It's been a while!

The past 8 weeks have been a bottom for me personally, but I'm ready to be back on here.

These smoked Picanha Tacos were the absolute best way to bring me back on the court.

Smoked with Mesquite and using we smoked this Rump Cap til we hit 115 then we gave a blazing hot sear. The end result?

Pure Heaven

Spice rub:
Equal parts Salt, Pepper, Garlic, chili Powder, Paprika. Enough to cover lightly upon the last layer.

Tons of Cumin to slam that Taco flavor home

Smoke at 225-250 til you hit that magic 115 number then you get it hot hot hot and sear at 2 minutes a side. Let rest for 15 minutes and let you taste buds give you a big hug. Try it out for yourself and thank me later.

Mesquite Smoked Short Ribs anyone??

Mesquite lump with matching chunks and ran the Kong at 250 for 4 hours or so and a 3 hour rest. Thought they came out pretty dang good! Cooked these off on Monday, just now getting around to it.

Seasoned with Moo'd Enhancer from and paired it with a smoked Mac and Cheese w bacon and smoked Wings

Today was a wild ride.

I didn't know what to expect. Working on 4 hours of sleep and heading to an unfamiliar arena at 5 am is way out of my comfort zone.

Today I pushed forward because the want to have this was so high that I didn't want to fail. I did my best and my best was strong enough to carry me through.

I am happy to proudly announce I will be joining to work as one of their pit crew cooks.

I'm here to learn, grow, and smoke some fu**in meats.

Here's to chasing dreams and opportunities to grow.

🔥 Chuck eye Steaks were awesome last night!
Vacuum Sealed these bad boys with Moo'd Enhancer and let sit for two days.

🔥 Got the Spirit up for high heat and these cooked up pretty quick. Served up with a hearty heap of Homemade Mac and Cheese.

Snagged some chuck eye steaks from the store the other day and boy they were good! Last night's dinner.

Seasoned with Moo'd Enhancer and Double Down, vacuum sealed to really get that flavor all throughout and Cooked on the Spirit for about 6 minutes total. Pulled off once my ThermaPen read 125 and rested for 10 minutes.

Chuck eye is located on the end of the chuck roll as it connects to the ribeye primal. You are essentially getting ribeyes for chuck prices. Ask your butcher if they can cut you some of these flavorful steaks.

The chop the other night needed a little redeeming so we did it proper last night.

Seasoned up with The Blend and cooked on the Spirit Gasser and pulled once my Thermapen read 134.

Did you know you can eat pork a little pink? There hasn't been a reported case of Trichinosis in the US in 60 years. So please try yourself some chops slightly under your 145 mark. You'll thank me later.

Cooked up some Wagyu Bavette tacos for lunch today. Took my Char-Griller Akorn Kamado on it's maiden voyage and one steak got a little more done than I prefer but still was super tender and flavorful. Seasoned up one with Flatiron Pepper Company Dark and Smokey BBQ Rub and the other with Flavor Anonymous Dirty Gr**go and topped with a fire roasted salsa and a little cheese. Delish!

Had my pops over for the Laker game so I had to cook up a big ole steak. 2¾ pound porterhouse reverse seared on my Kong with Kamado Joe XL and Applewood from . Smoked at 225 then cranked it up higher than I ever have to 800 Degrees for 75 seconds each side. Steak was stupid good.
Did a herb crust seasoning on the chicken and my own blend of spices on the potatoes. Wish I kept an after photo of them taters. Incredible..

Finally! I picked up this Akorn from a few weeks back for 50 bucks secondhand. I knew I had to have it. Just from the initial picture and the few to follow, you can see that it wasn't very loved at all.
Missing a shelf, broken thermometer, rusted out grates and weather beaten. She got almost all new components including grates(may try to salvage original ones at some point), seals on top and bottom and got a nice bath and looks like a whole new grill. Super happy to try it out this weekend hopefully.

I had a whole bird left over from the weekend so I decided to do some pulled chicken sandwiches. Deboned the Chicken and threw it in the cast iron with Kongo Kick bbq sauce from Grilla Grills. Smoked Provolone, Brioche bun and ghost pepper mustard.

My mouth's on fire, mouth's on fire feeling Hot Hot Hot. Scorching heat on these guys. Smoked at 375 for 40 minutes then at 425 for 10 minutes. Haven't been burned like that in some time. Tender, crispy and great flavors.
