Ingredients:
1 lb of large shrimp (skin on & deveined)
1/2 C flour
Garlic powder
Salt
Pepper
Paprika
Cayenne pepper
Onion powder
1-2 tsp of Sugar
1 stick of unsalted butter
1 bulb of garlic (chopped)
1-2 Lemons
Oil
Green onion (optional)
Mandarin orange zest (optional)
Directions:
1. Chop garlic or use a small food processor.
2. Clean & Pat dry shrimp
3. In a mixing bowl add flour, garlic powder, onion powder, salt, pepper, cayenne & paprika (extra paprika if you want more color)
4. Mix clean shrimp in with the flour and aside.
5. In a pan on medium low heat, add butter and let it melt.
6. Once melted add garlic and let it cook for about 2 minutes.
7. Then add salt (not too much), onion powder, cayenne, paprika & sugar.
8. Cook for another 2 minutes (be sure to cook on low heat to avoid burning garlic)
9. Then add 1/2 lemon juice & mandarin orange zest (optional)
10. Transfer sauce into a small bowl.
11. In a clean pan, add some oil & heat should be medium high.
12. Once the pan gets hot, add the shrimp. Let it cook for a few minutes on each side until golden brown.
13. Turn the heat down & add some of the sauce & fresh lemon zest. Sauté with the sauce for 1-2 minutes.
14. Serve up w. Rice & top it off w. Green onions & fresh lemon juice 😄🧡

Ingredients:
2 lbs of gold potatoes (peeled & cubed)
1/4 white onion (diced)
5 garlic cloves (chopped)
2-3 tbsp of Cajun seasoning
2-3 tbsp of flour
1 tbsp Garlic powder
2 tsp Onion powder
Salt (to taste)
Pepper
32oz of Chicken broth
1/2 c of milk
2/3 c of heavy cream
2 tbsp of butter
Bacon
Green onion
Cheese
Crema or sour cream
Directions:
1. In the pot cook the bacon until it gets crispy then remove & set aside.
2. Remove some of the bacon grease. You don’t want some in the pot but not too much.
3. On medium heat, Add onion & garlic then sauté for about a minute.
4. Add butter then slowly mix in the flour to avoid clumps.
5. Add potatoes & mix well. Then add seasonings, Cajun, salt, black pepper, garlic powder, & onion powder.
6. Cook the potatoes for about a minute, turn the heat down to low & add broth, milk, & slowly mix in heavy cream.
7. Bring the soup to a simmer & let it cook for about 30 minutes or until the potatoes are soft.
8. Use an immersion blender to partially blend some of the soup or a potato masher to break down some of the potatoes.
9. Taste the soup and adjust seasonings to your liking.
10. Add some shredded cheese & mix well.
11. Top the soup off w. Bacon, cheese, green onion, crema or sour cream, & a little more Cajun seasoning.
12. I ate my soup w. toasted garlic bread 🤤

Spicy Popcorn Shrimp 🥵

Ingredients:
1/2 lb of peeled shrimp
1/2 c cornstarch
1/4 c flour
Salt
Pepper
Paprika
Garlic powder
Onion powder
1 egg
Green onion (topping)
Sauce:
1/3 c Mayo
1-2 tbsp of sriracha
1-2 tsp of soy sauce (go light on this, too much will make it salty)
Chili oil to taste
Directions:
1. Clean & peel (if needed) your shrimp
2. In a bowl add your dry batter: cornstarch, flour, & seasonings. Mix well & set aside.
3. Add the same seasoning to your shrimp (salt, pepper, paprika, garlic powder, onion powder). Mix well & set aside
4. For your wet batter, In a small bowl crack 1-2 eggs & mix well.
5. Drop your shrimp in the wet batter, then the dry batter (coat well), remove from batter & set aside. Do this for all the shrimp.
6. For the sauce: mix Mayo, sriracha, soy sauce, & chili oil in a bowl. Mix well & taste to add anything else if needed.
7. In a pan heat up some oil, & cook the shrimp for about 2-3 minutes. Make sure your oil is nice & hot so the shrimp gets golden brown.
8. Remove from oil & lightly salt. Then add sauce & mix well.
9. Top it off with green onions & drizzle some chili oil on top.

