Stuffed Eggplant

Ingredients:

1 tsp each: paprika, coriander and cumin
½ tsp cinnamon
2 eggplants
olive oil
salt
black pepper
1 onion
500 gr ground beef (or turkey, chicken, lamb)
4 cloves garlic, minced
1 ½ cups cooked basmati rice
100 gr cherry tomatoes
1 Tbsp chopped parsley
1 tsp chopped mint leaves

Preparation:

Preheat the oven to 200°.

Combine paprika, coriander, cumin and cinnamon.

Place the four eggplant halves, flesh-side up, onto the baking sheet, drizzle with oil, sprinkle with ⅓ of the seasoning mix and with salt and pepper. Roast until tender, about 35 minutes.

Heat 1 tablespoon oil in a pan over medium-high heat, add in the diced onion and saute for a few minutes until tender, then add the ground beef, the remainder of the seasoning mix, salt, pepper and garlic and cook until the meat is cooked through.
Add the cooked rice, chopped cherry tomatoes, chopped parsley and mint, and mix.

Fill each roasted eggplant with warm filling, and place onto a plate.

Chicken Parmesan Sandwich



Ingredients:

1 can of marinara sauce (or make it yourself)
4 ciabatta rolls, halved & toasted
150g chicken breasts
250ml vegetable oil
75g breadcrumbs
50g grated parmesan
70g flour
200g mozzarella, sliced into rounds
2 eggs, beaten
1 tsp salt
1 tsp garlic powder
3/4 tsp dried oregano
1/2 tsp black pepper

Instructions:

Cut chicken into 4 slices. Lay over cling film and bash with a rolling pin or mallet until even thickness.
Combine salt, garlic powder, dried oregano and black pepper.

Line up 3 bowls:
1 - flour with half seasoning
2 - eggs
3 - breadcrumbs, parmesan and the rest of the seasoning.
Coat the chicken in the flour, then into the egg and finish with breadcrumbs.

Heat oil over medium heat and fry chicken for 4-5mins on each side.

Place fried chicken on top of the bottom ciabatta halves. Spread over a few dollops of sauce, then top with mozzarella. Broil until golden.
Add the second ciabatta half and enjoy.

6 Healthy Salad Dressings

1. Apple Cider Vinegar Salad Dressing
1 cup olive oil
½ cup apple cider vinegar
½ Tbsp dijon mustard
1 garlic clove – minced
salt and pepper – to taste

2. Balsamic Salad Dressing Recipe
½ cup balsamic vinegar
¼ cup olive oil
2 tsp maple syrup
1 tsp dijon mustard
1 garlic clove – minced
salt and pepper – to taste

3. Seed Butter Salad Dressing
½ cup seed butter or nut butter – sunflower seed, almond, peanut butter, etc.
3 Tbsp tamari sauce or soy sauce
2 Tbsp maple syrup
1 Tbsp apple cider vinegar
2 Tbsp water
½ Tbsp freshly grated ginger
1 garlic clove – minced

4. Honey Mustard Salad Dressing
1 cup olive oil
½ fresh lemon – juiced
1 Tbsp apple cider vinegar
2 Tbsp honey
2 Tbsp dijon mustard
salt and pepper – to taste

DIRECTIONS: Combine all ingredients together in a mason jar. Seal the lid and shake up to mix. Store in the fridge for up to two weeks. Re-shake the jar before using it again.
