Post Magazine.

Our aim at SCMP Cooking is, well, to get you cooking. But that’s not all; we want to spread the news about the huge diversity of food in this part of the world - not just new dishes to try, but also interesting ingredients that you may be curious about, but which you don’t know how to prepare.
