I'm really loving the spring like weather this week. 😍 It makes me feel like anything is possible.
It really bothers me to see women bringing down other women for their appearance. I see it so much and it just ignites me.
I spent some time reading through the comments on a bunch of other people's videos and they just truly made me sad. These were women in relationships who had just given up, felt defeated and were settling for how their spouses treated them. This unfortunately is common for a lot of people, but especially overweight women.These women had partners who made them feel terrible about their weight, cheated on them, ignored them. They were lost, looking on the internet for people to talk to, to feel like they weren't alone.
It was a lot to read and take in. It upset me for them. It made me reflect on my own marriage, which is far from perfect. We have our issues and arguments too, but I stand up for myself, and I push back. I'm feisty, outspoken, and I speak my mind regularly. But I encourage him to speak up and share what bothers him too and we work on it together. And that was work. He wasn't always a communicator, or someone who spoke up when something bothered him. Years would go by and I'd have no clue something I did bothered him. But for our relationship to get stronger, we had to work together to hear eachother and take eachothers feelings into consideration.
When my husband and I first started making videos on his page I was so worried about people telling him he had a fat wife. And they did, in droves. But it didn't bother him at all what people thought of me. He was proud to share me, our relationship, the videos, etc. I didn't realize that people would resonate with us so much.
My friends...choose to be happy. Choose to stand up for yourself. Choose to not settle with being treated like crap. Choose happiness 😊

Tonight's dinner. Italian sausage sammies. I'll have mine on a low carb wrap and they will have rolls. A little sauce and provolone cheese and its good to go.
Last nights dinner. Garlic butter steak bites 😋
I used the beef stew cut of meat, seasoned it with rosemary, chopped garlic, salt, pepper, garlic and let it marinate for 5 hours before cooking.
I have been in love with cooking with cast iron lately! It really makes a difference in how food tastes.
This was chicken tenderloins that I cooked for chicken fajitas the other night. I marinated them in Kinders Fajita Blend seasoning for a few hours and then popped them on the cast iron. I had made extra thinking we would have leftovers, but my family scarfed them all down 😂
I didn't realize how much I held myself back until sometime over the last 3 years. So many opportunities wasted because I couldn't get out of my own mind, until I could.
I became unapologetic for what I look like.
I stood up for myself more, and stopped being apologetic about it. I deserve what I want in life just as much as the next person.
I stopped caring what other people thought about me. Why does their opinion matter?
I started to take risks that I may not have done otherwise.
I took an opportunity to put myself out there, to help people who struggled with the same things as me.
I stopped making excuses and held myself accountable. If we aren't accountable we can't grow.
I realized that I am much more than just what you see on the outside. It took me too long to realize that.
Look in the mirror and have conversations with yourself. You might learn that you have been holding yourself back too 💛
I have been sitting on this story for a few weeks. This is something that happened to a friend of mine and it has bothered me since she told me about it.
She is in the process of looking for a new job. She had a phone screen interview for a position that seemed to go really well. It was about a half hour long, the conversation flowed, and it ended with the owner wanting her to come in for a working interview. They had already discussed most of the important topics such as experience, schedule, pay, etc so it was just down to the working interview. Now, I've never had one but I assume it to be a few hours in the role that you are interviewing for, like you are assigned work and sees how you do.
She goes for interview and she was in and out in less than 10 minutes despite this supposed to have been a working interview. He had showed her around and then told her he had a lot of candidates and would be interviewing for the next month, and would let her know.
She continues to apply for other positions and notices that he reposted the job 2 days after she had interviewed so clearly he didn't have as many candidates as he stated.
Based on all of this, she feels that her appearance as a plus sized person was likely judged as soon as she walked in the door. And based on all that she shared, I agree with her. And I don't say that lightly, but in this case I really don't see how it went from a great phone conversation interview that had a working interview set up and turned into her walking in the door and being sent on her way in less than 10 minutes without really discussing any further job details beyond a quick tour.

Yesterday, I went out for the first time since last July without a wig on. Besides school drop off where I am the hot mess express in mismatched jammies and hair pulled back barely awake.
I know it may seem insignificant, but it was nice to see it looking more like it should. My hair is still pretty thin and shorter than I like, but it's getting there. Small wins 🏆
Always look at the labels if you are watching carbs when you go for packaged items.
These all got my attention because of the ingredients on the front of the package, but then once I turned it around I was surprised by how carby these were. Especially the mushroom chips being the highest out of the group.
What has been the biggest surprise to you since paying attention to labels?

Easy low carb lunch. I cooked these unseasoned from frozen for 30 minutes in the air fryer because I'm trying a new Buffalo sauce on them.
Usually I pop them in for 15 minutes, then coat them in seasoning, and put them back in for another 15 minutes to finish cooking.
Low carb, versatile and easy to make.
God help me. One of the most delicious local bakeries has Keto Friday baked goodies! I love it as a low carb gal ❤️
Have you ever tried any bakery made low carb goodies that you loved?
Prepping some broccoli for the next few days. Everyone has different preferences here, but I like mine where it still holds its shape, but it is very soft. This is hubby approved 😊 I forgot to take an after picture 🙃
I use canola oil to coat the broccoli, generously coat it with my Kinders Prime Steak seasoning generously. That blend has black garlic and Truffle in it. I mix it all together to make sure it is all coated.
I pop it into the tray and cover with aluminum foil on 400° for 20 minutes. I stir it up and then cook it another 10-15 minutes. It really depends on how tender you want it.