Tip: I parboil my potatoes and then pan fry. This saves so much time when cooking the potatoes throughly.
Ingredients:
1-2 Russet potatoes (cleaned & diced)
Garlic (chopped)
Red onion or shallot (diced)
Fresh Rosemary (finely chopped)
Fresh parmesan
Egg
Salt

Creamy Butternut Squash Pasta w. Spicy Italian Sausage, Sage, & Thyme 🍁🤤
The perfect fall 🍂 pasta 🍝 dish. This robust dish is nutty & savory.
TIP: Be mindful of your pasta & sausage mix ratio. I liked it with more of the sausage mix inside of the pasta. This gave it a robust flavor. I also bought my precut butternut squash from Trader Joe’s! Saved me so much time!
Ingredients:
8 oz Pasta of choice
12 oz of butternut squash
2 Spicy Italian sausage links (or more)
1 shallot diced
4-5 garlic cloves chopped
2/3 heavy cream
1 C of water
4-5 Fresh Sage leaves (Garnish)
2 fresh sage stems for browned butter
Fresh thyme
3-4 tbsp of unsalted butter
Salt to taste
Nutmeg to taste
Garlic powder
Chili flakes
Directions for sauce:
1. In a saucepan on low heat, add butter & sage. First I cooked 5-6 sage leaves for about a minute for the garnish.
2. Remove the leaves and add 2 sage stems in the butter. Cook this down until the butter browns.
3. Remove sage stems & remove butter from heat.
4. In a blender add squash, browned butter, heavy cream, water, nutmeg & plenty of salt. Blend & adjust taste to your liking.
5. Add more water or less depending on the consistency you’d like.
Directions Continued:
1. Cook pasta (follow package instructions & save some pasta water before draining)
2. Chop garlic & shallots
3. In a saucepan add cooking oil, shallots, garlic and sausage. Break down & brown the sausage.
4. In the sausage mix add fresh thyme (I used 4-5 springs of thyme), little bit of salt, and plenty of garlic powder. Mix well & cook thoroughly.
5. Remove sausage mix. In the same saucepan, add butternut squash sauce & reduce the heat to low.
6. Add a little bit of pasta water (if needed), mix it well. Then add cooked pasta & mix it in with the sauce.
7. Add sausage mix to the pasta & freshly grated parmesan cheese.
8. Serve right away, top it off with chili flakes, fresh thyme, nutmeg, shaved Parmesan, & the crispy sage.

Tortang Talong 🍆🍳 Filipino eggplant omelette
Direct heat is the preferred method when making this dish! You can also air fry like I did or broil in the oven. The traditional way is boiling … but I wouldn’t recommend that. 😅
Ingredients:
1-2 Chinese eggplants
2-3 eggs
4-5 Garlic cloves
Salt
Pepper
Garlic powder
1 tbsp of Fish sauce
Topping:
1/2 tomato (diced)
1 green onion
Salt
Pepper
Fresh lemon juice
Serve with:
White rice
Banana ketchup or regular
Spicy Vinegar or regular vinegar optional)
Directions:
1. Clean the eggplant well
2. In an air fryer add eggplants, garlic cloves & oil. Cook at 400 degrees for about 10 minutes
3. Remove eggplants and place in a bowl, covered for another 10 minutes.
4. Remove skin from the eggplant once it’s cooled down.
5. Mash roasted garlic
6. Gently mash the eggplant while keeping it in tact & connected to the stem.
7. Add roasted garlic, salt, pepper, & garlic powder on the egg plant
8. In a bowl mix 2-3 eggs, add fish sauce, salt, pepper, & garlic powder. Mix well.
9. Place eggplant in the egg mix.
10. Get a nonstick pan, add oil on medium high heat. Once the pan is ready add eggplant & scoop a little bit of the egg mixture on top.
11. Cook for about 3-4 minutes on each side & flip. Cook for another 3-4 minutes.
12. Serve fresh with white rice, top off with tomatoes & green onions mix. You can use banana ketchup or regular ketchup.

