So happy you guys loved this air fried chocolate oatmeal cookie! 🍪 💫

If your seeing it for the first time then this is your sign to go make this easy & delicious snack. It’s super simple and quite filling, the perfect pick me up snack if you ask me and probably one of my favorites. 😋

Ingredients:
•1/2 cup oats (use gluten-free oats)
•1/3 cup of a ripe banana
•1/2 tbsp peanut butter
•2 tbsps chocolate protein powder (use protein powder of choice)
•1 tbsp coconut sugar (optional if your banana isn’t as sweet)
•1/4 tsp of pure vanilla extract
•2 tbsps chocolate chips (optional, use a dairy free option if vegan)

1.) Mix all the ingredients together in a bowl.
2.) Using a spoon, add the cookie mixture to the center of a parchment paper lined air fryer basket/ or just grease the bottom well.
3.) Form a cookie with your hands (if sticky, lightly wet them). *Note you can add a piece/square of dark chocolate to the center of the cookie and cover it up with some of the cookie mixture for a melty chocolate center.
4.) Bake for 7 minutes in the air fryer at 350F and voilà!

*Note, you can also bake in the oven 350F for 10-12 mins.

Pumpkin cookies w maple cream cheese glaze🧡🤍

Not gunna lie, I was disappointed when we ran out of these in under a day 🍪. Yup, they were THAT good 🥺

I love pumpkin + chocolate but I wanted to make some cookies where you could really appreciate the pumpkin flavor. And that’s how these cookies were born. They’re (GF + vegan friendly) are incredibly soft, moist, full of pumpkin flavor and that maple cream cheese glaze is just the perfect touch.

Soo, if I haven’t already made you crave these, i think I’ll go remake these right now and you should too! 🙌

Ingredients:
•1 1/4 cup almond flour
•1 1/4 cup oat flour
•2 tsps pumpkin pie spice
•1 tsp baking soda
•1/2 tsp baking powder
•1/4 tsp salt
•1 can of pumpkin purée (15 oz)
•1/2 cup maple syrup
•2 flax eggs
•2 tbsps coconut oil
•1 tsp vanilla extract
•1/2 cup pecans/ walnuts

Maple Cream cheese glaze:
•2 oz cream cheese
•2 oz maple syrup
•1/2 tsp vanilla extract

*Makes 18 cookies

Method:
1.) Preheat oven to 350F and line/ grease a baking sheet with parchment paper.
2.) Add the almond flour, oat flour, pumpkin pie spice, baking soda, baking powder and salt to a bowl and mix.
3.) In a separate bowl, add the wet ingredients (pumpkin purée, maple syrup, flax eggs, coconut oil and vanilla extract). Mix.
4.) Add the dry ingredients to the wet and combine.
5.) Add in the chopped pecans/ nuts, mix.
6.) Using a cookie dough scooper or a spoon, form 18 cookies and place on the baking sheet.
7.) Bake cookies for 25-30 minutes and remove from oven once a tooth pick comes out clean.
8.) While cookies cool, prepare the maple cream cheese glaze by combining the cream cheese, maple syrup and vanilla extract using an electric mixer.
9.) Drizzle the glaze over the cookies and devour.
