👩🏻‍🍳 Birria Tacos,

◉ Ingredients

For the birria:
60g guajillo chilies (about 8)
4 morita chilies
2 ancho chilies

1 tsp oregano
1 tsp ground cumin
1/2 tsp black peppercorns
1/2 tsp whole cloves
2 bay leaf
1 tbsp kosher salt

1 kg beef short rib - kosher salt and freshly ground black pepper, to taste

1 plum tomato
5 garlic cloves, peeled
1/2 white onion, peeled
2 tbsp white vinegar

For corn tortillas
2 cups corn flour
2 cups warm water
Making a ball like a golf ball

For garnish
1 Lime
Half bunch of cilantro
1/2 white onion

For chilli oil
1 1/2 cup vegetable oil
3 cloves garlic
3 green onion
1 tsp black peppercorn
Some ginger slice
1/4 cup crushed red pepper

👩🏻‍🍳 Lime Cream Cheese Cake Gelato,

◉ Ingredients

For lime puree
1 cup chopped lime (peeled inside)
1/2cup cup sugar
2 tbsp honey

For lime gelato,
2 cups whole milk, divided
2 tbsp cornstarch
1 cup sugar
1 tbsp pure vanilla extract
Pinch kosher salt
1 cup heavy cream
2 cups cream cheese
1 tbsp liquid pectin
8 fresh lime juice
1 cup lime puree
3 lime zest
10 Lotus cookie

◉ Cooking process

1. Separate the flesh of the lime, add white sugar and honey, and boil and simmer.
2. Pour 1 cup of milk, sugar, starch powder, salt, and vanilla in a bowl and mix well then set aside.
3. Pour the cream and 1 cup of milk in a saucepan and bring to a boil over medium-low heat.
4. Add process 2 and boil down more. It takes about 20 minutes.
5. Whip the cream cheese (room temperature) and set aside.
6. When it boils down enough to be coated on a wooden spoon, slowly pour it into the cream cheese and mix thoroughly with a whisk. (It is convenient to mix with an electric hand mixer)
7. When the cream cheese is completely mixed, add the liquid pectin and lime juice and mix well.
8. After cooling to room temperature then store in the refrigerator at least 2 hours (can be used the next day after completely cooled).
9. Pour the cooled cream into an ice cream maker then make gelato. When it thickens to some extent, add lime puree and Lutos cookies.
10. Once it is well mixed, set it in the freezer for about 2 hours before serving. (Take it out from freezer 15 minutes before serving)

👩🏻‍🍳 Limoncello original and cream,

◉ Ingredients

For clean lemon skins
1 tbsp baking soda
1 tbsp vinegar

For lemoncello
8ea lemon peels
750ml 95% Alcohol (Everclear Grain Alchohol 95%)
750ml water + 265g sugar
750ml milk + 265g sugar

🤌 Tips :
1. Add lemon peel to alcohol and age in a dark and cool place for 3 weeks.
2. Make simple syrup and cream syrup and cool completely.
3. Divide 750ml of aged lemon alcohol in half and pour each.
4. keep chilled (freezer) and drink it.

Italian Beautiful Peach Cookies🍑

◉ Ingredients

For the dough
2 eggs
3/4 cup sugar
1/2 cup +2tbs oil
1/2 cup milk
1/2 lemon zested
3 cup all purpose flour (sifted, then measured)
3/4 tbsp baking powder

For filling
3/4 cup apricot jam
2 tbs white rum

For peach coloring
1/2 cup water + 2tbs anise liquor + 1/4tsp red
1/2 cup water + 2tbs anise liquor + 1tsp yellow

For coat and garnish
1 cup Sugar
Mint leaves and pepero for decoration

👩🏻‍🍳 Black forest cake 🍒 (Forêt-Noire),

◉ Ingredients

For washing cherry,
1 tbsp vinegar

For cherry compote,
500g cherry
3/4 cup sugar
1 fresh lemon juice
2 cinnamon stick

For cake,
1 cup cake flour (sifted, then measured)
1/4 cup cocoa powder
2 tbsp corn starch
3 eggs York
4 eggs
1/2 cup sugar
1 tbsp corn syrup
3 tbsp milk (warm temperature)
2 tbsp melted unsalted butter (warm temperature)

For whipped cream,
1l Heavy cream
3/4 cup sugar powder

For rum syrup,
4 tbsp cherry compote liquid
2 tbsp rum

For garnish,
400g cherry
50g Ground chocolates (unsweet or dark chocolate)
Some of rosemary

👩🏻‍🍳 pâté en croûte,

◉ Ingredients

For meat marinade,
1000g pork shoulder
300g chicken breast
150g pork belly
1/2 cup(100g) ruby port
2 tsp(10g) pink curing salt
1 tsp(5g) sugar
1 tsp(5g) fresh ground black pepper

For chicken liver marinade,
300g chicken liver (removed membranes)
1 pinch of pink curing salt
2 pinch of sugar
Some fresh ground pepper

For Pate crust,
1 3/4 cups (395g) unsalted butter (soft)
3 tsp (15g) salt
1 tsp (4g) sugar
1 egg (50g)
1/2 cup (125g) water
1 tbsp (15g) White vinegar
1 1/4cup (200g) cornstarch
2 1/2cups (380g) All-purpose flour

For meat stuffing (not chicken liver),
3 eggs
1/2 tsp salt
1/2 tsp ground pepper
3 shallot (60g)(minced and cooked brown)
20g parsley

For stuffing,
1 tbsp unsalted butter
1 tbsp olive oil
30g peal onions
200g mushrooms
3-4 trims thyme
1 bay leave
A pinch of salt
Some fresh ground black pepper
1/2 fresh lemon juice
1/4 cup (38g) whole pistachio

For Aspic port,
250g hot water
250g Ruby port
5g sugar
23g gelatin powder