Make sure you finely chop your ingredients. Unless you don’t care like I didn’t that day 😅😂 I was the only one eating it so I said “oh well”. I shouldn’t cook when I’m hangry 🤣🤣🤣

Ingredients:
1 lb ground chicken
2 bunches of green onion
1/2 carrot (peeled)
4-5 garlic cloves
1/4 c of white onion
1/2 tbsp of corn starch
2 tbsp of soy sauce
3 tbsp of oyster sauce
Lemongrass 1/2 stalk (finely minced)
5-7 kaffir lime leaves (finely minced)
Black pepper
1/2 tbsp of chili paste in soya bean oil (optional)
Chicken soup powder (optional)
Directions:
1. Finely chop all of your fresh Ingredients
2. In a bowl add the ground chicken, all fresh ingredients, and sauces.
3. Mix well & add more cornstarch if the mix is too wet.
4. Cook a small amount of the mix to taste and see if you need to make any necessary adjustments.
5. Dip rice paper in some water, remove any excess water with a clean rag, add a spoonful of your mix and roll.
6. In a pan add frying oil and let it get hot.
7. Add egg rolls and cook for about 4-5 minutes. Turn so they can cook evenly on each side. Make sure the heat isn’t too high or the rice paper will break open easily.
8. Remove from pan and let it rest for a few minutes, then refry for about 2 minutes. This method is optional, I do this only for rice paper wrappers so it can be crispy.
9. Remove from heat & serve w. Romaine lettuce, cucumbers & cilantro.
10. I used a Thai chili dipping sauce as well

You know we love a budget friendly meal, so I work with whatever is in my fridge. This helps me get rid of veggies that I need to use asap. 🤗 I also bought my already cubed & frozen poke from WinCo; Half a pound for $5!
Tip: you can make your own poke marinade or buy the poke already done for you!

Poke marinade:
1/2 lb of tuna cubed
1 tbsp of soy sauce
2 tbsp of oyster sauce
Sesame oil (a little goes a long way)
1 small garlic cloves (minced)
Eel sauce:
1/2 C of sake (or mirin)
1/2 C of soy sauce
1/2 C of sugar
Spicy Mayo:
Mayo (or Japanese Mayo)
Sriracha
Toppings:
Fried wontons
Red onion
Cilantro
Green onion
Jalapeño
Avocado
Cucumber
Other topping ideas:
Sesame seeds
Furikake
Tobiko
Krab salad
Gochugaru
Crispy garlic
Directions:
1. Make poke marinade by adding fish & all marinade ingredients in a bowl. Cover & leave in the fridge until you’re ready.
2. Cut all fresh veggies & set to the side.
3. Make spicy Mayo. Add more sriracha if you like it spicy (I usually do). Taste as you go for the flavor you want.
4. Make your eel sauce. In a small saucepan cook sake, soy sauce, & sugar for about 10 minutes. Let it cool down to thicken up.
5. Cut diagonally into wonton wrappers. & fry into chips. Always add a little bit of salt to the chips after frying them.
6. Once the chips are done, assemble your nachos how you want & enjoy 🥰

1. Chop up all veggies: onion, garlic, cucumbers, tomatoes
2. Clean & thinly slice beef.
3. In a wok or pan add oil & chopped garlic
4. Add beef, black pepper and cook on medium low heat for 4-5 minutes.
5. Add all sauces: fish, oyster, dark soy sauce (or regular), sugar, & chicken bouillon.
6. Cook on low for 1-2 minutes.
7. Add cornstarch mix and let sauce thicken up. Keep heat low.
8. Taste to make any necessary adjustments
9. Add onions & cook for another 1-2 minutes.
10. Serve w. Fresh veggies & rice.

