✨ SAVE THIS RECIPE ✨
The most simple, fluffy cookies you will ever make! I have been using this recipe for years and it never disappoints. These cookies are amazing to freeze too. For fun cookie variations read further down!

Cookie Dough Base Recipe
3/4 c. unsalted butter, softened
3/4 c. brown sugar
1/4 c. granulated sugar
1 egg
2 tsp. vanilla extract
2 c. all purpose flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. salt

Variations:
1. Chocolate Chip: add 1 cup of chocolate chips
2. Oatmeal Walnut Cinnamon: add 2 tsp Cinnamon, 1 tsp Nutmeg and 3/4 quick oats, 1/2 cup chopped Walnuts (don’t like walnuts just omit them and they are just as delicious)
3. Mini Egg cookies: 1 Cup of mini eggs and maybe some extras (measure with your heart 😉)
4. Grinch Cookies: add green food coloring until desired hue of green (add 1 cup chocolate chips to make them extra special)

Tip: make a double batch as these will be eaten very quickly!

Instructions:
1. Preheat oven to 350 degrees F.
2. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.
3. Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.
4. Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet. Bake for 8-10 minutes, until barely golden brown around the edges. (The tops will not brown, but do NOT cook longer than ten minutes.)
5. Let cool, on the sheet, on a wire rack for five minutes. Remove from baking sheet and let cool completely.

So who went to the Garden Centre and started grabbing plants today? 🙋🏼‍♀️

I normally don’t plant anything until after May long, but since it was rainy out we figured might as well grab stuff so it’s here when the weather clears up. Picked up some tomato plants, a couple fruit bushes, a shrub and a tree. Didn’t grab flowers though, those I will wait until June.

🎶“This life’s a journey it’s made me who I am
So let’s embrace it and turn the page my friend”🎶

Last year I did a thing where I did a little birthday photoshoot of just myself. I set up my camera, did my hair, makeup and put on a nice outfit and clicked away. This year I was in a bit of funk and I figured I wasn’t going to do it this year. Funny thing is that once I decided to get myself dolled up, blast music, start smiling and playing around I ended up having an absolute blast AND my confidence, energy and happiness levels immediately were boosted.

I am one who feels awkward when others take pictures of me so doing this on my own time without other eyes on me made me feel much more confident, quirky and more me! I’m pretty sure I’m going to be doing this year after year as it will be amazing to look back at them to see how I change and what the camera is going to capture over the years.

I guess the message here is to celebrate yourself and take the photos, you will be so happy you did!