"Stuffed crust pizza"
I saw this pop up a few times, and decided to give it a try.
Low carb tortilla with string cheese on the four sides. Roll the sides to form the crust, and use skewers or toothpicks to hold it in place.
Add low sugar sauce, cheese, and any toppings or seasonings you like. I also melted some butter, added some powder garlic and grated parmesan cheese to the butter, and brushed that on the "crust".
I popped it into the oven and cooked mine on 400° for about 10 minutes.
Total carbs will vary based on what sauce and tortilla you use.
One of my favorite snacks. Beef salami chunks with pickles, and on my finest dishes of course 😉
This is the pickle juice soaked whole chicken roasters that I cooked up yesterday. I cooked two at the same time because this was feeding the whole family, and I wanted leftovers for the hubby's lunch.
I marinated the chickens in pickle juice and fresh dill overnight, and then just roasted them to the instructions on the package. I added dried dill, and some Mortons Nature's Seasonings blend before cooking them.
It took about 3 hours at 400° for them to come to temperature. I covered it with foil for the first two hours and then took the foil off for the last hour for the skin to crisp up.
Soda was one of my biggest habits to break, and I realized it wasn't necessarily the taste of soda, but the carbonation that I actually wanted.
I'm picky about aftertastes, but these Polar Seltzer ades are my new favorite seltzer/sparkling water drinks. No aftertaste for me and they have great flavors.
If you crave soda, these are a great substitute.
I have chickens marinating in pickle juice and dill so whenever I open the fridge it smells delicious 😋
I was scrolling through my phone and came across these pictures.
I had actually lost about 20 pounds prior to leaving for this trip, and I felt so confident. I took all kinds of pictures and selfies, I put myself out there.
Then I looked back at these pictures the first night back at the hotel. Any shred of confidence I had flew the coop. I was so unhappy with how my body looked, but I missed how happy my face looked in the first two pictures.
By the picture with the car and balloons you could see in my face that my insecurities were winning, and it was all based off of my thoughts on my own pictures.
We really are our own worst enemy at times. Has anyone else experienced this?
You wake up, and start going about your day.
You think about the snacks in the pantry.
You think to yourself, "No. I can't have those snacks because I'm starting today."
You scroll through social media. You see people who look like what you want to look like, or doing things you want to do, and you get mad at yourself for not being where you want to be in your life.
You feel defeated. You think about the pantry snacks.
You get dressed for the day and your pants are a little snugger or the shirt you are wearing makes you feel like you need to keep pulling it down.
You start to think "Why bother. I'm never going to be able to stick to a "diet"."
You are running late, the kids are driving you wild, you didn't have time to make breakfast, and you are feeling overwhelmed. You are just barely getting everyone out the door.
You pass the drive thrus on your way to work. You know that you want to "behave" but the convenience of just hitting that drive thru and getting a cheap meal on the go is what you "need" right now.
So, you stop. You eat. Then you are mad at yourself because you feel like you failed. It's not even 8am and you have given up for the day and will "try again tomorrow."
Anyone who says that losing weight is easy, is probably not being truthful. It is one of the hardest things you will ever experience because you are constantly at war with yourself. It's literally a battle of you vs. you.
It's which version of you is the stronger one that day? Which one "wins". The reality is that you have to learn to coexist with each version. To give yourself grace when you need it, and to also to be firm with yourself when you need it. To hold yourself accountable because the only person who can in this case, is you.

Weight loss is you against yourself. It's mental. It's choices. It's hard vs. hard.
Little by little is better than nothing at all. Celebrate the little victories even if the day wasn't perfect.

This is the reality of weight loss. I'm never going to tell you it's easy or tell you that it's not ok to have bad days. You are a human being and you will struggle. But this struggle does come with rewards when you are able to find the way that works for you and your life. #weightloss

Being overweight or underweight is an experience that unless you have walked the walk, you may not understand it. Don't tell someone who experiences it how they should feel when you haven't been in their shoes before.
Here's typically what is in my fridge as someone who eats low carb. I also keep butter and cream cheese on hand which didn't make it into the video, and my meats are frozen until I am ready to use them. These are all things I use to create my meals. I hope this helps show that it doesn't have to be complicated to have some things on hand to make meals. #lowcarb #weightloss
Sooo many emotions! I just officially bought a pair of size 14 pants! I was in a size 24 when I started. I feel like I looked like a pillow in this before video and everything I see it, it bothers me. But this life, we grow from where we are uncomfortable. #weightloss

This was the first soup of the season. Super easy and all in the crockpot, except the bacon that you have to cook ahead. In the crockpot for 6 hours 👇 4 pounds of chicken breast cut up 1 pound of bacon cooked and diced 4 cups chicken broth 2 bricks of cream cheese 1 - 1oz packet of ranch seasoning mix. After 6 hours add 1.5 cups of shredded cheddar cheese, and let cook until melted. #recipes #lowcarb