There’s so many versions out there.. you’ve got Thai, Lao, Cambodian.. everyone does their own variations of this delicious dish. But it’s Cambodian Food week baby! So we doin it this way today! 😋
Tip: some Khmer versions have galangal root in it too. You can add that if you’d like.. I prefer lemongrass & don’t be shy w. The kaffir lime leaves. They add an amazing depth of flavor!
Ingredients:
1 lb of beef (cubed)
5-6 kaffir lime leaves (thinly sliced)
2 1/2 limes
1/2 tbsp of sugar
3-4 tbsp of fish sauce
4-5 cloves of garlic (chopped)
1 shallot (sliced)
2 bunches of green onion
Lemon grass 2-3 tbsp (sliced)
1-2 tbsp Toasted rice (ground)
1/3 C. Cilantro (chopped)
5 Thai chilis (or less, make it your own)
Serve with:
Romaine lettuce
Cucumbers
Directions:
1. Cut all fresh ingredients: garlic, kaffir lime leaves, lemon grass, shallots, cilantro, green onions, & thai chilis
2. Toast your rice in a pan, w. No oil. Once the rice is toasted, ground in a food processor or mortar & pestle.
3. Season steak w. A little bit of salt (not too much because the fish sauce is salty) & pepper. Sear steak for about 5 minutes on each side.
4. Let the steak rest for 5 minutes before chopping into cubes.
5. In a bowl combine steak, all fresh ingredients, sugar, fish sauce, lime juice, mix well.
6. Then add toasted rice & cilantro. Mix again & adjust seasoning if needed.
7. Serve w. fresh vegetables or rice.

Chicken adobo is an easy one pot Filipino dish! You can switch out your protein if you’d like & use the same marinade.
Tip: if needed, remove the chicken from the pan at the end of cooking process & cook down the sauce until it reduces into a glaze.
Ingredients:
6-7 pieces of chicken (legs & thighs) I got the picnic pack of chicken
15 garlic cloves crushed (yes I said 15)
Green onions rough chopped (2-3)
1 C vinegar
1/2 C soy sauce
1/3 C dark soy sauce
1/2 C water
3-4 tbsp of palm sugar (you can use whatever sugar you have)
Bay leaves (I used about 7 but that’s because I love the flavor)
Fresh cracked black pepper
White rice
Directions:
1. Clean chicken & trim any excess fat
2. In a large bowl add chicken, garlic, sugar, soy sauce, dark soy sauce, vinegar, water, green onions, black pepper, & bay leaves.
3. Mix well, cover & let it marinate for a few hours or over night.
4. In a braising pot or pan add 1 tbsp of oil & sear chicken for about 2 minutes on each side. If you need to seat in portions do that, to avoid over crowding.
5. Add all chicken back in the pan & add the marinade.
6. Bring the chicken to a boil, reduce to low heat, cover & cook for about 25 minutes (my chicken pieces were small if you have larger pieces cook for about 35).
7. Flip the chicken and baste, then cook for another 25 minutes. The meat should be tender. You want to cook this slow & steady.
8. Once cooked, serve with white rice & top off with green onions & crispy garlic.

Below I’ll share how I made the rice & how I marinated my milkfish. The Tocino is store bought. You can buy milkfish already marinated if you want from any Filipino market. I just like to add extra vinegar & garlic to mine so I make my own marinade 😜

Garlic rice:
2 Cups of day old rice
8-10 garlic cloves chopped (I’m so serious🤣)
Oil
Salt
Pepper
Green onions (optional)
Milkfish:
2 pieces of Milkfish (butterflied & gutted)
1 cup of vinegar (you can use less, I legit just love mine with extra vinegar)
4-5 garlic cloves (chopped)
Black pepper
Salt
Directions on Milkfish:
1. Clean milkfish
2. In a bowl add vinegar, garlic, pepper & salt. Mix well then add milkfish.
3. Let milkfish marinate for at least 2 hours or overnight
4. Once the milkfish is ready, remove from the marinade.
5. Add oil to a hot pan (about 1 inch)
6. Fry milkfish for about 3-4 minutes on each side depending on how golden brown you want it.
7. Remove fish and place on a paper towel to remove excess oil.
Directions on Garlic Rice:
1. In a hot pan add 2-3 tbsp of oil.
2. Add garlic and sauté consistently to avoid burning
3. Once the garlic turns into a golden color add rice.
4. If the rice is too hard, add a tablespoon or two of water.
5. Mix well, add salt & pepper
6. Taste to see if you need more seasoning.
Directions for Tocino on stove top:
1. Add a little bit of oil to a pan.
2. Sear Tocino on each side for about 2-3 minutes
3. Add 1/4 C of water & bring heat down to low.
4. Let the water cook down & remove from pan once the water is fully evaporated. It should be caramelized from the sugar.

2. Add ice, shot of tequila, fresh watermelon juice, & sparkling water.
